CRAZY GOOD DISHWASHER SALMON
I use the heated water wash (not pots and pans) and heated dry cycle, but I'll bet the water miser settting (as long as it is heated water) will work too. Try your regular wash cycle first and adjust up or down from there.

- Wrap the filet, 1/2 lemon, and rosemary tightly in tin foil.
- Place foil packet in the top rack of your dishwasher.
- Use the heated water and heated dry cycle.
- No peeking.
- Salt and Pepper to taste- plate and serve immediately.
JOEY POTS AND PANS FAMOUS MEATBALL RECIPE
Absolutely wonderful flavored meatballs. Very tender and moist. I used 6 serrano peppers in place of the jalapenos (serranos are much more flavorful and often stronger than jalapenos). Serve with your favorite red pasta sauce. Not sure of the exact servings but this would probably serve 4-6 easily. I just freeze the leftovers since it is just 2 of us. - Remove Beef and Pork from fridge, bring to room temp in a large bowl or pot.
- In separate batches sauté Onion, Jalapeno and Garlic until soft, add to meat. Sauté Bacon until cooked, add to meat. Add Bread Crumbs, Parmesan Cheese and Cilantro to meat.
- Using your hand, combine all ingredients thoroughly.
- Beat eggs with water, add to meat mixture, and combine thoroughly.
- Cover and refrigerate until ready to use.
- In a 10-inch non stick frying pan add 2 tablespoons of olive oil. Portion meatballs to desired size and brown on all sides. Place meatballs in tomato sauce to finish cooking.
- Meatball mixture can also be cooked in a meat loaf pan.

DISHWASHER SALMON WITH SORREL SAUCE
Ruth Richie's version of salmon cooked in your dishwasher. If you cannot find sorrel, dill is a good replacement.

- Layer two 30cm x 40cm sheets of foil together. Brush the shiny side of the foil with half the oil, place 2 fillets, side-by-side on top, then fold up the outer edges. Drizzle 1 tablespoon lime juice over each fillet and season with sea salt and freshly ground black pepper. Fold and pinch the foil extra tightly to create a watertight seal around the fillets.
- To ensure that the packet is airtight, press down on it gently with your hand - if air escapes easily, rewrap. Repeat wrapping with another 2 pieces of foil, remaining oil, fish and lime juice.
- Place the fish on the top rack in the dishwasher. Set the dishwasher to the 'normal' cycle and run it without any detergent for 45 minutes, which should take it through just the wash cycle. (Different brands of dishwasher may have varying washing cycles, with differences in water temperature, so check the machine's manual, which will tell you the temperature and duration of your washing cycle. Ideally 'cook' the salmon in a water temperature of 55°C for 45 minutes.).
- Meanwhile, make the sorrel sauce. Heat butter in a frying pan over medium heat, add leek and shallot, and cook for 8 minutes or until leek is soft. Add stock and simmer for 15 minutes or until reduced by half, then set aside to cool.
- Once cooled, transfer to a blender, add sorrel, lemon juice and salt and pepper to taste, then purée until smooth. Transfer to a small saucepan until ready to serve.
- Once the wash cycle is completed, stop the dishwasher before it starts the drying cycle. To be sure, it is best to set a kitchen timer for 45 minutes. Remove the salmon from the dishwasher.
- To serve, reheat the sauce over medium heat, then stir in the cream. Remove the salmon from the foil, place a fillet on each plate and spoon a generous amount of sauce over.

- Mix dry ingredients together well. Cut in the shortening using a pastry blender. Mix in the water and knead until the dough is very smooth, about 15 minutes.
- Grease a cast iron frying pan, including the sides, and press the dough into the pan. Bake on top of the stove over low heat. Watch carefully so that the bread does not brown or burn before the center is cooked. When the bread is free from the pan, turn the loaf over and continue to cook. The total cooking time will be about 10 minutes on each side.

LIZZIE'S DISHWASHER FISH
My late MIL, Lizzie, was a wild and crazy cook. One day she was presented with a whole bluefish, fresh from the ocean. She wanted to steam the fish but did not have a large enough steamer. Voila! She thought, the dishwasher! And, believe it, or not, it was a huge success. Now, although most of you reading this will not attempt this daring recipe it may be of use to another wild and crazy chef out there one day. That's why I have to share this wonderful recipe. - Cut two or three large pieces of aluminum foil, large enough to acommodate and completely wrap the fish.
- Place fish on aluminum foil.
- Combine the butter, wine, salt, pepper, and Tarragon and spread on the inside of the whole fish.
- Wrap the fish and make sure it is air-tight.
- Place on the top rack of the dishwasher and run through the full cycle, without soap, please.
- Unwrap and serve with green sauce.
