Steps:

  • In a large saucepan, saute the onion in butter until tender. Sprinkle with the flour, salt and pepper. Stir in the milk until blended. , Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Add the turkey and vegetables; cover and simmer until heated through. Serve over mashed potatoes.

5 pounds Russet potatoes (about 7 large potatoes)
4 ounces cream cheese (softened)
1/2 cup salted butter (melted)
1/2 cup heavy cream
1 1/2 teaspoons salt

Steps:

  • Wash, peel and cut the potatoes into large chunks.
  • Place the cut potatoes in a large pot and fill the pot with cold water, leaving about 2 inches at the top of the pan.
  • Place the pan on the stovetop on medium-high heat.
  • Allow the water to come to a boil, then turn the water down to medium heat.
  • Boil the potatoes for 10-15 minutes, or until the potatoes are fork tender.
  • Drain the water from the potatoes.
  • Put potatoes through a food mill or potato ricer for the fluffiest texture.
  • Stir in the cream cheese, butter, heavy cream and salt.
  • Gently fold the potatoes using a rubber spatula until they are smooth and creamy. Be careful not to mix too hard because want to keep the potato fluffiness that ricing the potatoes give.
  • Serve warm.
  • You can top with butter, salt, chives or parsley.

This was made from Thanksgiving leftovers, and ingredients in my pantry. It's a family favorite and a hit at Pot lucks. With leftovers, it's a breeze, made from scratch ... it's work. Either way it's a hit and well worth the time. After a holiday meal half the work is done because you usually have the mashed potatoes, and turkey. When I make it from scratch, I usually use chicken rather than turkey. Prep times are from leftovers.

1 pound cooked turkey meat, shredded
1 onion, chopped
1 (14.5 ounce) can green beans, drained
1 (10.75 ounce) can condensed cream of mushroom soup
8 ounces cubed Cheddar cheese
8 ounces shredded Cheddar cheese
4 cups prepared mashed potatoes

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place turkey in an even layer on the bottom of a 9x13 inch baking dish. Top with a layer of onion and a layer of green beans so that the turkey is no longer visible. Pour the condensed soup over the onion layer, then sprinkle with shredded cheese. Stir together the cubed cheese and mashed potatoes; spoon over the top of the casserole, and spread to cover.

5 lbs whole russet potatoes
2 tbsp salt
1 3/4 cup half and half milk
1 stick unsalted butter
1/2 cup sour cream
Salt to taste

Steps:

  • Peel russet potatoes and cut into 1″ cubes
  • Place potatoes and 2 tbsp salt into a large stock pot
  • Fill the pot with cold water until the potatoes are fully submerged and the top layer is covered in at least 2″ of water
  • Place the pot on the stove and bring the water to a boil
  • Once boiling reduce the heat to a simmer and cover the pot
  • Allow the potatoes to simmer for at least 10 minutes - potatoes should be soft when pierced with a fork
  • Remove the pot from the stove and drain the water
  • Immediately return the hot potatoes to the stockpot and cover the pot to retain the heat
  • Place a stick of butter and half and half in the warm pot
  • Cover the pot and wait a few minutes for the butter to melt
  • Using an electric hand mixer, mix the potatoes until almost fully whipped
  • Add sour cream to the pot and continue mixing with the hand mixer until fully mixed in
  • Best if served immediately!
  • If you are making these potatoes ahead of time and serving later, allow the mashed potatoes to cool fully then add some butter and milk on top, cover and place in the fridge until you are ready to reheat

  • Preheat the oven to 350 degrees F.
