Steps:
- Coat chicken with flour. Heat oil in large skillet on medium heat. Add chicken; cook 5 to 6 min. on each side or until done (165°F). Remove chicken from skillet, reserving drippings in skillet. Cover chicken to keep warm.
- Add broth to skillet; stir to scrape up browned bits from bottom of skillet. Add cream cheese; cook 2 to 3 min. or until cream cheese is melted and sauce starts to thicken, stirring constantly with whisk.
- Return chicken to skillet; turn to coat both sides of each breast with sauce. Cook 2 min. or until chicken is heated through. Sprinkle with parsley.

- Melt butter in a skillet over medium heat and brown chicken breasts in the hot butter until lightly golden on both sides, about 5 minutes per side. Chicken will still be slightly pink inside. Set chicken breasts aside.
- Cook and stir onion in the same skillet until translucent, about 5 minutes; stir in fennel and celery seed along with black pepper until thoroughly combined. - 1. Cut the chicken into thin strips, 2 to 3 inches long and about 1/2 inch wide.
- 2. Melt the butter in a frying pan and brown the chicken strips in it. Add the minced shallots when the meat is cooked part-way. When meat is no longer pink, add the wine and mushrooms (if using), and cook until sauce is reduced by 1/3.
- 3. Add the cream and tarragon, and cook until sauce is further reduced by 1/3. Season with salt and pepper.
- 4. This is traditionally served over hot, buttered egg noodles with a side dish of Dampfkartoffeln (boiled potatoes).

- Combine stock or bouillon and water in large kettle; add sugar and rice or barley.
- Rinse chicken; drain; pat dry.
- Rub lightly with salt.
- Place chicken in bouillon kettle.
- Cover; bring to a boil.
- Lower heat and cook slowly until chicken is tender, 1 1/2 to 2 hours.
- Remove chicken.
- Strain broth through colander, mashing rice or barley through with liquid.
- Melt butter or chicken fat in soup kettle; blend flour smoothly with it.
- Stir strained soup into fat and flour mixture.
- Let cook 30 minutes, stirring frequently.
- Add 1 cup cream; stir and bring to a gentle boil, but do not let boil.
- Beat yolks with remaining 1/4 cup cream and stir into soup.
- Add salt and pepper if needed.
- In each soup plate put a few even strips of breast of the boiled chicken.
- Pour hot soup over.
- Soup should be creamy, pale yellow, but not too thick.
