- Heat oven to 350° F. Line 2 cookie sheets with cooking parchment paper; set aside.
- In large bowl, beat Cookie ingredients with whisk until combined. Using 2-tablespoon scoop, drop mixture 2 inches apart onto cookie sheets.
- Bake about 10 minutes or until edges start to brown, tops are dry and cookies spring back when touched lightly in center. Cool 5 minutes; remove from cookie sheets to cooling racks. Cool completely before frosting.
- In 1-quart saucepan or 6-inch skillet, brown the butter by melting over medium heat until it begins to foam, then stirring constantly until solid bits in butter turn dark brown and smell fragrant like toffee. Remove from heat; pour into heatproof dish to cool.
- In medium bowl, beat cream cheese and cooled butter with electric mixer on medium speed until smooth. Add powdered sugar and salt; beat to combine. Generously frost cooled cookies with frosting.

After getting this recipe from a friend, I have made them over 100 times for family and friends and they are always a hit, especially around Halloween and Thanksgiving! As far as the spices go, less is more; this is not a full-on pumpkin pie or pumpkin bread/cake. They're light and moist cookies with a taste of fall in every bite!

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
- Whisk flour, baking powder, cinnamon, baking soda, nutmeg, and ginger together in a bowl. Beat 1 cup butter, white sugar, brown sugar, 2 teaspoons vanilla extract, and egg with an electric mixer in a separate large bowl, beating until mixture is smooth. Beat in pumpkin puree. Gradually stir dry ingredients into pumpkin mixture. Batter will be moist.
- Spoon batter by teaspoonfuls about 2 inches apart onto prepared baking sheets.
- Bake in the preheated oven until cookies are lightly browned, 10 to 12 minutes. Let cookies cool for about 5 minutes on sheets before removing to finish cooling on waxed paper.

APPLE SPICE CAKE WITH CREAM CHEESE ICING
Steps:
- Preheat the oven to 350 degrees F.
- Melt the butter in a large saute pan over medium heat. Toss in the apples and stir to coat them with the butter. Add the lemon juice and the apple cider. Cook until the apples have softened and the cider has reduced by half. Transfer the mixture to a food processor and pulse into a coarse paste. Reserve.
- In a large mixing bowl combine the flour, cinnamon, baking soda, nutmeg, both of the sugars and a pinch of salt. Make a well in the dry ingredients and add the pureed apples, the egg and vanilla. Stir to combine. Toss in the walnuts and raisins.
- Butter and flour a loaf pan. Pour the batter into the prepared pan and put it in the preheated oven. Bake until a toothpick, inserted in the center comes out clean, about 40 to 45 minutes.
- Remove the pan from the oven and let cool for 10 minutes. Remove the cake from the pan and cool completely.
- Cut the cake in half equatorially and spread half of the icing on the bottom layer. Replace the top half and ice the top of the cake, leave the sides bare. Slice and serve.
- Beat together all of the ingredients in a stand mixer or with a hand mixer until light and fluffy.

- Add sugar and beat for 1 minute. Add egg and beat to combine. Add extracts and beat until combined. Add in baking powder and cake flour (in three sections), mixing to combine.

- Position an oven rack in the center of the oven and preheat to 325 degrees F. Line a baking sheet with parchment.
- Combine the butter, vanilla, 4 ounces of the room-temperature cream cheese and 1 teaspoon of the salt in a large bowl and beat with an electric mixer on medium speed until creamy, about 1 minute. Add 2 cups of the sugar and beat until pale and fluffy, about 3 minutes. Add the egg yolk and beat until smooth, then add the flour and beat on low until the dough just comes together. Remove the frozen cream cheese from the freezer and chop into 1/4-inch cubes. Add the cubes to the dough, quickly stirring with a rubber spatula to evenly incorporate them into the dough. - When the cookies are cool, dip the entire surface of the top of each cookie in the glaze and lift up, letting the excess glaze drip off, then flip the cookie right-side up and onto the cooling rack. If the glaze is too thick, add another teaspoon of milk to loosen it. If using the cranberries or lime zest, sprinkle on top of the cookies while the glaze is still wet. Allow the glaze to set before serving, at least 10 minutes. Store the cookies in a single layer in an airtight container for up to 5 days.

SOFT CREAM CHEESE PUMPKIN SPICE COOKIES
All of the sugar in this recipe can be replaced with Splenda. "Powdered" Splenda is easy to make at home: 1 cup granulated Splenda, 1 tsp cornstarch. Place both in blender or food processor and blend until powdered consistency is achieved. I used this substitute and took them to work. No one knew the difference!

- Preheat the oven to 350 F (180 C, or Gas Mark 4), and prep two large cookie sheets. I spray mine lightly with PAM, or you can line them with parchment or silpat, as you prefer.
- In a large bowl, cream together the butter, cream cheese, oil, pumpkin, sugars, vanilla and eggs.
- In a medium bowl, blend together the flour, baking soda, cream of tartar, salt and pumpkin pie spice.
- With a hand mixer, blend the dry ingredients into the wet by cupfuls until fully incorporated and smooth. Batter should be very soft and fluffy. You may think you haven't used enough flour, but trust me, this is the correct texture.
- Using a small cookie dough scoop, space dough balls about 1/2" to 1". Your choice - you can leave them as is, or you can flatten them slightly with your fingers to about 1/2" thickness. Either way, they do not spread during baking.
- Bake cookie sheets side by side for 15-20 minutes (ovens vary), or until they feel firm to the touch when they are poked in the center.
- Remove from cookie sheets and cool on wire racks.
- While cookies are cooling, in a small bowl, blend together powdered sugar, water and spice to make the glaze. Set aside, covered, until cookies are ready for glazing.
- When cookies are completely cooled, dip or drizzle with glaze. Leave the glazed cookies on the wire racks to allow the glaze firm up. Store in an airtight container for up to three days, if they last that long!
