CRAZY WHOLE-WHEAT SPICE CAKE
Most Crazy Cakes seem to be the chocolate version. This one is NOT chocolate but still simple and good! Clipped this one from a magazine way back in 1979.

Steps:
- Mix well the flours, sugar, soda, salt and spices; set aside.
- In an 8 x 8 inch square pan, mix well the bran cereal and coffee. Let stand 2 minutes or until cereal is softened. Stir in oil, vinegar and vanilla, then stir in flour mixture until smooth.
- Bake in 350 F oven for 35 to 40 minutes or until pick inserted in centre comes out clean. Cool completely in the pan on a wire rack. Cut in 9 squares or as desired to serve.

CRAZY SPICE CAKE
One-dish spice cake ... so easy! For some reason, my mother-in-law showed me how to make it twice... :) Make it in the cake pan, serve it straight out of the pan, and eat with some vanilla ice cream. However, if you're unsure about how well it will mix (I've never had any problems with it), feel free to use a bowl or two. ;)

Move over chocolate crazy cakes, Crazy vanilla cake's in town! A simple cake long on flavor. Chocolate chips fancy things up a bit! Great cake! Don't scrimp on the vanilla extract, use the real thing, it'll be worth it!

Steps:
- Heat oven to 350°F.
- Combine flour, sugar, baking powder and salt in a 8-inch baking pan. Set aside.
- Stir together egg and vanilla in a small bowl with wire whisk. Make two indentations in flour mixture; pour oil in one and egg mixture in the other. Pour milk over flour mixture;mix well. Stir in pecans.
- Bake for 30 to 40 minutes or until wooden toothpick inserted in center comes out clean.
- Sprinkle chocolate chips over warm cake. Let stand for 2 minutes; slightly swirl chocolate chips.

- Make the coffee; use dark roast.
- Position oven rack in the center of oven; preheat to 350°. Prepare 12-cup Bundt pan as follows: Prepare Bundt pan using the following method-make a paste from 1 tablespoon melted butter and 1 tablespoon flour ; apply it with a pastry brush, you can thoroughly coat the surface of the pan, including all the nooks and crannies (or use your preferred method to prepare Bundt pan for baking a cake).
- Cream the shortening using a mixer on medium speed; add in the brown sugar gradually; increase mixer speed to med-high and beat until fluffy, about 3 minutes.
- Decrease mixer speed to low; add in the molasses, then add in the eggs one at a time, beating well after each addition.
- In a separate bowl, whisk the flour, baking powder, baking soda, salt, and spices together.
- Add 1/3 of the flour mixture to the cream mixture, beat, then add 1/4 cup coffee and beat on medium until blended; repeat two more times.
- Pour batter into the pan, smooth off top with spatula.
- Bake for 45 minutes or until the cake tests done.
- Cool for 10-15 minutes in the pan, unmold onto a cake rack, and cool completely.
- Sprinkle with coarse sugar or dust with powdered sugar.

- Heat oven to 350°F Grease bottom and sides of 13x9-inch pan with shortening; lightly flour.
- In large bowl, beat flour, 1 1/4 cups of the sugar and remaining ingredients except rhubarb, nuts and whipped cream with electric mixer on low speed 1 minute, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. Stir in rhubarb. Pour into pan. Sprinkle with nuts and remaining 1/4 cup sugar.
- Bake 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour. Serve with Sweetened Whipped Cream.

- Preheat an oven to 350 degrees F (175 degrees C). Whisk together the all-purpose flour, buckwheat flour, cornstarch, white sugar, baking soda, salt, cinnamon, ginger, allspice, dry mustard, and ground black pepper in a large mixing bowl.
- Stir together the molasses, oil, vinegar, vanilla, and cold water in a measuring cup. Make a well in the center of the dry ingredients; pour the wet ingredients into the well. Mix the batter together until just blended. Pour the batter into an ungreased 8x8 inch baking pan.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 30 to 40 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
