Everything Cream Cheese Scones image

0.5 cup whole milk
1 large egg, beaten
2 cups all-purpose flour, plus more for work surface
1 tablespoon baking powder
2 teaspoons granulated sugar
0.75 teaspoon kosher salt
4 ounces cream cheese, cut into 1-inch pieces and chilled
6 tablespoons (¾ stick) unsalted butter, cut into ½-inch pieces and chilled
3 tablespoons fresh chives, finely chopped, divided
1 large egg white
1 tablespoon everything bagel seasoning

Steps:

  • Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper.
  • Pour milk into a liquid measuring cup. Add whole egg, whisk to combine, and set aside.
  • In a large bowl, w hisk flour, baking powder, sugar, and salt. Add cream cheese and butter and then, using your fingers or a pastry blender, work cream cheese and butter into the flour mixture until butter pieces are pea-size or smaller. (Cream cheese will work in more seamlessly.)
  • Pour in milk-egg mixture, and then stir until mostly combined. Add 2 tablespoons chives and mix with your hands until combined. (Dough will be stiff.) Do not overmix.
  • Transfer dough to a lightly floured surface and pat into an 8- by 6-inch rectangle. Cut dough into 8 rectangles (about 3- by 2-inches each). Arrange at least 2 inches apart on the lined baking sheet.
  • Whisk egg white and 1 teaspoon water in a small bowl, and then brush tops of the dough rectangles with the egg white mixture. Sprinkle with everything bagel seasoning and remaining 1 tablespoon chives.
  • Bake until scones are golden brown, about 20 minutes. Serve warm.

Steps:

  • Heat oven to 400°F. Mix flour, 1/4 cup sugar, the lemon peel, baking powder and salt in large bowl. Cut in butter, using pastry blender or crisscrossing 2 knives, until mixture looks like fine crumbs.
  • Mix cream cheese and egg in small bowl until smooth. Gradually stir in milk. Stir cream cheese mixture into flour mixture until dough leaves side of bowl and forms a ball.
  • Drop dough by 8 spoonfuls about 2 inches apart onto ungreased cookie sheet. Brush with lemon juice. Sprinkle with sugar.
  • Bake 16 to 18 minutes or until golden brown. Immediately remove from cookie sheet. Serve warm.

1/4 cup chilled cream cheese, diced
1 cup plus 3 tablespoons cream, divided

Steps:

  • Preheat oven to 350°. Line a baking sheet with parchment paper; set aside. In a medium bowl, combine flour, baking powder, sugar, and salt. Using a pastry blender, cut in butter and cream cheese until mixture resembles coarse crumbs. Add 1 cup cream to fl our mixture, stirring until a moist dough forms. On a lightly floured surface, roll dough to 1/2- to 3/4-inch thickness. Using a 3-inch round cutter, cut as many scones as possible, rerolling scraps no more than twice. 6 ounces (170 grams) fresh or frozen blueberries, rinsed and dried (1 1/2 cups)
2 large eggs
1/2 cup (113 grams) plain whole milk yogurt
2 teaspoons vanilla extract

3/4 cup (90 grams) powdered sugar

Steps:

  • For the scones: Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment paper and set aside.
  • Add the flour, granulated sugar, baking powder, salt and lemon zest to a food processor and pulse to combine. Add the butter and pulse until it's mostly pea-sized; a few larger chunks are okay. Dump the mixture into a large bowl and gently toss in the blueberries.
  • In a medium bowl, whisk together the eggs, yogurt, vanilla and almond extract. Pour into the dry ingredients and, using a rubber spatula, mix until about 80 percent of the dry mixture is incorporated. Dollop teaspoon-sized plops of cream cheese all over the mixture, then gently fold the mixture just until the remaining dry ingredients are incorporated. (You want the cream cheese to generally stay intact but it will of course swirl a little.) Using an ice cream scoop or large spoon, divide the dough into 8 balls and place them on the lined baking sheets about 2 inches apart (they will spread quite a bit). Bake until the tops are lightly browned and the bottoms are golden, 16 to 20 minutes.
  • For the glaze: Meanwhile, whisk together the powdered sugar, yogurt and salt in a bowl.
  • Let the scones cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool for 5 more minutes. While they're still a little warm, brush with the glaze, then sprinkle with the sanding sugar, if using. These are best enjoyed the day of.

  • Heat oven to 375°F.
  • Combine flour, graham crumbs, 3 Tbsp. sugar, baking powder and 1/2 tsp. cinnamon in medium bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Add apples, eggs and 2 Tbsp. milk; stir just until blended. (Do not overmix.)
  • Mix cream cheese, nuts, remaining milk and 1 Tbsp. of the remaining sugar until blended.
  • Divide dough in half; pat each half into 6-inch round on lightly floured surface. Place 1 dough round on baking sheet sprayed with cooking spray; spread with cream cheese mixture to within 1/4 inch of edge. Cover with remaining dough round; press edges together to seal. Mix remaining sugar and cinnamon; sprinkle over dough.
  • Bake 25 to 28 min. or until top is golden brown and toothpick inserted into center of top layer of dough comes out clean. Cool on baking sheet 10 min. Transfer to cutting board. Cut into 12 wedges. Serve warm or at room temperature.

