ORANGE DREAMSICLE CUPCAKES

Orange Dreamsicle Cupcakes image

"Since I was a kid, my family has competed in food competitions at the Texas State Fair. I have a basic cupcake recipe from my grandmother and I change the flavor every year. Orange and vanilla is my showstopper -- the combination reminds me of buying Creamsicles in the summer," says Emily.

Time 1h30m

Yield about 18

Number Of Ingredients 15

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs, separated
1 stick unsalted butter, at room temperature
1 cup granulated sugar
1 tablespoon finely grated orange zest
1 teaspoon orange oil (available at specialty stores)
1/2 cup fresh orange juice (from 2 oranges)
2 sticks unsalted butter, at room temperature
1 teaspoon pure vanilla extract
4 cups confectioners' sugar, sifted
2 to 3 tablespoons whole milk or heavy cream
Orange and/or white sanding sugar, for topping
Orange gummy candies, for topping

Steps:

  • Make the cupcakes: Preheat the oven to 350 degrees F. Line 18 muffin cups with paper liners. Sift the flour, baking powder and salt into a medium bowl; set aside. Beat the egg whites in a large bowl with a mixer on medium-high speed until stiff peaks form, about 4 minutes; set aside.
  • Beat the butter, granulated sugar, egg yolks, orange zest and orange oil in a separate large bowl with a mixer on medium speed until smooth and combined, about 4 minutes. Reduce the speed to low; beat in the flour mixture in three batches, alternating with the orange juice. Fold in the beaten egg whites. Spoon the batter into the muffin cups, filling each about halfway. Bake until a toothpick inserted into the centers comes out clean, about 15 minutes. Let cool 10 minutes in the pans, then remove to racks to cool completely.
  • Make the frosting: Beat the butter and vanilla in a large bowl with a mixer on medium-high speed until light and fluffy, about 6 minutes. Reduce the speed to low; gradually beat in the confectioners' sugar. Add the milk, increase the speed to medium and beat until light and fluffy. Frost the cupcakes. Top with sanding sugar and orange gummy candies.
  • Orange oil gives the cupcakes an intense orange flavor that you can?t get from just extract or zest.

CREAMCICLE CUPCAKE.

Creamcicle Cupcake. image

Ok, so most of you remember what it's like to eat those yummy orange ice cream bars with the creamy white filling. Well I tired to combine this into a cup cake. Yes, a cupcake. Although it doesn't taste EXACTLY like one, it's still pretty darn good and it has some of the exact flavorings. It's a new media for the standard cup...

Time 50m

Number Of Ingredients 12

1 box duncun hines orange sumpreme
1 small box vanilla instant pudding
4 eggs
1/2 c oil
1/2 c orange juice
1 c milk
1 small box orange jello
1/2 c hot water
1/2 c cold water
2 c whipping cream
1 Tbsp vanilla extract
1/2 - 3/4 c powdered sugar

Steps:

  • 1. In your bowl add the cake mix, eggs, oil, milk, pudding and oj. Mix well. Add about 1 to 1/2 tablespoons of batter into each cupcake liner and bake at 325 degrees until done about 16-20 minutes.
  • 2. While cupcakes are baking, in a clean cold bowl add in the whipping cream and 1/2 cup powdered sugar and slowly mix with your mixture. Then increase the speed and keep whisking until the cream is thick and fluffy. You may add in more sugar depending on how sweet you want it. I felt it needed more sugar. Store in fridge until needed.
  • 3. When cupcakes are cool, poke holes into the top of each cupcake. Then in a small bowl place the orange jello, hot and cold water and mix until dissolved. Then spoon a small amount into the holes, being careful not to overflow the cupcake.
  • 4. Top with a dollop of the whip cream and there you go, the closest form of a creamcicle cup cake you'll ever get.
  • 5. Final note- These are made with homemade whipped cream. There is a BIG difference in taste. Do not take the easy route out and buy the frozen or canned junk. Once you have homemade, you never go back! Also the topping will melt, so don't top these until you need them but they will last about an hour or so. What I do it make the cupcakes, place them in a ziplock bag and then top them as needed with the topping that I keep in the fridge.

GIANT CREAMSICLE CAKE

Giant Creamsicle Cake image

There's nothing quite like an old-school Creamsicle from the ice cream truck - except maybe this jumbo version! To make the giant pop, we sandwiched orange sherbet between two layers of vanilla cake and covered it in a homemade marshmallow fondant. The oversize stick is just a wooden spatula!

