1 cup packed brown sugar
½ cup white sugar
2 eggs
1 ½ teaspoons vanilla extract
1 tablespoon grated orange zest
1 teaspoon orange extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
3 cups rolled oats
1 cup dried cranberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla, orange zest and orange extract. Combine the flour, baking soda and cinnamon; stir into the butter mixture. Stir in the oats and cranberries. Drop by rounded tablespoonfuls onto ungreased cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, or until golden brown. Allow cookies to cool on baking sheet for 2 minutes before removing to a wire rack to cool completely.

½ cup (50g) Bob's Red Mill Organic Quick Cooking Oats (gluten-free if necessary and measured like this)
½ cup (120g) plain nonfat Greek yogurt
3 tbsp (45mL) pure maple syrup
3 tbsp (45mL) freshly squeezed orange juice
1 tsp vanilla extract
1 cup (120g) Bob's Red Mill Organic Whole Wheat Pastry Flour or gluten-free* flour (measured like this)
1 ½ tsp baking powder
¼ tsp salt
1 tbsp (7g) orange zest (about 1 large)
2 tbsp (28g) unsalted butter, cold and cubed
¾ cup (75g) whole fresh cranberries, diced (see Notes!)
2 tsp nonfat milk

Steps:

  • Preheat the oven to 425°F, and line a baking sheet with a silicone baking mat or parchment paper.
  • In a medium bowl, stir together the oats, Greek yogurt, maple syrup, orange juice, and vanilla. In a separate bowl, whisk together the flour, baking powder, and salt. Whisk in the orange zest. Cut in the butter with a pastry cutter (highly recommended!) or the back of a fork until the mixture resembles fine crumbs. Make a well in the center. Add in the oat mixture. Stir until just incorporated. Gently fold in the cranberries with a spatula.
  • Transfer the dough to the prepared baking sheet. Using a spatula, shape the dough into a ¾" tall circle, and brush with the milk. Slice the dough into 8 triangular segments with a sharp knife. (No need to separate them!) Bake at 425°F for 26-29 minutes, or until the tops and sides are a deep golden color. Cool on the pan for 5 minutes before transferring to a wire rack.

¾ cup (210mL) nonfat milk, divided
2 tsp vanilla extract
2 cups (240g) white whole wheat flour or gluten-free* flour (measured like this)
1 ½ tsp baking powder
¾ tsp baking soda
½ tsp salt
2 ½ tbsp (17g) freshly grated orange zest (about 2 extra large)
½ tbsp (7g) unsalted butter or coconut oil, melted and cooled slightly
2 large egg whites, room temperature
1 ½ tsp liquid stevia

Steps:

  • Preheat the oven to 350°F, and coat 13 muffin cups with nonstick cooking spray. (If using liners, then line 13 muffins cups with liners and coat them with cooking spray.)
  • In a medium bowl, stir together the oats, Greek yogurt, ¼ cup of milk, and vanilla extract. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. 1 tablespoon orange zest

1 1/4 cup fresh or frozen cranberries

Steps:

  • Preheat your oven to 350 degrees Fahrenheit.
  • Add the flour, oats, sugar, baking powder, baking soda, sea salt and cinnamon to a large bowl and whisk until combined.
  • To a separate bowl, add the milk, canola oil, orange zest and eggs and whisk together until well combined.
  • Add the fresh or frozen cranberries to the flour mixture and toss very well to coat. Don't skip this step! Adding the fruit to the dry ingredients will help prevent them from sinking to the bottom of the loaf as it bakes. It will also make sure the batter isn't discoloured by any berries that aren't completely dry or may be releasing some of their juices before baking.
  • Add the milk mixture to the flour mixture and fold them together with a rubber spatula just until no streaks of flour remain.
  • Grease a large loaf pan with some butter or vegetable oil spray. I love to use my Misto Oil Sprayer (affiliate linfor this job since it gives you the flexibility of a conventional oil spray without all the harmful propellants they contain.
  • Pour the batter into the greased loaf pan and smooth out the top as much as you can. Place a few orange slices on top of the batter (if you wisbefore baking.
  • Bake the loaf for 60-65 minutes at 350 degrees Fahrenheit, or until it's reached a delicious golden colour and a toothpick inserted into the loaf comes out clean.
  • Let the loaf cool in the pan for about 10 minutes before removing it to a wire rack to cool completely.
  • Enjoy with your favourite cup of coffee or tea for a delicious cool weather snack!