8 ounces cream cheese
1/2 cup butter

Glaze:
1 cup powdered sugar

Steps:

  • Preheat oven to 400°F/200°C
  • Line a large baking sheet with parchment paper and set aside.
  • In a large bowl cut together the cream cheese and the butter using a pastry cutter or a fork until it's mostly mixed together. It will be very sticky.
  • Add in the sugar, flour, baking powder, salt and chocolate chips. Continue cutting the mixture together until combined evenly. Mixture will be crumbly.
  • In a small bowl whisk together the egg, vanilla and 1/4 cup milk.
  • Pour the milk mixture into the cream cheese mixture and using a wooden spoon stir the dough together. You can use your hands as well to help combine, if necessary. Dough will be stiff.
  • Lightly dust a clean counter with flour and turn the dough onto the counter, kneading just until the dough comes together. Note that scone dough is more on the dry side, but should stick together. If it doesn't add 1 teaspoon more of milk at a time until it holds.
  • Form the dough into a round disk, about 1-inch thick. If desired press mini chocolate chips into the top of the dough and then brush with remaining 1 tablespoon of milk.
  • Using a pizza cutter or a knife cut the dough into 10 wedges.
  • Bake for 17-20 minutes until lightly golden and the tops are set.
  • Remove from the pan from the oven.
  • Whisk together the powdered sugar and milk and drizzle on top.

Don't let the sad coffeehouse selections fool you into thinking you don't like scones. You just haven't tried this recipe yet!

2 & 1/2 cups all purpose flour (spooned and leveled)
1/2 cup granulated sugar
1/2 teaspoon kosher salt
1 & 1/2 tablespoons baking powder (yes really)
1/2 cup butter ((1 stick) COLD butter, frozen butter is great too)
1 large egg
2 teaspoons vanilla
1/3 cup heavy cream*
1/3 cup sour cream
more cream (for brushing)
1 (8-oz) package COLD cream cheese (chopped)
1/3 to 1/2 cup sugar (for coating cream cheese)
2 tablespoons butter (very soft)
1 & 1/2 cups powdered sugar
1/2 teaspoon vanilla
1/4 teaspoon kosher salt
1-3 tablespoons milk

Steps:

  • Dry ingredients: In a large bowl, combine 2 and 1/2 cups flour, 1/2 cup sugar**, 1/2 teaspoon kosher salt, and 1 and 1/2 tablespoons baking powder.
  • Wet ingredients: In another medium bowl, add 1 egg, 2 teaspoons vanilla (omit for savory scones), 1/3 cup cream and 1/3 cup sour cream. Whisk it together. Set aside.
  • Cut in butter: Now back to the dry ingredients. Use a pastry cutter to cut in the COLD or frozen butter. You can also grate the butter using a cheese grater and mix it in that way. Cut the butter in until it is incorporated and there are still pieces of butter about the size of a pea. Don't overdo it! See photos.
  • Add the wet ingredients to the dry ingredients. Use a wooden spoon to stir it together until it forms a shaggy dough.
  • Coat your hands with flour and finish kneading the dough in as few strokes as possible. (Overworking the dough makes for a tough scone.) Use your hands to fold the dough on top of itself, creating more and more layers until it has come together and all the flour is incorporated. You can add a tablespoon or two of ice cold water if you think it's necessary. I try to get the dough to come together in 5-8 folds. Do your best and remember that you will get better with practice!
  • Mix-ins: At this point add in any mix ins you plan to use. (If you want to add cream cheese like you can see in the photos, chop an 8 ounce block of cream cheese into 1/2 inch chunks. Coat with 1/3 to 1/2 cup sugar in a bowl, making sure all the cream cheese is coated. Carefully fold into the dough.)
  • Prepare a work space with plenty of flour. I like to use a pastry cloth. Transfer the dough to the work place and use your hands to shape the dough into a 6 to 8 inch circle. I like really thick, tall scones. The thicker your circle of dough is, the taller your scones will be. If you added mix ins, your circle will be a bit larger.
  • Use a sharp knife or pizza cutter to cut the circle in half. Cut each half into 3 equal triangles.
  • Place on a baking sheet that has been lined with a silicone baking mat or parchment paper. Place the scones at least 3 inches apart from each other.
  • Freeze for 30 minutes.*** If you don't have room in your freezer, you can put them in the fridge for 45 minutes. If you don't have room to chill a whole baking sheet, place the scones on a plate and then transfer to the baking sheet when they are frozen/cold.
  • 15 minutes before the scones are done freezing, turn your oven on to 400 degrees F.
  • Place the cold scones on a baking sheet if you haven't done so yet.
  • Brush the top of each scone with cream. This will make the scones get nice and brown. Top each scone with coarse sugar if you like, or a bit of salt if you are doing savory scones.
  • Bake: Put the scones in the oven and bake for 10 minutes at 400 degrees.
  • Turn the heat down to 375 without opening the oven.**** Bake for another 8-15 minutes, until the tops are golden brown. DO NOT OVER BAKE. This is where the magic happens, so stay nearby. If you over bake your scones, they will be dry even if you did everything else right. If you are not sure, use a spatula to lift up one of the scones. If they are a nice golden brown on the bottom, they are done.
  • Remove from the oven and let set up on the pan for 10-15 minutes. Transfer to a wire rack to cool completely.
  • Make the glaze: in a small bowl, whisk or use an electric beater to cream 2 tablespoons of very soft butter. Add 1 and 1/2 cups powdered sugar, 1/2 teaspoon vanilla, 1/4 teaspoon kosher salt, and 1 tablespoon milk. Whisk together and add more milk until you have a consistency you like. Drizzle over the tops of the scones and let harden (it usually takes 20-30 minutes.)
  • Top your scones with butter and jam! They are great reheated in the microwave.
  • Store scones covered on the counter for 2-4 days. They are best eaten on day 1 so that you can get those crispy edges. After storing for a while it's hard to avoid a bit of sogginess. (Starbucks solves this problem but leaving them out in the air, but then eventually the center gets dried out. So, pick your poison. Or just eat all 6 scones single handedly on day 1. No judgment here.)

