This recipe came from another website. It makes a lot so is good for a potluck or large gathering. Make sure to use the whole amount of spinach or to cut back on the dressing if using less spinach. When I take this somewhere, I usually take the dressing in a jar and dress the salad right before serving. Note: This is not good leftover.

1 lb spinach
1 cup dried cranberries (I use one bag of Craisins)
1 tablespoon butter
3/4 cup almonds, blanched and slivered
2 tablespoons toasted sesame seeds
1 tablespoon poppy seed
2 teaspoons minced onions
1/4 teaspoon paprika
1/2 cup sugar
1/4 cup white wine vinegar
1/4 cup cider vinegar
1/2 cup vegetable oil

Steps:

  • Melt butter in saute' pan over medium heat, add almonds and stir until lightly toasted; set almonds aside to cool.
  • Toast sesame seeds in same pan and then set aside to cool.
  • Mix salad ingredients.
  • Mix dressing ingredients and toss with salad ingredients just before serving.

One 6-ounce bag baby spinach
1 cup dried cranberries

Steps:

  • Put the balsamic vinegar in a small bowl and slowly whisk in the olive oil until emulsified. Season with salt and pepper.
  • In a large bowl, toss the spinach, cranberries and almonds with some of the vinaigrette. Toss to mix and serve.

1 tablespoon butter
¾ cup almonds, blanched and slivered
1 pound spinach, rinsed and torn into bite-size pieces
1 cup dried cranberries
2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
½ cup white sugar
2 teaspoons minced onion
¼ teaspoon paprika
¼ cup white wine vinegar
¼ cup cider vinegar
½ cup vegetable oil

Steps:

  • In a medium saucepan, melt butter over medium heat. Cook and stir almonds in butter until lightly toasted. Remove from heat, and let cool.
  • In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar, and vegetable oil. Toss with spinach just before serving.
  • In a large bowl, combine the spinach with the toasted almonds and cranberries.

4 cups packed torn fresh spinach
1/2 cup dried cranberries
1/2 medium red onion, sliced and separated into rings
1/2 cup pecan pieces, toasted
1/4 cup crumbled blue cheese
1/4 cup olive oil
2 to 3 tablespoons red wine vinegar
1 garlic clove, minced
Salt and pepper to taste

Steps:

  • In a large bowl, combine the spinach, cranberries, onion, pecans and blue cheese. In a small bowl, whisk the oil, vinegar, garlic, salt and pepper until blended. Drizzle over salad and toss to coat. Serve immediately.

1 bag (9 oz.) spinach leaves
½ cup Hidden Valley® The Original Ranch® Light Dressing or Hidden Valley® Original Ranch® Dressing
½ cup dried cranberries
¼ cup feta cheese crumbled
Freshly ground black pepper to taste

Steps:

  • 1. In a dry skillet over medium heat, toast almonds, stirring occasionally until fragrant and golden brown, about 1 minute. Remove from pan and set aside.
  • 2. In a large bowl, combine spinach and Ranch dressing. Gently toss to coat leaves.
  • 3. Add dried cranberries, feta cheese and toasted almonds. Gently toss to combine.
  • 4. Season with freshly ground black pepper to taste.

1/2 pound fresh cranberries
1 tablespoon grated orange zest
1 teaspoon grated lemon zest
1/4 cup fresh orange juice
3 tablespoons fresh lemon juice
1/2 cup granulated sugar
1 teaspoon pure vanilla extract
2 cups water
3 tablespoons cornstarch

Steps:

  • Put the cranberries, orange and lemon zest, orange and lemon juice, sugar, vanilla, and 1 1/2 cups of the water in a medium-size nonreactive saucepan over medium-high heat. Bring to a boil and cook for 8 minutes.
  • Dissolve the cornstarch in the remaining 1/2 cup of water and add to the pan. Reduce the heat to medium, then stir constantly until the mixture thickens, about 2 minutes.
  • Remove from the heat and cool completely.