Provided by Food Network Kitchen

Categories     dessert

Time 2h45m

Yield 10 to 12 slices of cake

Number Of Ingredients 8

1 15- to 16-ounce box vanilla cake mix (plus required ingredients)
1 1 1/2-quart rectangular carton orange sherbet
1 16-ounce tub white frosting
1 10-ounce bag mini marshmallows
1/4 cup water
Red and yellow food coloring
2 1-pound boxes confectioners' sugar
4 tablespoons unsalted butter, softened

Steps:

  • Preheat the oven to 350˚ F. Prepare the cake mix as directed for a 9-by-13-inch cake; bake as directed. Let cool slightly in the pan, then remove to a rack to cool completely.
  • Transfer the cake to a baking sheet lined with parchment and carefully cut into 2 layers. Keeping the cakes stacked, trim a 3/4-inch strip from each long side. Reserve the trimmings (you'll have 4 strips).
  • Cut off the carton from the sherbet and slice the block of sherbet lengthwise into thirds. Arrange on the bottom layer of the cake. Let soften slightly, then smooth with an offset spatula.
  • Use the 4 trimmed strips of cake to create a border all the way around the sherbet, breaking the pieces as needed. Cover with the top cake layer and freeze 1 hour.
  • Cut a large chunk out of one of the top corners of the cake to look like a bite. Trim the other top corner to make it rounded. Press a few of the cake trimmings against the exposed sherbet in the bite.
  • Using a paring knife, carve out 2 shallow channels in the cake as shown. Cover the top and sides of the cake with the frosting, making sure to cover the bite. Return the cake to the freezer.
  • Make the fondant: Put the marshmallows and water in a microwave-safe bowl; microwave, stirring occasionally, until melted and smooth. Tint orange with red and yellow food coloring. Transfer the mixture to a stand mixer.
  • Slowly beat all but 1/2 cup confectioners' sugar into the melted marshmallows (it will be stiff). Beat in the butter. Knead in some of the remaining sugar until rollable. Roll out on a confectioners' sugar-dusted surface until large enough to cover the entire cake.
  • Carefully drape the fondant over the cake and smooth with your hands. Trim the excess, cutting around the bite. Press a thin strip of fondant along the bottom of the bite. Insert a wooden spatula for the stick.

GLUTEN-FREE ORANGE CREAMSICLE CUPCAKES

Gluten-Free Orange Creamsicle Cupcakes image

This cupcake has a double dose of orange, in the frosting and in the cake. Oranges naturally contain both vitamin C and natural sugars that provide both sweet and tart accents. Combined with creamy coconut milk, it's better than an orange-cream ice pop! A combination of gluten-free starches unite to create this tasty treat that's as good as any flour-based cupcake.

Provided by Food Network

Categories     dessert

Time 1h20m

Yield 12 servings

Number Of Ingredients 18

1/2 cup unsweetened coconut milk
1 tablespoon apple cider vinegar
1 cup sweet sorghum flour
1/2 cup gluten-free potato starch
1/4 cup gluten-free cornstarch
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup granulated sugar
1/2 cup orange juice
1/3 cup canola oil
1 tablespoon vanilla extract
1/2 cup unsalted butter, at room temperature
1/4 cup vegetable shortening
3 cups confectioners' sugar
3 tablespoons orange juice
1 tablespoon firmly packed orange zest
1 teaspoon vanilla extract

Steps:

  • For the batter: Preheat the oven to 350 degrees F and move a rack to the middle of the oven. Place 12 paper liners in a cupcake pan.
  • Combine the coconut milk and apple cider vinegar in a small bowl, set aside to curdle.
  • Sift together the sorghum flour, potato starch, cornstarch, baking powder, baking soda and salt in a large bowl. Stir in the coconut milk and apple cider mixture. Add the granulated sugar, orange juice, oil and vanilla extract. Whisk for 1 minute. The batter should become smooth and start to thicken up. Fill each cupcake liner two-thirds full. Bake until a toothpick inserted into the center of a cupcake comes out clean, 25 to 30 minutes.
  • Cool the cupcakes until no longer warm to the touch, 30 minutes.
  • For the frosting: Add the butter and shortening to large bowl and whisk together. Sift in the confectioners' sugar. Pour in the orange juice, zest and vanilla extract, and whisk until smooth.
  • Spread the frosting (about 3 tablespoons each) onto the cooled cupcakes.

