CRANBERRY ORANGE MUFFINS



Cranberry Orange Muffins image

A little sweet and a little tart. These call for frozen cranberries and orange marmalade. For Texas sized muffins, it makes 6.

Number Of Ingredients 14

2 1/4 cups flour
1/4 cup sugar
1/4 cup brown sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1 pinch clove
1 cup buttermilk
1/2 cup orange marmalade
1/3 cup butter, melted and cooled
1 egg
1 cup chopped frozen cranberries

Steps:

  • Grease 12 standard sized muffin cups, or line with papers.
  • Mix together flour, sugars, baking powder, baking soda, salt, and spices.
  • Mix together buttermilk, marmalade and melted butter, and add egg.
  • Make a well in the center of the flour mixture. Add buttermilk mixture and mix gently just to moisten all ingredients. Fold in cranberries.
  • Spoon batter into prepared pan. Fill 3/4 full.
  • Bake at 400° for 25 minutes or till tops are golden. Cool and serve, or serve warm.

These delicious muffins came out of my Classic Holiday Cooking book and are as easy as they are good. I like to serve these on Christmas morning with my Kids Favorite Breakfast Casserole.

2 cups all-purpose flour
1 cup sugar
3/4 teaspoon baking powder
2 beaten eggs
1 cup sour cream
1/2 cup orange marmalade
1 tablespoon butter, melted
1 1/2 teaspoons vanilla

Steps:

  • Grease muffin cups or line with paper bake cups.
  • Stir together flour, sugar, and baking powder.
  • Make a well in the center.
  • Combine eggs, sour cream, marmalade, butter, and vanilla.
  • Add sour cream mixture all at once to flour mixture.
  • Stir till moistened.
  • Fill the muffin cups 2/3 full.
  • Bake in a 400°F oven 20 to 25 minutes.

1/4 cup butter
1/2 cup sugar
1/2 cup brown sugar
2 eggs, separated
1 tablespoon maraschino cherry juice
1 cup flour
1/4 teaspoon baking powder
24 maraschino cherries
1 cup pecans, finely chopped
powdered sugar

Steps:

  • Cream butter and sugar together.
  • Mix in beaten egg yolks, cherry juice, flour and baking powder.
  • Beat egg whites until stiff and fold into mixture.
  • Grease mini muffins tins and sprinkle bottom with chopped pecans.
  • Place 1 teaspoon dough in each and place cherry on top.
  • Add another teaspoon full of dough and sprinkle top with pecans.
  • Bake at 350°F for 10 minutes.
  • Remove from muffin tins and roll in powdered sugar while still warm.
  • Makes 24 mini muffins.

2 oranges
1 lemon
1 1/2 cups water
1/8 teaspoon baking soda
1 lb ripe cranberries
6 1/2 cups sugar
1/2 bottle liquid pectin

Steps:

  • Cut oranges and lemon into quarters, and remove seeds.
  • Grind the fruit, chop fine, or cut crosswise into wafer-thin slices.
  • Add water and soda.
  • Bring to boil and simmer, covered, for 20 minutes, stirring occasionally.
  • Add cranberries and simmer, covered, for 10 minutes.
  • Measure 5 cups fruit into very large saucepan.
  • Add sugar and mix well.
  • Put over high heat, bring to a full rolling boil and boil hard for 1 minute, stirring constantly.
  • Remove from heat and at once stir in pectin.
  • Skim off foam with metal spoon.
  • Then stir and skim for 7 minutes to cool slightly and to prevent floating fruit.
  • Ladle into hot sterlized jars, and seal.
  • Makes about eight 1/2- pint jars.

This is my daughter's favorite muffin recipe. I am about to whip up some for her now. I kind of like them myself and the fact that I can use the orange marmalade instead of orange zest.

2 1/2 c all purpose flour
1/4 c granulated sugar
1/4 c light brown sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground allspice
1 c butter milk
1/2 c orange marmalade
5 Tbsp melted butter
1 large egg
1 c chopped cranberries
1/2 c chopped walnuts

Steps:

  • 1. Grease 12 muffin cups or line with paper muffin liners.
  • 2. In a large mixing bowl, mix together flour, sugars, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice. Make a well in the center.
  • 3. In a separate bowl, whisk together buttermilk, marmalade, melted (cooled) butter, and egg. Pour into well in the center of the dry ingredients. Mix with a fork until dry ingredients are moistened. Stir in chopped cranberries (I chop mine in the food processor)and walnuts.
  • 4. Use an ice cream scoop and spoon batter into muffin cups, filling 2/3 full. Bake in a pre heated oven at 400 degrees F. until tops are firm and lightly browned, about 20 minutes.
  • 5. Cool muffins in pan on a rack for 5 minutes; turn out of pan to completely cool.
