Ice Cream Cake:
Unsalted butter, for buttering the pan
8 to 10 brownies (2 1/2-inch squares)
1/2 cup crushed chocolate sandwich cookies
2 quarts mint chocolate chip ice cream, softened
Vanilla Whipped Cream Frosting:
2 cups heavy cream
2 tablespoons confectioners' sugar
1/2 teaspoon pure vanilla extract
Chocolate sprinkles, for sprinkling

Steps:

  • For the ice cream cake: Butter a 9-inch springform pan and line it with a parchment paper circle. Cover the bottom of the pan with the brownies, using any extra pieces to line the sides of the pan if desired. Sprinkle with the cookies. Scoop the ice cream onto the cookie layer, packing it in tightly. Spread with an offset spatula to make a smooth top. Cover with plastic wrap and freeze until firm, 2 to 2 1/2 hours.
  • Unmold the cake by running a knife around the edge of it, then unhinging the springform ring and removing it. Invert the cake onto a sheet of plastic wrap and remove the bottom of the pan and the parchment. Place a plate on the bottom and invert once more.
  • For the vanilla whipped cream frosting: Add the cream, confectioners' sugar and vanilla to a large bowl and beat with an electric mixer until soft peaks form. This makes enough frosting to cover the top and sides of the cake with additional to pipe decorations if desired.
  • Frost the top and sides of the cake with the whipped cream frosting and decorate with the sprinkles. If the cake begins to get too soft, put it back into the freezer for a few minutes.
  • Freeze an additional 1 1/2 hours and up to overnight. Before serving, let the cake sit at room temperature for about 20 minutes.

  • Line a 9-by-13-inch pan with two layers of plastic wrap, leaving a few inches of overhang on all sides. Open all of the ice cream containers. Place one 1 1/2 quart (or 3 pints) on the counter and let soften until it resembles thick cake batter, 5 to 10 minutes; you'll use this ice cream first. Place the other containers in the refrigerator to soften while you build the first half of the cake. (Ice cream will reach the desired consistency in the refrigerator in 20 to 30 minutes.)

This ganache-covered cake is great with mint or mint chip ice cream.

6 tablespoons unsalted butter, melted, plus more for buttering the pan
9 ounces chocolate wafer cookies, crushed
4 cups chocolate ice cream (1 quart), softened
4 cups mint or mint chip ice cream (1 quart), softened
8 ounces bittersweet chocolate, chopped
3/4 cup heavy cream
1/4 cup crushed mint chocolate wafer cookies

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-inch spring-form pan and line the bottom with parchment.
  • Combine the melted butter with the wafer cookies in a medium bowl. Press the mixture into the bottom and almost up the entire side of the prepared pan. Bake for 10 minutes, let cool completely before using.
  • Scoop the chocolate and mint ice creams onto the cookie layer, packing it in tightly and alternating the scoops to create a marbled or checkerboard effect. Spread with an offset spatula to make a smooth top. Cover with plastic wrap and freeze until firm, 2 to 2 1/2 hours.
  • Unmold the cake by running a knife around the edge, then unhinge the spring-form and remove. Invert the cake onto a sheet of plastic wrap and remove the bottom of the pan and the parchment. Place a serving plate on the bottom and invert once more (so the cookie layer is on the bottom). Keep in the freezer until ready to frost.
  • Put the chocolate in a medium heatproof bowl. Bring the heavy cream to a simmer in a small saucepan. Pour the cream over the chocolate and stir until smooth. Allow to cool 10 minutes before using.
  • Frost the top and sides of the cake with the ganache and top with the wafer cookies. If the cake begins to get too soft, put it back into the freezer for a few minutes.
  • Freeze another 1 1/2 to 2 hours or up to overnight. Let the cake sit at room temperature for about 20 minutes before slicing and serving.

You can also try different ice cream combinations, depending on what you like. Pistachio and vanilla is another possibility. A fun idea for a summer cake!