1 tablespoon baking powder
1 teaspoon salt
1/4 cup sugar
1/4 cup butter
4 ounces cream cheese
3/4 cup milk
1 teaspoon vanilla

  • Preheat oven to 425 degrees.
  • Measure dry ingredients into food processor and pulse until well combined. Cut butter and cream cheese into small chunks and distribute throughout processor bowl.
  • Hit pulse about 10 times for 1-2 seconds each pulse until course crumbs develop.

The air fryer is a great way to bake some delicious homemade scones. They turn out so incredibly delicious they will have you going back for seconds.

450 g (15.9 oz) self-rising flour
80 g (2.8 oz) unsalted butter, chilled and cubed
250 ml (8.5 fl oz) milk
Raspberry Jam
Whipped Cream

Steps:

  • Preheat the air fryer to 160°C (320°F). It will take roughly five minutes to heat up.
  • In a large bowl, add the cold butter and flour. Rub the butter into the flour until it resembles bread crumbs.
  • Make a well in the middle of the flour. Add the milk into the middle and mix using a flat-bladed knife until it comes together. The dough should be soft, gradually stir in more milk if it is too dry.
  • On a lightly floured surface, knead the dough until smooth. Avoid kneading too much as it will make the scones tough.
  • Roll the dough out, so it is roughly 2 cm (0.8 in) thick. Using a 5cm (2 in) round scone cutter, cut out as many pieces as possible. Press the dough together and cut out the remaining pieces. Repeat if necessary.
  • Place a piece of baking paper into the bottom of the air fryer basket. Place the scones onto the paper, so they are almost touching. You will likely need to cook in batches.
  • Cook for 15 minutes or until the scones are golden brown and sound hollow when you tap them.
  • Serve & Enjoy.

¼ cup white sugar
2 tablespoons baking powder
2 teaspoons salt
½ teaspoon baking soda
2 cups shredded Cheddar cheese
1 (8 ounce) container sour cream
½ cup canola oil
⅓ cup milk
2 large eggs

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Whisk flour, sugar, baking powder, salt, and baking soda together in a bowl. Fold in Cheddar cheese.
  • Whisk sour cream, oil, milk, and eggs together in a small bowl. Add wet ingredients to the dry ingredients; stir just until moistened.
  • Knead dough on a lightly floured surface 10 to 12 times. Pat out to a thickness of 3/4 inch. Cut into 3-inch squares or cut circles with a 3-inch cutter. Transfer to the prepared baking sheet.
  • Bake in the preheated oven until light golden brown, about 15 minutes.

2 cups all purpose flour
1 tablespoon baking powder
2 teaspoons sugar
1/4 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
1 cup (packed) coarsely grated extra-sharp white cheddar cheese (about 4 ounces)
3/4 cup chilled whipping cream
1 large egg

Steps:

  • Preheat oven to 375°F. Blend flour, baking powder, sugar, and salt in processor. Using on/off turns, cut in butter until mixture resembles coarse meal. Add cheese and cut in using on/off turns. Whisk cream and egg in small bowl. With machine running, add cream mixture through feed tube. Process just until dough begins to clump together (do not overmix).
  • Turn dough out onto lightly floured work surface. Gather dough together; divide in half. Pat each half into 6-inch round. Cut each round into 6 wedges. Transfer to ungreased baking sheet, spacing 2 inches apart.
  • Bake scones until golden and tester inserted into center comes out clean, about 20 minutes. Transfer scones to rack and cool at least 10 minutes. Serve warm or at room temperature. (Can be made 8 hours ahead. Let stand at room temperature. If desired, rewarm in 350°F oven about 5 minutes.)
