- In a small bowl, combine the sweet potato, sugar, cranberries, butter, egg and vanilla. Transfer to a greased shallow 2-cup baking dish., Combine the pecans, brown sugar and flour. Cut in butter until crumbly. Sprinkle over top., Bake, uncovered, at 350° for 20-25 minutes or until a thermometer reads 160°.

SWEET POTATO CRANBERRY BAKE
My father's mother made this every year for our Thanksgiving dinner. It is not Thanksgiving to me without this dish. I do not like the tartness of most cranberry dishes, and sweet potatoes can be bland by themselves. This dish combines both to make a great all-in-one dish. When I take this dish to another person's home, I bake the first time and add the yams, cover, and then wait to heat until I am at their house.

- Preheat oven to 375 degrees F (190 degrees C).
- Combine cranberries, orange slices, sugar, pecans, orange juice, cinnamon, nutmeg, and mace in a 2-quart baking dish.
- Bake in preheated oven until cranberries soften, about 30 minutes. Stir yams into cranberry mixture and continue baking until heated through, about 15 minutes more.

CRANBERRY PECAN SWEET POTATO BAKE RECIPE
One of my favorite dishes to make is sweet potatoes. Everyone loves them, and they all love them even more now, because of this easy and delicious Cranberry Pecan Sweet Potato Bake.

- Preheat oven to 400 degrees F. Spray a 9 x 13 inch pan, with nonstick cooking spray.
- Peel all the potatoes, with a potato peeler, then slice them into thin rounds. These should be less than 1/4 inch wide.
- In a small bowl, combine the melted butter, brown sugar, honey, and olive oil. Mix until fully incorporated.
- Lay out your potato slices on the bottom of the pan. Make sure you only do one layer of the sweet potatoes.
- For the second layer of the sweet potatoes, add your Craisins and your chopped pecans. I used about 1/2 cup of Craisins and 1/3 cup of pecans for the first layer.
- Drizzle about 3 Tablespoons of the brown sugar liquid over the first layer, of the bake.
- Repeat this process until there are no more sweet potatoes left. If you have extra Craisins and pecans left over, place them on top.
- Pour the remaining brown sugar drizzle, on top.
- Spray the top layer, with a little extra non-stick cooking spray.
- Place in oven and allow it to cook for about 35 - 40 minutes.
- Remove from oven and enjoy warm.

- Preheat the oven to 425°F. Coat a 9-inch pie or baking dish with butter and set aside.
- In a small mixing bowl, add pecans, cranberries, and brown sugar. Toss to combine and set aside.
- Peel 2-3 sweet potatoes and slice evenly into 1/8-inch-thick rounds, place in the pie pan, set aside.
- On the stovetop or in the microwave, melt and combine the butter, maple syrup, orange zest, salt, and cinnamon. Pour over the potato slices and gently toss. Spread potatoes evenly in the pan.
- Top the sweet potatoes with the brown sugar mixture. Cover with foil and bake in a pre-heated oven for 25 minutes. Remove foil after it has baked for 25 minutes and bake for an additional 20 minutes uncovered.
- Remove from oven, let it sit for 5 minutes, and serve.

BAKED BRIE WITH CRANBERRY-PECAN-BACON CRUMBLE
This easy melted cheese dip is a crowd-pleaser, so you might want to double the recipe to have a backup ready! Feel free to change up the dried fruit-cherries, raisins, dates and figs would all work nicely.

- Preheat the oven to 325 degrees F. Lay the bacon in a large skillet, then cook over medium heat until golden and crisp, 4 to 5 minutes per side. Drain the bacon on paper towels, let cool, then finely chop.
- Combine the bacon, pecans, cranberries, apricots, rosemary, vinegar, pinch of salt and a few grinds of pepper in a small bowl.
- Remove the Brie from its packaging. Cut off the top rind of the round of Brie, leaving a 1/4-inch border around the edges (use a sharp knife and go in from above at a slight angle). Discard the rind you have removed. Put the Brie in a small baking dish. Top with some of the cranberry-pecan-bacon crumble, and scatter the rest around the Brie. Cover the dish with foil, and bake until the cheese is warm and gooey, 30 to 35 minutes.
- Serve with bread, crackers and apple and/or pear slices for dipping.

- Clean potatoes and pierce with fork.
- Place on oven rack, bake for 1 and 1/4 hours or until tender, and set aside to cool.

- Place sweet potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer until tender, 20-30 minutes. Drain. - 1. Boil potatoes with water to cover, until tender, about 50 minutes. Drain and cool. Peel and cut into 1/4 inch slices. Place 1/2 of the potato slices in a greased 2 1/2 quart baking dish. Top with 1/2 of the cranberries, brown sugar, and butter. Repeat layers. Pour orange juice over the top.
- 2. Cover and bake 30 minutes at 350. In small bowl combine nuts, brown sugar and cinnamon; cut cold butter in with pastry blender. Sprinkle over sweet potato mixture, and bake, uncovered for 10 minutes, or until topping is golden brown.

- Add enough water to cover the potatoes.
