Because of her reputation for yummy things, Mom used to sell muffins at my dad's workplace. Among my favorites were these luscious cupcake-like treats. -Libby Spicker, North Ogden, Utah

Number Of Ingredients 18

3 cups all-purpose flour
2 cups sugar
1/2 cup baking cocoa
2 teaspoons baking soda
1 teaspoon salt
2 cups cold water
3/4 cup canola oil
1 large egg
2 tablespoons white vinegar
2 teaspoons vanilla extract
FILLING:
4 ounces cream cheese, softened
1/4 cup sugar
1/8 teaspoon salt
2 tablespoons beaten egg
1/2 teaspoon vanilla extract
3/4 cup milk chocolate chips
Confectioners' sugar, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine flour, sugar, cocoa, baking soda and salt. In another bowl, combine water, oil, egg, vinegar and vanilla. Stir into dry ingredients just until moistened., For filling, beat cream cheese, sugar and salt until smooth. Beat in egg and vanilla. Fold in chips., Fill 12 paper-lined jumbo muffin cups half full with batter. Drop a rounded tablespoonful of cream cheese mixture into center of each; cover with remaining batter., Bake 25-30 minutes or until a toothpick inserted in muffin comes out clean. Cool 5 minutes before removing from pans to wire racks to cool completely. Sprinkle with confectioners' sugar if desired.

1 (8 ounce) package cream cheese, softened
1 egg, slightly beaten
1/3 cup sugar
1 pinch salt
1 (6 ounce) package chocolate chips
1 cup sugar
1 1/2 cups flour
1/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/2 cup oil
1 tablespoon vinegar
1 teaspoon vanilla

Steps:

  • In a small bowl, combine first four ingredients.
  • Add chocolate chips and set aside.
  • Mix remaining ingredients well.
  • Fill muffin tins, lined with paper cups 1/3 to 1/2 full with this mixture.
  • Drop a large spoonful of cheese mixture on top.
  • Bake at 350 for 20 to 25 minutes.

3 teaspoons baking powder
1/2 teaspoon salt
powdered sugar

Steps:

  • Mix filling ingredients with mixer.
  • Set aside.
  • Preheat oven to 350 degrees.
  • Oil bottoms only of medium muffin tins.
  • Beat eggs; stir in milk and oil; set aside.
  • Mix together flour, sugar, baking powder, and salt until well blended.
  • Pour liquids, all at once, into flour mixture; stir until moistened.
  • Fill muffin cups about 1/2 full.
  • Spoon 1 teaspoon filling onto batter.
  • Top with batter to 3/4 full.
  • Bake 30-35 minutes.
  • Don't brown; should be light in color.
  • Roll hot muffins in powdered sugar.

2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
2 large eggs, room temperature
2 small ripe bananas, mashed
1/2 cup butter, melted
1/4 cup 2% milk
1/4 cup sour cream
1 teaspoon vanilla extract
1/2 cup miniature semisweet chocolate chips
FILLING:
4 ounces cream cheese, softened
2 tablespoons sugar
1/4 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the flour, sugar and baking powder. In another bowl, combine the eggs, bananas, butter, milk, sour cream and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips., Fill 12 greased or paper-lined muffin cups half full. In a small bowl, beat the filling ingredients until smooth. Drop by teaspoonfuls into the center of each muffin.
