AMAZING PINEAPPLE CRANBERRY SAUCE
This is a variation on classic, fresh Ocean Spray® cranberry sauce! My grandma has made it for years and people who don't like cranberry sauce request that I make this at our events! It's different and great! This is a nice change of pace. and I've yet to meet anyone who doesn't like it! Tastes best if stored in refrigerator overnight.

Steps:
- Combine all ingredients in an uncovered 3-quart saucepan, and cook over medium heat, stirring often, until most of the cranberries have opened and the mixture is somewhat thickened. Be sure to cook the cranberries until they "pop" in order to release the natural pectin, which thickens the sauce.
- Store in refrigerate for up to 1 day or until ready to use. Relish thickens a bit over time.
- NOTE - If you prefer a smoother sauce, strain the cranberry skins through a fine sieve.
- NOTE - For flavor variation, add ½ cup slivered almonds and 1 cup chopped apple bits with all the other ingredients (in Step #1).

CRANBERRY ORANGE PINEAPPLE RELISH
Steps:
- This is not ordinarily messy to make, but as with beets and tomato dishes, Im careful with what I prepare cranberries. 1. Put orange in cuisinart with metal blade and pulse or process till coarsely chopped. 2. Add cranberries to food processor and pulse or chope till coarsely chopped. (If cranberries are still frozen, this will make a lot of noise.) 3. Empty into a container that can be covered and refrigerated. 4. Drain cans of orange segments and crushed pineapple and put aside juices for some other use. Stir canned fruit into cranberries. Add sugar to taste. Flavor will improve while the relish chills. (When my mother first showed me how to make this, she used to use 2 whole cups of sugar but now she just uses 1 cup) 5. Refrigerate. - Take a blender. Add washed cranberries, Pineapple chunks along with its juice to the blender. Churn in the blender till roughly blended. We want chunky blend and not the smooth blend of berries and pineapple. If some berries are left whole, then it is okay.
- Now take a heavy bottom sauce pan. Add Cranberries +Pineapple crush into the pan. Add packed brown sugar, crushed cloves and 1 cup water to the pan. If you are planning to add a little kick to the relish, then add a fat pinch of chili flakes to it now. This step is totally optional.
- Bring the Pineapple Cranberry Relish mix to a boil. Reduce the heat to medium and cover with a lid. Covering with lid is important since it splatters while cooking. Cook for 10-15 minutes till the relish starts thickening. Keep stirring in between, to avoid burning.