CREAMSICLE CREPE CAKE

Creamsicle Crepe Cake image

Provided by Food Network Kitchen

Time 1h30m

Yield 10 hours

Number Of Ingredients 19

Whipped cream and grated orange zest, for topping
For the filling:
8 large egg yolks
2/3 cup granulated sugar
3 tablespoons cornstarch
Finely grated zest of 2 oranges, plus juice of 4 oranges
2 tablespoons fresh lemon juice
Pinch of salt
4 tablespoons unsalted butter, cut into pieces
1 cup cold heavy cream
3 tablespoons confectioners' sugar
1/2 teaspoon pure vanilla extract
For the crepes:
1 1/2 cups all-purpose flour
3 large eggs
2 cups milk
4 tablespoons unsalted butter, melted, plus more for the pan
1/4 cup granulated sugar
1/4 teaspoon salt

Steps:

  • Make the filling: Whisk the egg yolks, granulated sugar, cornstarch, orange zest, orange juice, lemon juice and salt in a medium saucepan. Cook over medium heat, stirring constantly with a rubber spatula until the mixture comes to a simmer and is thick like pudding, 10 to 12 minutes. Remove from the heat and stir in the butter until melted. Strain the filling through a fine-mesh sieve into a large bowl, pushing it through with a rubber spatula. Press plastic wrap onto the surface of the filling and refrigerate until cold and firm, at least 2 hours.
  • Meanwhile, make the crepe batter: Combine the flour, eggs, milk, melted butter, granulated sugar, vanilla and salt in a blender; blend until smooth, scraping down the sides of the blender as needed. Set aside, covered, 1 hour. (This prevents the crepes from turning out rubbery.)
  • Finish the filling: Beat the heavy cream in a large bowl with a mixer on medium-high speed until it starts thickening, about 1 minute. Add the confectioners' sugar and beat until stiff peaks form, about 1 more minute. Beat in the vanilla. Stir one-quarter of the whipped cream into the orange filling, then gently fold in the rest. Cover and refrigerate until set, about 1 hour.
  • Make the crepes: Line a baking sheet with parchment paper. Heat a 10-inch nonstick skillet over medium heat. Lightly brush with butter, then pour 1/4 cup batter into the center of the pan. Quickly tilt and swirl the pan to coat and cook until the bottom is golden brown and the top is firm, about 1 minute. Loosen the edges of the crepe with a spatula, then flip with your fingers; cook until lightly browned on the other side, 30 more seconds. Invert onto the prepared baking sheet. Repeat with the remaining batter, stacking the crepes as you go; lightly brush the pan with more butter as needed. You will have about 16 crepes. (Don't worry if a few tear-layer them in the middle of your cake.)
  • Put 1 crepe on a platter and top with a scant 1/4 cup filling, spreading it to the edge. Repeat, stacking the remaining crepes and filling, and ending with a crepe. Refrigerate overnight (this will make slicing easier). Top with whipped cream and orange zest before serving.

CREAMSICLE® ICE CREAM CAKE

Creamsicle® Ice Cream Cake image

Two layers of orange-flavored cake sandwich a layer of vanilla ice cream in this simple recipe, then it's finished off with some whipped topping for a bit of extra flair. And it tastes like the real deal.

Provided by Mackenzie Schieck

Categories     Desserts     Frozen Dessert Recipes     Ice Cream Cake Recipes

Time 5h30m

Yield 12

Number Of Ingredients 7

1 serving cooking spray
1 (18.25 ounce) package orange cake mix (such as Duncan Hines® Orange Supreme)
1 cup water
3 large eggs
⅓ cup vegetable oil
1 (1.5 quart) container vanilla ice cream
1 (12 ounce) container frozen whipped topping, thawed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan with cooking spray.
  • Blend cake mix, water, eggs, and oil in a large bowl at low speed until moistened, about 30 seconds. Beat at medium speed for 2 minutes. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 24 to 27 minutes. Cool on a wire rack for 15 minutes before removing from the pan. Let cool completely, about 30 minutes.
  • Use a serrated knife to slice off the top to create a flat surface. Slice the cake in half so you have two 9x6 1/2-inch cakes.
  • Line a jelly roll pan with plastic wrap. Place one half of the cake in the pan. Cover with scoops of ice cream, pressing down gently as you go to create an even layer. It's okay if the edges aren't smooth or even.
  • Place the second layer of cake on top, pressing down gently with the palm of your hand. Spread whipped topping on top of the cake. Freeze until completely frozen through, 4 to 6 hours.
  • Remove the cake from the freezer and trim on all 4 sides so that you have smooth edges. Return to the freezer until ready to serve.