1 liter chocolate ice cream, softened
1 liter vanilla ice cream, softened
1 (10 ounce) package of frozen sliced strawberries
1 cup sugar, plus
2 tablespoons sugar
1/2 tablespoon cornstarch
1/2 cup heavy cream
4 ounces unsweetened chocolate
1 tablespoon rum (optional)
40 chocolate chip cookies
1/4 cup butter, melted

Steps:

  • Crush 20 of the cookies and mix the crumbs with the butter.
  • Pat mixture on the bottom of an 8 inch springform pan and put in the freezer for 15 minutes.
  • Now make a fudge sauce by putting the cream, chocolate and 1 cup of sugar in a saucepan and stirring constantly over low heat until the chocolate is melted.
  • Add rum if desired.
  • When the fudge sauce is cool, use about half of it to spread over the cookie crumb crust.
  • At this point, you also take the remaining chocolate chip cookies and stand them up along the edge of the pan.
  • Put the mixture back in the freezer for 15 minutes.
  • Take the ice cream out to soften at this point and start making the strawberry sauce.
  • Put the strawberries, two tablespoons of sugar and cornstarch in a saucepan and heat-- stirring occasionally-- until the strawberries form a thick sauce.
  • When the ice cream is fairly soft, take the pan out of the freezer and start spreading the ice cream in the pan.
  • You want to create a marbled effect by lightly mixing the two ice cream flavours together, but not so much that they become all one colour.
  • Swirl in the strawberry sauce.
  • Pour over the remaining fudge sauce and return to freezer until everything is firm, at least two hours.
  • To serve, remove the edge of the pan and let soften for 10-15 minutes.

OREO MINT CHIP ICE CREAM CAKE

This decadent, can't-stop-eating-it dessert is an homage to Linda Freeman, the incredible chef at my college sorority house. She made a version of grasshopper pie that featured an Oreo crust and mint chocolate chip ice cream (instead of the classic crème de menthe chiffon filling). My spin takes those same flavors and layers them with chocolate ganache and whipped cream, so you get a little taste of everything in each bite.

3 1/2 cups heavy whipping cream
12 ounces semisweet chocolate bars, finely chopped
2 teaspoons light corn syrup
Pinch kosher salt
1 teaspoon pure vanilla extract
1/2 cup confectioners' sugar
One 19.1-ounce package chocolate sandwich cookies, such as Oreos (44 to 48 cookies)
2 quarts (4 pints) green mint chocolate chip ice cream, softened

Steps:

  • Set a medium bowl over a larger bowl full of ice and water, so that the ice water surrounds it. Place a second large bowl in the refrigerator.
  • Bring 1 1/2 cups of the cream just to a simmer in a small saucepan over medium-low heat. Place the chocolate, corn syrup and salt in a heatproof medium bowl and pour the hot cream over top. Let sit 1 minute to slightly melt the chocolate. Stir the chocolate and cream together with a rubber spatula, using small circular motions starting at the center of the bowl until emulsified and smooth. Transfer the mixture to the medium bowl set inside the ice bath and refrigerate for 15 minutes, stirring halfway, until thickened and cooled. Makes about 2 3/4 cups.
  • Remove the empty chilled large bowl from the refrigerator. Add the remaining 2 cups of heavy whipping cream, vanilla and confectioners' sugar and whip on high with a handheld electric mixer until medium-stiff peaks form, 5 to 7 minutes. Set aside.
  • Place the chocolate sandwich cookies in a zip-top bag and use a rolling pin or the bottom of a heavy-bottomed skillet to crush into bite-size pieces.
  • Evenly spread half of the softened ice cream on the bottom of a 9-by-13-inch baking dish. Spread 2 heaping cups of the crushed cookies over the ice cream followed by half of the chocolate sauce and 1 heaping cup of the whipped cream.
  • Repeat the layers with the remaining ice cream, 2 heaping cups of the crushed cookies and the remaining chocolate sauce. Spread the remaining whipped cream over top and sprinkle with the remaining 1 1/2 cups crushed cookies. Wrap the baking dish in plastic wrap and freeze until firm, 4 hours to overnight.
