CREAM CHEESE COFFEE CAKE, PENZEY'S

Cream Cheese Coffee Cake, Penzey's image

Simple and delicious, this coffee cake is great served warm, or refrigerated and served cold. The recipe came from an older Penzey's spice catalog. Uses frozen puff pastry. Makes a great dessert. I usually make 1/2 recipe in 8" square pan, still using the whole egg yolk in the filling and whole egg white in the topping.

Time 35m

Yield 12-16 pieces

Number Of Ingredients 9

1 (17 1/3 ounce) package frozen puff pastry, 2 sheets
2/3 cup sugar
1 pinch salt
1 egg yolk
16 ounces cream cheese, softened
2 teaspoons vanilla
1 egg white
1/3 cup cinnamon sugar
1/2 cup pecans, finely chopped (optional)

Steps:

  • Remove the sheets of puff pastry from the box, let thaw. Preheat oven to 350 . Lightly grease a 9x13" cookie sheet. Unfold one sheet of puff pastry, roll lightly with a rolling pin until the sheet is a bit bigger than the cookie sheet. Be careful not to tear the sheet. Flour isn't necessary when rolling puff pastry.
  • Place the sheet of puff pastry on the cookie sheet. With a mixer blend sugar, room temperature cream cheese and vanilla together on medium speed until creamy Spread over the pastry sheet, leaving the outer inch or so uncovered.
  • Roll out the second sheet of pastry to roughly equal the size of the first sheet, then lay it on top. Tuck the bottom edge up and under, then pinch the sides firmly all the way around with your fingers.
  • Beat the egg white until foamy-about I minute on medium speed, Brush the crust with the egg white, then sprinkle on CINNAMON-SUGAR and nuts If desired.
  • Bake in preheated 350' oven for 25-30 minutes, until the pastry crust is puffy, golden brown and flaky. Remove from oven and cool for at least 15 minutes before serving. The pastry will lose some of its puffiness as it cools.

HUNGARIAN CHEESE-FILLED COFFEE CAKE

Hungarian Cheese-Filled Coffee Cake image

This coffee cake has a cream cheese-filled center and is so good. Wonderful for that special brunch! Time does not include rising time for dough.

Provided by Chris Reynolds

Categories     Yeast Breads

Time 1h10m

Yield 24 serving(s)

Number Of Ingredients 13

2 (1/4 ounce) packages yeast
1/2 cup warm water
1 cup butter
5 cups flour
1 1/4 cups sugar
1/2 teaspoon salt
6 egg yolks
1 cup sour cream
1 (8 ounce) package cream cheese
2 whole eggs
1 teaspoon vanilla
1 (10 ounce) jar apricot jam
powdered sugar

Steps:

  • Dissolve yeast in the warm water. Melt butter.
  • Sift flour with 3/4 C of the sugar and the salt into a large bowl.
  • Beat egg yolks until thick and light; blend in the sour cream and melted butter; stir in the dissolved yeast.
  • Gradually stir the egg yolk mixture into the dry ingredients, mixing to make a soft, smooth dough. Turn out on a lightly floured board and knead for 5 minutes, or uintil the dough is smooth. Turn into a bowl, cover, and let rise until almost doubled in bulk.
  • Prepare cheese filling. Cream the cheese until light and blend in the remaining 1/2 C sugar. Add the whole eggs, one at a time, and beat until smooth. Blend in vanilla.
  • Punch down dough and knead a few minutes. Lightly flour a board; roll out dough into a large circle, about 18 inches in diameter, and lay it over a greased 3-quart ring mold (you may use two 9" ring molds. Roll 1/2 dough 13" thick for each 9" ring mold). Fit the dough down into the bottom and the sides of the ring mold, being careful not to poke holes in it, and let it hang over the outside. Pour in the cheese filling (1/2 cheese fill for each 9" ring mold).
  • Lift outside edges of the dougn, and lap it over the filling, sealing to the inside ring of dough. Cut a cross in the dough which covers the center of the ring mold and fold each triangle formed back over the ring, completely encasing the filling.
  • Let rise until doubled in bulk or until the dough comes to the top of the pan.
  • Bake in a moderate oven (350 degrees) for 40 minutes, or until golden brown and a toothpick inserted comes out clean. (For 9" ring mold, bake for 30 minutes.) Let cool for 10 minutes, then turn out with top side down onto a rack.
  • When bread ring is cool, heat jam until it runs easily; carefully spoon jam over the ring. When set, dust lightly with powdered sugar by shaking about 2 tbsp sugar through a sieve. To serve, slice the ring in 1" wedges.

CREAM CHEESE COFFEE RING

Cream Cheese Coffee Ring image

This is probably my most favorite breakfast bread. Compliments abound when people taste the cream cheese filling. This recipe originally came from a Fleishmann's recipe book. The first time I made it, I changed the filling to suit my tastes. I knew that only 3 oz. of cream cheese would not do it justice so I increased the...

Time 3h30m

Number Of Ingredients 17

DOUGH:
3 1/8 c unsifted flour
1/3 c sugar
3/4 tsp salt
2 pkg active dry yeast
1/3 c water
1/3 c milk
6 Tbsp butter (or margarine)
1 eggs
CREAM CHEESE FILLING:
1 pkg 8 oz. cream cheese
2 eggs
1 tsp almond flavoring
FROSTING/GLAZE:
1 c confectioners' sugar
2 Tbsp milk
1 tsp almond flavoring

Steps:

  • 1. Using a large mixing bowl (I use my Kitchenaid mixer) mix 1 cup of the flour with 1/3 cup sugar, salt, and undissolved yeast.
  • 2. In a small saucepan (or microwave) heat together the water, milk, and butter until liquids are very warm (120-130 degrees F). Add this gradually to the above dry ingredients mixture and beat 2 minutes at medium speed of mixer.
  • 3. Add 1/2 cup flour and 1 egg. Beat at high speed for 2 minutes. Stir in enough of the remaining flour to make a soft dough. (You may not need all of it.) Cover bowl of dough with a dish towel and place bowl in a warm place to rise until doubled, about 1 hour.
  • 4. Cheese Filling: Beat cream cheese until fluffy, then beat in 2 eggs, 1/2 cup sugar, and almond flavoring.
  • 5. Roll dough into an 18" circle. The dough will be very limp. Carefully place dough over a bundt pan (or angel food cake pan) allowing it to fill the pan, leaving a bit of dough to hang over edge of pan. It will be stretching in the middle, but leave it like that for now.
  • 6. Pour cream cheese filling around the dough in the well of the bundt pan. Fold the outer edges of dough over the filling. Cut an "X" in the center of the dough in the bundt pan and peel these four corners down over the filling and dough edges. Allow this dough to rise for another hour or until doubled in size.
  • 7. Preheat oven to 350 degrees; bake for 30 minutes or test with a toothpick for doneness. Turn ring out onto a serving plate and frost with glaze if desired.
  • 8. Glaze: Mix together confectioners' sugar, milk, and flavoring and beat until smooth. Pour over coffee ring.
