- Combine vodka and 1/3 cup sugar; gently stir in cherries and berries. Let stand 2 hours, stirring occasionally; or refrigerate, covered, up to 12 hours. Strain (reserving syrup for another use).
- Pulse wafers in a food processor until finely ground. Add butter and 1/2 teaspoon salt; pulse until mixture has the texture of wet sand. Press half of mixture into the bottom of a 9-inch springform pan; freeze until firm, about 30 minutes.
- Temper cherry ice cream in the refrigerator until it has the texture of soft-serve, about 20 minutes. Meanwhile, beat cream with remaining 1/3 cup sugar to soft peaks. Stir two thirds of whipped cream (refrigerate the remainder) into cherry ice cream just to combine. Pour ice cream mixture over crust; smooth top and freeze until firm, about 1 hour.
- Top with remaining crumb mixture; press to lightly pack. Freeze 20 minutes. Meanwhile, temper vanilla ice cream in the refrigerator about 20 minutes, then stir into remaining whipped cream just to combine. Fold in half of cherry-berry mixture. Spread over crumb mixture, smooth top, and sprinkle with remaining berry-cherry mixture. Cover and freeze at least 4 hours and up to 2 days.
- Melt chocolate in a heatproof bowl set over (not in) a pot of boiling water. Let cool until no longer hot but still pourable, about 10 minutes. Run a thin-bladed knife between cake and sides of pan to loosen; remove sides. Run knife between bottom of cake and pan; transfer to a cake plate. Drizzle chocolate evenly over cake; top with whole cherries and berries.
- Return to freezer until chocolate hardens, 2 to 3 minutes; or freeze, loosely covered, up to 8 hours. Slice into wedges using a sharp knife dipped in hot water (if cake is too firm to slice, let temper in the refrigerator 10 to 15 minutes first).

- Whisk flour, baking powder, and salt together in a bowl.

- Combine 6 cups cherries, 6 tablespoons sugar, and lemon zest in a bowl. Allow cherries to rest for 2 to 3 hours.
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- Mix flour, 1/4 cup sugar, cream of tartar, baking soda, cinnamon, cardamom, and salt in a large bowl. Cut in butter with a knife or pastry blender until the mixture resembles coarse crumbs. Whisk egg and half-and-half in a small bowl; stir into the flour mixture with a fork until dough is moistened with large clumps. - Preheat oven to 325 degrees F (165 degrees C). Spray a 9x13-inch glass baking dish with cooking spray.
- Unroll crescent rolls into the prepared dish, pinching the seams together.
- Beat cream cheese, white sugar, and vanilla extract together in a bowl; spread over crescent roll dough. Sprinkle brown sugar and 1 teaspoon cinnamon over cream cheese mixture layer.
- Pour cherry pie filling over brown sugar layer. Sprinkle yellow cake mix over cherry pie filling. Arrange butter slices over cake mix and top with remaining 1 teaspoon cinnamon. Wrap a piece of aluminum foil under baking dish to help prevent rolls from burning.

A childhood favorite that my mother used to make. If you don't want to use the sauce on the cake-although it's sure good-it would be nice on ice cream as well.

- Cream shortening; add sugar gradually and cream until fluffy.
- Blend in eggs.
- Combine dry ingredients and stir into creamed mixture alternately with milk.
- Stir in cherries (and nuts, if using).
- Pour into a 9x13 pan that has been sprayed with nonstick spray.
- Bake at 350° for about 50 minutes.
- Serve warm with: HOT CHERRY SAUCE: Mix together in a saucepan 1/2 cup sugar, 2 Tbsp cornstarch and a dash of salt.
- Blend in the juice from the can of cherries and 1 cup water.
- Bring to a boil, stirring constantly.
- Boil, stirring occasionally, until the mixture thickens and the starchy taste disappears, probably about 10 minutes.
- Remove from heat and blend in 1/4 tsp almond extract.
- Note: Sauce thickens unacceptably as it cools, so it really needs to be served hot.

- In a small saucepan, combine water, 3/4 cup sugar and cherries.
- Bring to a boil over medium heat, stirring occasionally, until the sugar dissolves.
- Remove from heat; let the cherries steep 30 minutes.
- Drain the cherries, discarding the syrup.
- Transfer the cherries to a bowl, cover and refrigeratoe for at least 30 minutes or up to 8 hours.
- In a food processor, process cream cheese until smooth, about 30 seconds.
- Scrape down the sides of the bowl.
- Meanwhile, combine the milk, cream and remaining 3/4 cup sugar in a saucepan.
- Cook over medium heat, stirring occasionally tohelp dissolve the sugar, until bubbles form around the edges of the pan, about 5 minutes.
- Add about 1/2 cup of the hot-milk mixture to the cream cheese; process until smooth, about 30 seconds.
- Add the remining milk mixture and process for another 30 seconds.
- Strain through a fine mesh sieve into a bowl.
- Add vanilla; stir to combine.
- Cover and refrigerate until chilled, at least 3 hours or up to 24 hours.
- Pour the cream mixture into an ice-cream maker and freeze according to the manufacturer's instructions.
- When nearly frozen and the consistency of thick whipped cream, add the cherries.
- Churn or stir just until mixed.
- Transfer the ice cream to a freezer-safe container.
- Cover and freeze until firm, at least 3 hours our up to 3 days, before serving.

- Preheat oven to 325 degrees F (165 degrees C). Make sure your 10 inch tube pan is clean and dry. Sift flour three times and set aside.
- In a large glass or metal mixing bowl, beat egg whites with salt and cream of tartar until foamy. Gradually add sugar, continuing to beat until stiff peaks form. Blend in vanilla and almond extract. Fold the flour into the whites until no streaks remain. Pour half of the batter into pan. Sprinkle with half of the cherries. Fill pan with remaining batter and top with remaining cherries.
- Bake in the preheated oven for 50 minutes. Invert pan and allow to hang until cake cools.

- Preheat oven to 325 degrees F (165 degrees C).
- Cream the cream cheese, butter or margarine, sugar, and vanilla together until smooth. Beat in eggs one at a time. Sift together 2 1/4 cup flour, baking powder, and salt; fold into cream cheese mixture. Dredge cherries in 1/4 cup flour, and fold into batter.
- Sprinkle pecans over the bottom of an ungreased 10 inch angel food tube pan. Bottom should be completely covered. Add a few more pecans if necessary. Spoon batter into pan on top of nuts.
- Bake for about 75 minutes, or until an inserted wooden pick comes out clean. Allow cake to cool in pan. Run knife around outside edge and center tube. Ease cake out of pan, and onto plate.

- The Cake:Grind almonds twice, the second time with the confectioners' sugar.
- The almonds should have the consistency of flour.
- Whip the egg whites until stiff but not dry, and blend with the nuts.
- Divide and spread batter in two greased 9-inch (23 cm) springform pans, and bake at 320 degrees F (160 degrees C) 25 to 30 minutes.
- Cool slightly in pan before removing to rack to cool completely.
- Makes two 9-inch layers.
- Cherry Cream:Beat the cream until firm and glossy.
- Add eggs and confectioners' sugar which have been whipped together until light and fluffy.
- Stir in the chocolate sauce or syrup, and add cherry juice to taste.
- Place one cake layer on platter, baked side down, and cover with half of the cream mixture.
- Add second layer, baked side up, and top with remaining cream.
- Keep refrigerated until serving time.

- In a small bowl, combine the milk, eggs and butter. Combine flour and salt; add to milk mixture and mix well.
