CRANBERRY SWEET AND SOUR SAUCE
I made this sauce over meatballs at my daughter's wedding reception. It was a hit. Nice change from your regular sweet and sour. The cranberries give it just enough tartness. This recipe makes a lot so you may want to cut it down for smaller portions. It was enough for 280 1" meatballs.

Steps:
- Mix brown sugar and cornstarch together in a medium sauce pan.
- Stir in cranberry sauce, pineapple juice, vinegar, and soy sauce.
- Cook over medium heat until thickened, stirring often.
- Bring to a boil and boil for one minute, stirring constantly.
- Serve over meatballs, chicken, roast pork, stir fried meats or vegetables.
- Makes about 8 cups.

Steps:
- Add the ingredients to a small saucepan and bring to a boil over medium heat.
- Cook stirring often, 2-3 minutes or until cranberry sauce is melted and sugar is dissolved.
- Remove from heat, and cool completely (about 30 minutes).
- Cooking time is cooling time.
- ENJOY!

- In a 13" x 9" baking dish, place chicken pieces.
- In a small bowl, mix together Catalina salad dressing, whole-berry cranberry sauce, onion soup mix and brown sugar until smooth. Pour evenly over chicken pieces.

- Serve over hot cooked rice.

- In a small bowl, combine cornstarch and pineapple juice until smooth. Stir in cranberry and barbecue sauces; set aside. , In a large skillet, stir-fry pork in oil until meat is no longer pink, 3 minutes. Sprinkle with salt and pepper. Remove from the pan and keep warm., Add green pepper and pineapple to pan; stir-fry for 2 minutes. Stir cornstarch mixture and add to skillet. Bring to a boil. Cook and stir until thickened, 2 minutes. Add pork; heat through. Serve with rice, noodles or wonton strips if desired. Freeze option: Place cooled meat mixture in freezer containers. Quick and easy meal when your in a hurry. I know the idea of cranberries and BBQ sauce together does not sound very good but these 2 flavors really do compliment each other in this recipe. I have also used pork when making this dish.

Steps:
- Combine pineapple liquid and cornstarch.
- Stir in sauces and set aside.
- Heat oil in a large fry pan over high heat.
- Add chicken, salt, and pepper.
- Stir-fry until no longer pink.
- Add peppers and pineapple tidbits.
- stir fry 2 minutes longer.
- Stir the cornstarch mixture and add to chicken.
- Cook and stir constantly, over med heat until thickened.
- Server over rice or chow mien noodles.
EASY CRANBERRY SWEET AND SOUR BRISKET
This has to be the easiest recipe for brisket and it is so good, you can also make this same recipe using a pot roast! If you can make this a day ahead the sauce flavor intensifies the following day, just rewarm over low heat. If you are making a larger brisket then double the ingredients but still only use 2 onions and 1-2 tablespoons fresh garlic. This brisket is melt in your mouth tender!

- Heat oil in a large Dutch oven over high heat.
- In a bowl mix together beer, cranberry sauce and ketchup; set aside.
- Sprinkle the brisket with salt and pepper (I use seasoning salt) brown on both sides about 6 minutes per side; transfer to a plate.
- Add in sliced onion and garlic (if using) saute for about 7-8 minutes or until soft, stirring with a wooden spoon and scraping the bottom of the pan.
- Transfer the brisket back to the pot and pour in the beer mixture and bring to a boil.
- Cover the pot tightly and transfer to the oven.
- Cook for about 3 hours at 325 degrees, or until the brisket is tender, seasoning the sauce with salt and pepper if desired the last 30 minutes of cooking.
- Transfer the brisket to cutting board and slice.
- Spoon any fat off from the top of the gravy.
- Transfer the slices to a serving platter and pour over the gravy.
- Delicious!

FRESH SWEET CRANBERRY SAUCE WITH A TWIST
I've been making these cranberries for nearly 30 years. It's the first thing I prepare for Thanksgiving and Christmas. I make them the weekend before so they have lots of time to sit and have even better flavor! I hollow out fresh oranges for serving cups. Makes a beautiful presentation and I use the orange segments in my turkey brine. Cut the oranges in a zig-zag pattern around the center to make it even more holiday special! Make ahead several days before serving for best flavor. I suppose they could be served warm as well, but I find the coolness of the berries is a nice contrast with the other hot foods in the meal. You can use 2 to 3 cinnamon sticks in place of ground cinnamon, which will yield a lighter color.