I was not a great cornbread baker, so I bought The Cornbread Gospels by Crescent Dragonwagon to learn how to make his tummy happy, and what a great book that turned out to be. Every form and fashion of cornbread you can imagine, and (almost) all good. This recipe is from that book, and has earned rave reviews everywhere I have taken it. It's beautiful, and the essences of orange and cranberry combined with the crunchiness of stone ground cornmeal sets it apart from other quick breads, and it will leaving you wanting more. 1/3 cup stone-ground yellow cornmeal

  • Preheat the oven to 350. Coat 1 large, 2 medium, or 3 small loaf pans with oil.
  • Soft the flour, cornmeal, baking powder, baking soda, sugar, and salt into a large bowl.
  • Whisk together the eggs, oil, buttermilk, and orange zest in a second, smaller bowl.
  • In a food processor, pulse the cranberries a few times until they are roughly chopped. Combine the mix-ins--the cranberries, walnuts, and oatmeal--in a third bowl. Sprinkle 1 tablespoon of the flour mixture over them, and toss well.
  • Quickly combine the flour mixture and the egg mixture, using as few strokes as possible. Gently stir in the mix-ins. The batter should be stiff. Spoon the batter into the prepared pan(s). Check two-thirds of the way through the baking period; if the loaves are browning excessively, tent them loosely with foil.

  • NOTE: When using cirtrus zest, try your best to get organic fruit, because it is free of the waxes and fungicides that are routinely sprayed on conventionally grown citrus fruit peels.

This cranberry orange baked oatmeal is naturally sweetened with maple syrup, packed with tons of orange flavor and studded with juicy cranberries. It's fancy enough to serve for a holiday brunch but easy and healthy enough to make for your weekly meal prep. Gluten-free + vegan-friendly!

2 cups old-fashioned rolled oats
1 teaspoon baking powder
½ teaspoon sea salt
½ teaspoon ground cinnamon
½ teaspoon ground ginger
2 cups unsweetened vanilla almond milk (or any non-dairy milk )
¼ cup orange juice
Zest from 1 orange (about 1 Tablespoon )
⅓ cup maple syrup
2 Tablespoons plain Greek yogurt (or dairy-free yogurt if needed)
1 Tablespoon ground flaxseed (or 1 egg )
1 Tablespoon melted coconut oil
1 teaspoon vanilla extract
¾ cup fresh or frozen cranberries (plus more for topping if desired)
3 Tablespoons Greek yogurt (or dairy-free yogurt if needed)
½ Tablespoon maple syrup
2 teaspoons fresh orange juice (plus more to thin as needed)
1 teaspoon orange zest
¼ teaspoon vanilla extract

Steps:

  • Preheat the oven to 375°F and spray an 8×8 inch square baking dish with cooking spray.
  • In a large bowl, mix together the oats, baking powder, cinnamon, ginger and salt.
  • Add in the milk, orange juice, orange zest, maple syrup, yogurt, flaxseed, coconut oil and vanilla. Stir well to combine. Gently fold in cranberries.
  • Carefully pour oatmeal mixture into the prepared baking dish. Bake for 50-60 minutes or until the middle of the bake is set and the top is golden. Remove from the oven and let cool for about 10 minutes while you make glaze.
  • Make the glaze by combining Greek yogurt, maple syrup, orange juice, orange zest and vanilla in a small bowl. Add more orange juice if needed to thin. You want to be able to drizzle the glaze over the baked oatmeal.
  • Drizzle glaze over baked oatmeal, cut into 6 slices and serve.
  • Store in the refrigerator in an airtight container for up to 5 days. To reheat the whole baked oatmeal, cover with foil and reheat in a 350°F oven for about 20 minutes. For individual portions, set oven (or toaster oven) to 350°F and bake for 5-10 minutes or reheat in the microwave for 1 minute.
