12 medium baking potatoes
1 package (8 ounce size) cream cheese, softened
1 container (8 ounce size) sour cream
8 tablespoons butter
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F. Grease a 2-quart baking dish. Peel the potatoes and cut into quarters. Place them in a saucepan. Add enough water to to completely cover them and cook over medium-high heat for 20-25 minutes or until soft. Drain well. In a mixing bowl, combine the cooked potatoes, cream cheese, sour cream, butter, garlic powder, and black pepper. Beat with a mixer until light and fluffy. Spoon the mixture into the prepared baking dish. Top with the shredded cheddar. Cover the dish with foil and bake for 45 minutes at 350 degrees F. Remove the foil then bake 15 minutes longer or until the cheese is bubbly. Serve hot.

Steps:

  • Place potatoes in a large pot and cover with water. Bring to a boil and generously salt water.
  • Simmer until potatoes are tender, about 20 minutes.
  • Drain well. Mash potatoes together with cream cheese, sour cream, chives, salt and pepper. Beat with an electric mixer until smooth.
  • Place in a storage container with the lid off and chill in refrigerator. When potatoes are cold, cover tightly with lid.
  • When read to reheat potatoes, preheat oven to 350 degrees F.
  • Grease a baking dish and spoon desired amount of potatoes into a dish. Sprinkle with paprika and dot with butter.
  • Bake for 30 minutes or until heated through.
  • Use within 10 days.

Kosher salt
1 1/2 cups milk
6 tablespoons unsalted butter
1/2 cup sour cream
1/2 teaspoon freshly ground black pepper

Steps:

  • Cut the potatoes into 1-inch cubes and place them in a large pot. Cover the potatoes with cold water and add enough salt so the water tastes quite salty. Bring to a boil, then lower the heat and simmer, uncovered, for about 10 to 12 minutes, until the potatoes fall apart easily when pierced with a fork.
  • Meanwhile, heat the milk and butter in a small saucepan, making sure it doesn't boil. Set aside until the potatoes are done.
  • As soon as the potatoes are tender, drain them in a colander. Place a food mill fitted with a small disc/blade over a glass bowl. Process the potatoes through the food mill, turning the handle back and forth to force the potatoes through the disc. As soon as the potatoes are mashed, slowly whisk in enough of the hot milk/butter mixture to make the potatoes very creamy. Add 2 teaspoons of salt and the sour cream and pepper and whisk to combine. 8 large potatoes, peeled and cubed
4 ounces cream cheese
⅓ cup butter
8 ounces sour cream
½ (1 ounce) package dry Ranch-style dressing mix

Steps:

  • Preheat the oven to 350 degrees F ( 175 degrees C).
  • Place potatoes in a large pot with enough water to cover. Bring to a boil, and cook until potatoes are tender, about 10 minutes. Drain water, and add cream cheese, butter, sour cream and ranch dressing mix. Mash until creamy using a potato masher or electric mixer. Spread evenly in a large baking dish.
  • Bake for 30 minutes in the preheated oven, until the top is golden brown.

2 pounds red potatoes, cut into 1/2-inch cubes (about 6 cups)
1 cup chicken broth
4 ounces reduced-fat cream cheese
1/2 cup reduced-fat sour cream
1/4 cup grated Parmesan cheese
3/4 teaspoon salt
Optional: Butter and additional grated Parmesan cheese

Steps:

  • Place potatoes in a large saucepan; add broth. Bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 15-20 minutes. Uncover; cook until broth is almost evaporated, 4-6 minutes longer, stirring occasionally., Reduce heat to low; stir in cream cheese until melted. Mash potatoes slightly, gradually adding sour cream, Parmesan cheese and salt; heat through. If desired, serve with butter and additional Parmesan cheese.
