Cream Cheese Cucumber Bites (Kids Sailboats) image

This recipe is from Kraft Foods originally. It is nice way to use extra cucumbers. For adults this appetizer is one to have with a bunch of other stuff as a filler and needs to be seasoned with salt and pepper. If you have kids it is a great way to get kids to eat their veggies when you make sailboats. Make sure to seed the "boats" and omit salt and pepper. Use a toothpick as the pole of the sail if you'd like and thin pieces of carrot as sails. Fast and easy and can be made ahead. Enjoy! ChefDLH

1/2 cup chive & onion cream cheese (1/3 Less Fat)
2 cucumbers, cut lengthwise in half, seeded
salt and pepper
peas (optional)

Steps:

  • RESERVE 2 tablespoons carrots.
  • Mix remaining carrots with cream cheese;
  • spoon into cucumber shells.
  • Top with reserved carrots.
  • Cut each cucumber half into 5 pieces to serve.
  • For Kids- Let the kids make cucumber "boats" instead! Just fill the cucumber shells with the cream cheese mixture as directed. Then, add snow peas for the sails. Decorate with other cut-up fresh vegetables as desired to resemble colorful sailboats.

1/2 cup dried cranberries
1/2 cup pecans, finely chopped
4 tablespoons unsalted butter, room temperature
1 tablespoon honey
Kosher salt and freshly ground black pepper

1 English cucumber, sliced in half lengthwise, seeds scooped out with a spoon to create 2 "boats"

Steps:

  • Combine the cream cheese, blue cheese, cranberries, pecans, butter, honey and some salt and pepper in a stand mixer fitted with the paddle attachment. Mix until fully combined.
  • Spread the filling into the cucumber "boats." Slice crosswise into 1-inch pieces.

My son came home from work with this recipe, raving about how good these appetizers taste. A coworker had prepared them and everyone was crazy about them! I haven't tried them yet, but wanted to submit the recipe here for safekeeping.

1 (7 1/2 ounce) can biscuits
1 (8 ounce) package cream cheese, softened
1 large cucumber, sliced to your liking
1/4 teaspoon garlic powder
1/2 teaspoon dill weed
olive oil

Steps:

  • Thoroughly mix softened cream cheese with 1/2 teaspoon dill weed and 1/4 teaspoon garlic powder. Set aside.
  • Roll each biscuit between sheets of wax paper to flatten.
  • Poke holes with fork on both sides.
  • Sprinkle with garlic powder and dill weed, to taste.
  • Brush both sides of biscuit with olive oil.
  • Grill on stovetop grill.
  • Spread cream cheese mixture on top of grilled biscuits.
  • Place cucumber slices on top of cream cheese layer, sprinkle with additional dill, and cover until ready to serve.
  • You can make the day before your party, tastes even better.

These are great appetizers for any gathering. You can add jalapenos if you like it spicy but I prefer without.

1 1/2 lbs boneless skinless chicken breasts
1 (16 ounce) package bacon
8 ounces chive & onion cream cheese
1 cup brown sugar
3 tablespoons chili powder

Steps:

  • Slice chicken as though you were going to make chicken strips and flatten between saran wrap. Half each strip of bacon. In a small bowl mix the brown sugar and chili powder.
  • Spread cream cheese on each piece and lay on a piece of bacon and roll up. Secure with toothpick. (This is when you could have added the jalepeno.) Roll each piece in the sugar/chili mixture and place on lined baking sheet. Sprinkle the extra sugar/chili mixture on top.
  • Bake at 350 degrees for 30-35 minutes Then put under broiler for about 5 more minutes.
  • Enjoy.
