Steps:
- Heat oven to 375°F.
- Remove and discard stems from figs. Cut lengthwise slit in each fig, being careful to not completely cut through fig.
- Fill slits with cream cheese spread; press figs together to enclose cream cheese. Wrap with bacon; secure with wooden toothpicks. Place in single layer in shallow foil-lined pan.
- Mix honey and ground pepper until blended. Brush half the honey mixture onto figs.
- Bake 20 to 25 min. or until bacon is crisp. Remove and discard toothpicks.
- Drizzle figs with remaining honey mixture before serving.

- Preheat oven to 200°C/390°F (180°C fan).
- Lay out bacon: Lay the bacon strips vertically on a board, slightly overlapping (see photo in post). There should be enough bacon so when rolled will wrap the length of the pork.
- Season the pork with salt and pepper. Tuck the thin end of the fillet under so the pork is roughly the same thickness from end to end.
- Brown pork: Heat the oil in an oven-proof skillet over high heat. Sear the pork on all sides until nicely browned. (Don't worry about cooking through, it will go in the oven.) Turn off heat, remove pork and allow to cool enough to handle.
- Wrap pork in bacon: Place pork on the arranged bacon at the end closest to you. Use a long knife to lift the bacon under the pork and roll the pork so the bacon wraps around the fillet. Finish with the bacon seam side down.
- Honey: Use the knife to transfer back into the skillet. Drizzle over honey and brush all over.
- Bake 25 minutes: Transfer skillet to oven for 25 minutes and roast pork until the internal temperature is 65°C / 149°F. (Note 1) Baste with pan juices at the 20 minute mark, mopping up plenty of the honey and juices pooled in the pan (this will make bacon deep golden).
- Rest 5 minutes: Remove from oven and let it rest for 5 minutes. Baste once more just before serving. To serve, cut into thick slices. Serve with remaining pan juices.

- leave the pastry out for 20 minutes at least to stop it from tearing when using.
- Cut the rinds of the bacon and chop bacon.
- Whisk eggs putting one yolk to the side.
- Whisk in the milk or cream.
- Chop onion.
- Lay one sheet of pastry in a casserole dish and make sure it comes just over the sides of the dish.
- Prick the base with a fork.
- Sprinkle the onion all over the base.
- Chop the parsley (one whole packet).
- Mix the parsley and bacon in with the egg mixture.
- Pour into the dish.
- Cover with other sheet of pastry and crimp together and cut of any excess pastry.
- Decorate the top if you want.
- Cook for 25 minutes and check its not burning.
- If so, place some tin foil over and place back in the oven for another 5-10 minutes until cooked.

- For the soup, heat the EVOO, 3 turns of the pan, in a soup pot or large Dutch oven. Add the chopped celeriac, parsnips, potato, onion, bay and thyme. Season with salt and pepper and cook, partially covered, to soften, 10 to 12 minutes, stirring occasionally. Add the apples and lemon juice and cook 5 minutes more. Then deglaze the pan with the Calvados or Sauterne and add the chicken stock. Simmer over medium-low heat, 20 to 25 minutes more. Then remove the bay leaf and puree the soup. Place the bacon and sliced apples in the prepared sandwiches. Heat a griddle pan over medium heat and make the grilled cheeses, cooking until deeply golden and crisp on both sides.

- Using a sharp knife, slice each chicken breast in half lengthwise and season each side with salt and pepper. Set aside.
- In a large skillet over medium heat, fry the bacon until crisp. Remove from the skillet with a slotted spoon and let drain on a plate lined with paper towels and set aside. Remove all but 2 tablespoons of the bacon grease from the pan.
- In the same skillet over medium high heat add the chicken breast. Cook the breasts on each side until they are cooked through and an internal temperature thermometer reads 165F. Remove from the skillet and set aside.
- Reduce the heat of the skillet to medium and add in the chicken broth. Use a spatula to scrape the browned bits from the bottom of the skillet.

- In a large, shallow dish, combine the honey, mustard, garlic, oil and salt to taste (not too much salt if serving with bacon as the bacon will add a salty flavour when served). Coat chicken evenly in the sauce. Set aside.
- Heat a nonstick pan (or skillet) over medium heat. Fry bacon until crispy; transfer to a plate. I got the idea from watching Iron Chef America. Someone made a bacon ice cream but I never heard any details about it. So I started thinking about how to make it and make it great. I figured that bacon is the candy of the meat world, so why not candy the bacon. Now the quality of the maple syrup is gonna effect the flavor of the ice cream. This may sound odd, but I promise you that this will become your new favorite and you'll be demanding that Ben & Jerry's starts selling this at your corner store. cooking time includes cooling time, and set up time in the freezer.

- Bacon:.
- Pre Heat oven to 400°F.
- mix the 1 tablespoon of syrup and the 1/4 cup brown sugar to form a paste.
- Lay the bacon out on a cooling rack on a lined sheet pan (lining the sheet pan will save you some nasty clean up.
- Spread the paste on one side of the bacon and then bake for 10 minutes.
- Pull out bacon and turn each slice over. Spread the paste the other side of the bacon and out back in the oven for another 10 minutes.
- Pull bacon out and turn it over again, then bake for another 5-10 minutes, or until bacon is evenly glazed.
- Cool completely and then chop into small pieces.
- Maple Ice Cream:.
- Combine all the ice cream ingredients except the bacon in a medium sauce pan and heat to 170°F.
- Cool completely before adding to your ice ream maker.
- Follow you ice cream makers directions, but the basics are
- make sure you machine has been in the freezer for 24 hours and that the mixture is chilled completely.
- add the mixture to the machine while it's running.
- wait until the ice cream is at a soft serve consistancy before adding the bacon pieces.
- Put the ice cream in an airtight container and put in the freezer for a few hours before enjoying.
