WHISKEY-GLAZED SWEET POTATOES



Whiskey-Glazed Sweet Potatoes image

4 large sweet potatoes (about 3 pounds)
1 cup pecans
4 tablespoons unsalted butter, plus more for the dish
1/2 cup agave nectar (preferably amber)
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper
1/4 cup whiskey
Kosher salt
3 crisp apples (such as McIntosh or Cortland), peeled, halved, cored and cut into 1/2-inch-thick slices

Steps:

  • Preheat the oven to 375 degrees F. Place the sweet potatoes on a baking sheet (do not pierce) and bake 30 to 40 minutes. Lightly squeeze the potatoes: If they're slightly soft, they're done. Let cool.
  • Lightly toast the pecans in a medium saute pan over high heat, shaking the pan occasionally, about 3 minutes. Add the butter, then reduce the heat to medium and stir in the agave, cinnamon, nutmeg and cayenne; let simmer 4 to 5 minutes. Add the whiskey and 1/2 teaspoon salt; simmer 5 more minutes.
  • Butter the bottom and sides of an 8-inch-square baking dish. Remove the peel from the sweet potatoes and cut crosswise into 1/2-inch-thick slices. Arrange the sweet potato and apple slices in the prepared pan, alternating. Pour the whiskey-pecan mixture over the top. Cover with aluminum foil and bake 15 minutes. Remove the foil and baste the top with the whiskey sauce that's collected in the bottom of the pan; continue baking until the apples are soft and glazed, about 18 more minutes.

4 medium yams or sweet potatoes, peeled
1/2 cup brown sugar
3 tablespoons maple syrup
Freshly grated nutmeg, to taste

Steps:

  • Preheat oven to 375 degrees F. Grease a 9 by 13-inch baking dish with 1 tablespoon butter.
  • Cut each of the yams into 8 evenly shaped wedges. Lay them out in the prepared baking dish in an even layer. Melt the butter in a small saucepan over medium heat. Stir in the brown sugar and allow to dissolve. Mix in syrup and cook until smooth. Pour the glaze over the yams and sprinkle with nutmeg.
  • Cover the baking dish with foil and bake for about 45 minutes or until the yams are tender when pierced with a fork but they still hold their shape.

This will work for either sweet potatoes or carrots, I use both sweet potatoes and carrots for this, make certain to chop your carrots into about 1-1/2 inch pieces. This is a great dish, and one that goes great with a turkey or roasted chicken dinner. If you like a lot of sauce or you are using more sweet potatoes then then double the sauce ingredients, adjust the amount of sugar, if you prefer a sweeter sauce then add in more sugar, you can use brown sugar in place of white if desired

1 cup jellied cranberry sauce
2 -4 tablespoons sugar (use as much sugar as desired)
2 tablespoons orange juice
1 -2 tablespoon butter, melted

Steps:

  • Set oven to 350 degrees.
  • Place the sweet potatoes in a buttered casserole dish (use a baking dish large enough to hold the potatoes).
  • In a small saucepan, combine cranberry sauce, orange juice, sugar, melted butter; bring to a boil, reduce heat and gently simmer for about 8 minutes (you will have to break up the cranberry jelly with a fork to smooth out).
  • Pour the mixture over the potatoes in the baking dish; toss gently to combine and coat.
  • Bake for about 20 minutes until the potatoes and carrots are desired texture and they are heated through.

Steps:

  • Preheat the oven to 400 degrees F.
  • On a baking sheet, toss together the sweet potatoes, oil and some salt and pepper. Roast until the potatoes are golden brown and cooked through, 30 to 40 minutes.
  • In the meantime, in a small saucepan over medium-high heat, reduce the cranberry juice by half. Add the brown sugar, butter and cinnamon, stirring to dissolve and incorporate.
  • When the potatoes come out of the oven, add them to a large bowl. Pour the glaze over top and toss to coat completely. Serve topped with the toasted almonds.

This is an easy and surprisingly delicious way to get a dramatic-looking sweet-potato dish on the table with little fuss. The heat of the jalapeños in the chutney, mixed with aromatic vegetables and the sweetness of the dried fruit, gives the cranberries depth. A dollop of sour cream goes on the halved sweet potato, followed by a generous spoonful of chutney. Make the chutney up to two weeks ahead and keep it in the refrigerator. It also freezes well. Assembly on Thanksgiving is an easy last-minute task.

2 cups fresh or frozen cranberries
1/2 cup packed brown sugar
2 tablespoons butter, melted

3 tablespoons cold butter

This is an adaptation of a recipe from dlife.com (which obtained it from the American Cancer Research Institute) with changes that do not alter the exchanges. I am planning to try this for Christmas but want it here for safekeeping. Most likely, I will try this with the Splenda brown sugar blend which will actually reduce the carb count. (Dietary Exchanges: 1-1/2 Starch; 1 Fruit; 1 Fat)

2 large sweet potatoes, peeled and cut into 1-inch chunks
1 1/2 cups apple cider or 1 1/2 cups apple juice
1/4 cup packed light brown sugar

1/2 cup dried cranberries (quick rough chop)

Steps:

  • In a small bowl, mix the melted butter with the bourbon. Spoon the mixture over the sweet potatoes. Season with salt and black pepper and bake in the upper third of the oven for about 25 minutes, basting halfway through cooking, until the bourbon mixture is almost completely absorbed.
  • Meanwhile, in a saucepan, combine the cranberries, the remaining 1/2 cup of water and the brown sugar and boil over moderately high heat until the cranberries start to burst, about 10 minutes. Drain the cranberries, reserving the liquid separately.
  • Stir the cayenne and cinnamon into the cranberry liquid and spoon it over the sweet potatoes. Bake in the upper third of the oven, basting well after 5 minutes, for 20 minutes longer, until the potatoes are nicely glazed and most of the liquid has been absorbed. During the last 5 minutes of baking, scatter the cranberries on top. Serve hot or warm.
