Pepperpot, the national dish of Guyana, is an Amerindian meat stew which uses cassareep. Cassareep is a preservative made from grated cassava and flavoured with cinnamon and brown sugar. The Amerindians developed cassareep as a way of preserving meats in the days before refrigeration. Do not refrigerate leftovers. This dish develops flavour when left over a period of days. If not refrigerated, it MUST be reheated to a boil every day. In the early days, a pepperpot was always in the kitchen, and more meat was added to it each day, keeping the pot going for years. This recipe has been halved from the original.

1 lb stewing beef or 1 lb beef brisket
1 lb pork, trotters (or cow's heels) (optional)
1/2 lb pigs tail (optional)
1/2 cup amerindian seasoning (cassareep)
1 red hot pepper
1 cinnamon stick (1 in x 1 in)
1 ounce sugar
salt
2 stalks basil
1 bunch fine fresh thyme
1 large chopped onion
3 chopped garlic cloves

Steps:

  • Soak pig tails and scald.
  • Cook cow heel or trotters in covered pan with water to boil.
  • Skim.
  • When half tender add all the other meats hot water to cover.
  • Add all other ingredients and simmer gently for about one hour until meat is tender.
  • Adjust flavor with salt and sugar.
  • Note: This dish develops flavor when left over a period of days. If left unrefrigerated, it must be reheated to a boil every day.
  • Pepperpot is popularly served with dense bread and butter, though it is equally as good with rice or roti.

1 1/2 lb stewing beef 1 inch pieces
Four cups beef stock, and 1/2 cup water
A tied bundle of thyme (called a Bouquet garni), the more the thyme better
One 4 inch piece of ginger, very thinly sliced
One onion coarsly chopped
Two cloves of garlic finely chopped
One bay leaf
Six allspice berries
One Yam cut in long wedges
Two medium Yukon gold potatos 1 1/2 inch pieces
One butternut squash 1 1/2 inch pieces
Six green onions crushed and chopped
Two habanero peppers chopped finely, more if you like it spicy
One 15 oz can of coconut milk
One 16oz bag of defrosted lima beans
One cup chopped fresh spinach
For the Dumplings, 1/2 cup flour, 6 tbs water - mix and kneed together and make oval shapes rolling with your hands - do this at the end right before the dish is done

Steps:

  • 1. Add 2 tbs vegetable oil to a dutch oven and brown meat, then drain the fat. 2. Add a little more oil then the ginger and onion, and cook until the onion is translucent. 3. Then add garlic, bay leaf, the bundle of thyme, All Spice berries, and cook for 30 seconds. 4. Then add the beef stock and water, with salt and pepper to season, bring to boil, cover and simmer for 30 minutes. 5. Then add yam, potato, squash, green onion, habaneros, and coconut milk, lima beans, simmer covered for another 30 minutes. 6. Then add spinach, and 5 minutes later add the dumplings and simmer covered for another 10 minutes..

Number Of Ingredients 15

2 pounds pig tails, scrubbed, rinsed in cold water, and cut into 1-inch pieces
1 pound salt beef, cut into 1/2-inch cubes
6 1/2 pints water
1 pound yams, peeled and chopped into 1-inch cubes
1 pound coco, peeled and chopped
4 cups ice water
12 okra, rinsed
8 ounces Indian kale, trimmed of heavy stalks and finely sliced
1 teaspoon powdered thyme
Freshly ground salt
Freshly ground pepper
6 ounces onion, thinly sliced
3 scallions, finely chopped
1 can callaloo* or 1 pound fresh spinach, shredded
*a Jamaican green vegetable that tastes like a cross between broccoli and spinach

Steps:

  • In a pot large enough to hold at least 20 cups of water, add pig tails. Cook on medium heat to render fat. Pat salt beef dry with a towel. When drippings have accumulated, add salt beef to pot and saute until brown.
  • Once browned, add 6 1/2 pints of water and bring to a simmer. Simmer for 1 hour, occasionally skimming off the foam that rises to the surface and clings to the sides of the pot.
  • After 1 hour, add the yams and coco. Add ice water to congeal fat and cause it to rise to the top. Skim off fat. Simmer for 1/2 hour more.
  • Add okra and kale. Add thyme, salt, and pepper to taste. Add chopped onion and scallion. Cook another 1/2 hour. Add callaloo or spinach and boil for 3 minutes. Serve immediately.

Freshly ground black pepper
1 medium onion, halved and sliced
3 cloves garlic, smashed
1 teaspoon ground allspice
1/2 cup canned chopped tomatoes
4 cups chicken broth, low-sodium canned or homemade
1 bunch kale (about 1/2 pound), stemmed, leaves chopped
2 thick sweet potatoes (about 1 pound), halved lengthwise and sliced into 3/4-inch half-moons
4 ounces fresh okra, trimmed, halved lengthwise
2 bay leaves
1 Scotch bonnet chile, pierced (if you like it very spicy, mince it) *see Cook's Note
1/2 heaping teaspoon dried thyme
1/3 cup light coconut milk
8 ounces medium shrimp, peeled

Steps:

  • Heat the oil in a Dutch oven over medium heat. Pat the chicken dry, and season with some salt and pepper. Add the chicken, smooth side down, to the pan and cook until brown, about 4 minutes. Transfer the chicken to a plate. Add the onion and garlic to the pot, and cook until the vegetables are softened, about 5 minutes. Stir in the allspice and tomatoes and cook until the juices are almost evaporated. Add the chicken broth, kale, sweet potatoes, okra, bay leaves, the 1 1/2 teaspoons salt, Scotch bonnet, and thyme. Bring the liquid to a boil, adjust the heat to maintain a gentle simmer. Cook, uncovered, until the chicken is cooked through and the sweet potatoes are tender, about 25 minutes.
  • Stir in the coconut milk and the shrimp and simmer until the shrimp turn pale pink and are firm but not tough and rubbery, about 2 minutes. Ladle the stew into warm bowls and serve.

1/2 teaspoon rosemary, crushed
1/4 teaspoon instant garlic, minced
1 pinch red pepper, ground

Steps:

  • Combine okra, spinach, green pepper, minced onion, salt, thyme, marjoram, rosemary, minced garlic, red pepper and chicken stock in large stockpot. Heat to boiling.
  • Reduce heat; simmer, covered, 30 minutes.
  • Add shrimp and coconut milk.
  • Simmer until shrimp are cooked, about 5 minutes.
  • Serve garnished with lime slices.