6 cups loosely packed stemmed Baby Spinach
1/2 cup fresh goat cheese
1/2 cup toasted slivered almonds
1 cup sliced white mushroom (cleaned)
1/3 lb thick-sliced bacon, cut into strips about 1 inch long and 1/4 inch wide
1 tablespoon minced shallot
2 teaspoons minced fresh thyme leaves
1/4 cup balsamic vinegar
2 tablespoons sugar
sea salt
fresh ground black pepper
1/2 cup dried cranberries

Steps:

  • Put the spinach and mushrooms in a large bowl.
  • Crumble the cheese over the spinach.
  • Cook the bacon in a medium skillet over medium heat until crispy, 8 to 10 minutes, stirring occasionally.
  • Drain the bacon in a sieve set over a heatproof measuring cup, reserving the rendered fat.
  • You will need 1/4 cup for the dressing. Pour the fat back into the pan and add the shallot and cook until light brown, about 30 seconds, stirring occasionally.
  • Add the thyme and let it crackle in the fat for about 10 seconds.
  • Add the vinegar, and season with salt and pepper and sugar to taste. Cook for about 30 seconds to lower the acidity of the vinegar. You should see tiny drops of vinegar dispersed throughout the fat.
  • Add the dried cranberries and stir.
  • Add Bacon back into dressing.
  • Pour the dressing over the spinach and cheese. Toss to coat the leaves evenly and melt the cheese a little.
  • Serve immediately.

8 cups spinach leaves, loosely packed
1/2 cup toasted pecans
1/2 cup dried cranberries
1/2 small red onion, thinly sliced
1/4 cup cider vinegar
1/4 cup cranberry juice
2 tablespoons maple syrup
1 teaspoon Dijon mustard
salt and pepper
3/4 cup vegetable oil

Steps:

  • Wash and dry the spinach leaves. Place on a large serving platter. Sprinkle the pecans, cranberries, and onion rings on top of spinach.
  • Place the vinegar, cranberry juice, maple syrup, Dijon mustard, salt and pepper in a jar with a tight-fitting lid. Shake or whisk until well combined.
  • Add the vegetable oil and shake again. Just before serving, shake the vinaigrette once more and pour it over the salad.

I haven't added a recipe in a while, and it's high time I make up for this lapse. This one is great... sweet, tart, nutty and just plain good.

COMPOTE
1 1/2 c fresh cranberries
1/2 c white sugar
1 peel of a navel orange, cut into thin 1" long strips
1 c water
1 pkg small envelope-sugar free cranberry gelatine
1 pkg gelatin, unflavored
1 juice of one navel orange
2 tsp cinnamon, ground
2 tsp allspice, ground
1 tsp mace
1 tsp cardamon, ground
2 Tbsp lemon juice, fresh
1 can(s) crushed pineapple, in natural juice, drained
1 c fresh green seedless grapes
1/3 c pecans, in pieces - toasted
BALSAMIC REDUCTION
1/4 c balsamic vinegar
1 Tbsp olive oil
3 Tbsp golden rum
1 pkg spinach, fresh

Steps:

  • 1. In a medium saucepan, over medium heat, add cranberries, orange peel, water and sugar. Stir until sugar is dissolved.
  • 2. Continue to cook until berries begin to pop.
  • 3. Add spices, orange juice and both gelatin packet, continuing to stir over medium heat for 2-3 minutes.
  • 4. Remove from heat and fold in lemon juice, the drained pineapple and the grapes. Pour mixture into a 8 x 8 glass dish and refrigerate for 2 hours.
  • 5. When mixture just begins to harden, sprinkle pecans over top of dish and gently press them down. Continue to refrigerate, covered, for at least 4 hours.
  • 6. In a small saucepan over medium heat, bring balsamic vinegar and oil to a boil, reducing the mixture by half. Allow to cool.
  • 7. Place fresh spinach in bowls.
  • 8. To the balsamic reduction, whisk in rum and drizzle over spinach.
  • 9. Top spinach with an ice cream scoop (about ½ cup) of cranberry compote and serve, garnished with a sprig of parsley.
