CINNAMON-SWIRL COFFEE RING
I first sampled this coffee cake at an inn that serves a marvelous breakfast for its guests. It has a pretty cinnamon swirl and a hint of cardamom flavor. I like to make it for my Thursday morning quilt group. -Stell Pierce, Franklin, Virginia

- In a large bowl, combine the first six ingredients. In another bowl, beat cream cheese until smooth. Beat in the eggs, milk, butter and vanilla; gradually add to dry ingredients, beating until combined. , For filling, combine cottage cheese, sugar and cinnamon in a small bowl. Beat on medium speed for 2 minutes. , Spoon half of the batter into a greased 10-in. fluted tube pan; top with filling and remaining batter. Bake at 350° for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Dust with confectioners' sugar if desired.

- Preheat oven to 350°. In a bowl, beat cream cheese, butter, sugar and vanilla until smooth. Add eggs, one at a time, mixing well after each addition., Combine 2 cups flour, baking powder and salt; gradually add to butter mixture. Mix remaining flour with cranberries and nuts; fold into batter. Batter will be very thick. Spoon into a greased 10-in. fluted tube pan. , Bake for 65-70 minutes or until cake tests done. Let stand 5 minutes before removing from the pan. Cool on a wire rack. Before serving, dust with confectioners' sugar.

- In a large bowl, cream butter and 2 cups sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream., Spoon a third of the batter into a greased and floured 10-in. tube pan. - Turn dough onto a lightly floured surface. Roll into a 15x12-in. rectangle. Spread filling to within 1/2 in. of edges. (If using Fruity Cream Cheese Filling, spread with cream cheese mixture; set jam aside.) Roll up, jelly-roll style, starting with a long side; pinch seam to seal. place, seam side down, on a greased 12-in. pizza pan; pinch ends together to form a ring. With scissors, cut from outside edge two-thirds of the way toward center of the ring at 1-1/2-in. intervals (see photos below right). Separate pieces; slightly twist to show filling. Cover and let rise in a warm place until doubled, about 45 minutes. (If using Fruity Cream Cheese Filling, place 1 teaspoon of jam in the center of each slice.) Bake at 375° for 20-25 minutes or until golden brown. Remove from pan to a wire rack to cool. , For glaze, combine sugar, butter, vanilla and enough milk to achieve desired consistency. drizzle over coffee cake.

- 1. Using a large mixing bowl (I use my Kitchenaid mixer) mix 1 cup of the flour with 1/3 cup sugar, salt, and undissolved yeast.
- 2. In a small saucepan (or microwave) heat together the water, milk, and butter until liquids are very warm (120-130 degrees F). Add this gradually to the above dry ingredients mixture and beat 2 minutes at medium speed of mixer.
- 3. Add 1/2 cup flour and 1 egg. Beat at high speed for 2 minutes. Stir in enough of the remaining flour to make a soft dough. (You may not need all of it.) Cover bowl of dough with a dish towel and place bowl in a warm place to rise until doubled, about 1 hour.
- 4. Cheese Filling: Beat cream cheese until fluffy, then beat in 2 eggs, 1/2 cup sugar, and almond flavoring.
- 5. Roll dough into an 18" circle. The dough will be very limp. Carefully place dough over a bundt pan (or angel food cake pan) allowing it to fill the pan, leaving a bit of dough to hang over edge of pan. It will be stretching in the middle, but leave it like that for now.
- 6. Pour cream cheese filling around the dough in the well of the bundt pan. Fold the outer edges of dough over the filling. Cut an "X" in the center of the dough in the bundt pan and peel these four corners down over the filling and dough edges. Allow this dough to rise for another hour or until doubled in size.
- 7. Preheat oven to 350 degrees; bake for 30 minutes or test with a toothpick for doneness. Turn ring out onto a serving plate and frost with glaze if desired.
- 8. Glaze: Mix together confectioners' sugar, milk, and flavoring and beat until smooth. Pour over coffee ring.
VERY CHERRY CRESCENT RING

- Preheat oven to 375°. Reserve 3 tablespoons cherries for topping. For filling, beat cream cheese, sugar and extract until smooth. - In a small bowl, beat cream cheese and 1/4 cup confectioners' sugar until smooth. Beat in egg and vanilla just until combined; set aside., Unroll crescent dough and separate into triangles. Set four triangles aside. Place remaining triangles on a greased 14-in. pizza pan, forming a ring with wide ends facing outer edge of pan and pointed ends toward the center; leave a 3-in. hole in the center. - Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch spring-form pan.
- Combine flour, 3/4 cup sugar, and butter in a food processor; pulse until mixture resembles coarse crumbs. Remove 1 cup of mixture from food processor and set aside. To remaining mixture in processor add baking soda, baking powder, salt, sour cream, almond extract, and 1 egg; process until batter is just combined and smooth. Spread batter evenly into bottom and 2 inches up sides of prepared pan.
- Beat cream cheese, 1/4 cup sugar, and 1 egg together in a bowl until smooth; pour into batter-lined pan and spread evenly. Spread raspberry preserves carefully over cheese filling.
- Stir reserved crumb mixture and sliced almonds together in a small bowl; sprinkle over the layer of raspberry preserves.
- Bake in preheated oven until filling is set and crust is deep golden brown, 45 to 55 minutes. Cool 15 minutes before removing side of pan. Chill completely before serving, about 1 hour.
