Delicious cheesecake cookie bars with a hint of almond flavoring, swirled with simple homemade cranberry sauce and topped with sliced almonds. Easy to make and perfect for any event!

cooking spray
1 ¾ cups graham cracker crumbs
½ cup butter, melted
2 tablespoons white sugar
¾ cup fresh cranberries
¼ cup water
¾ cup white sugar, divided
2 (8 ounce) packages cream cheese, at room temperature
2 eggs, at room temperature
5 tablespoons milk, at room temperature
1 tablespoon lemon juice
1 ½ teaspoons almond extract
⅓ cup sliced almonds, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with aluminum foil and lightly grease with cooking spray.
  • Combine graham cracker crumbs, melted butter, and 2 tablespoons sugar in a bowl. Mix until butter evenly coats the crumbs. Transfer to the baking dish and flatten into an even layer.
  • Bake in the preheated oven until lightly browned, 8 to 10 minutes. Leave oven on; remove crust and let cool.
  • Place cranberries, water, and 1/4 cup sugar in a saucepan over medium-high heat. Bring to a boil. Cook until cranberries have burst and mixture is thick, about 7 minutes. Let cool for 15 minutes. Pour sauce into a blender or food processor and puree until smooth, adding more water to thin, if necessary.
  • Combine remaining sugar and cream cheese in a bowl. Beat using an electric mixer until smooth, scraping down sides of the bowl every 90 seconds, about 4 minutes total. Add eggs 1 at a time, beating well after each addition. Add milk, lemon juice, and almond extract; mix batter on medium-low until combined.
  • Spread batter evenly over the cooled crust. Drop spoonfuls of cranberry sauce on top and use a knife to swirl it through the batter. Toss almonds evenly over the cheesecake.
  • Bake in the preheated oven until set, 27 to 33 minutes. Let cool, at least 30 minutes. Refrigerate until set, 8 hours to overnight. Cut into bars the next day.

2 cups plus 2 tablespoons all-purpose flour, divided
1 cup quick-cooking oats
3/4 cup packed brown sugar
1/2 cup butter, melted
1 package (8 ounces) reduced-fat cream cheese
1 can (14 ounces) fat-free sweetened condensed milk
4 egg whites
1 teaspoon vanilla extract
1 can (14 ounces) whole-berry cranberry sauce
2 tablespoons cornstarch

Steps:

  • In a large bowl, combine 2 cups flour, oats, brown sugar and butter; mix until crumbly. Press 2-1/2 cups of the crumb mixture into a greased 13-in. x 9-in. baking dish. Bake at 350° for 10 minutes., In a large bowl, beat cream cheese until smooth. Beat in the milk, egg whites, vanilla and remaining flour. Spoon over prepared crust. In a small bowl, combine the cranberry sauce and cornstarch. Spoon over cream cheese mixture. , Sprinkle with the remaining crumb mixture. Bake at 350° for 30-35 minutes or until the center is almost set. Cool on a wire rack before cutting.

1-1/2 cups all-purpose flour
1 cup quick-cooking oats
3 tablespoons brown sugar
3/4 cup cold butter
1 cup vanilla or white chips
1 package (8 ounces) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1/4 cup lemon juice
1 teaspoon vanilla extract
2 tablespoons cornstarch
1 can (14 ounces) whole-berry cranberry sauce

Steps:

  • In a large bowl, combine the flour, oats and brown sugar. Cut in butter until crumbly. Reserve 1 cup for the topping. Stir in chips to the remaining mixture. With floured fingers, press into a greased 13-in. x 9-in. baking pan. Bake at 350° for 15-18 minutes or until golden brown., In a large bowl, beat cream cheese until light. Add the milk, lemon juice and vanilla; beat until smooth. Pour over the crust. Combine the cornstarch and cranberry sauce until blended. Spoon over the cream cheese mixture. Sprinkle with the reserved crust mixture., Bake at 350° for 30 minutes or until center is set. Cool for 1 hour on a wire rack. Cover and refrigerate.

I've been making these bars since I was a kid. I used to bake and sell cookies and cakes for Thanksgiving and Christmas every year from about 9 years old until I was well into my teens. Everyone loved these.

1 (18 1/4 ounce) box yellow cake mix
1/2 cup unsalted butter, softened
1 egg
1/2 cup pecans, chopped
8 ounces cream cheese
1/4 cup powdered sugar
1/2 teaspoon vanilla
1 egg
1 (10 ounce) can whole berry cranberry sauce
1/4 teaspoon nutmeg

Steps:

  • Heat oven to 350°F.
  • Combine cake mix, butter, 1 egg and pecans. Mix until smooth. It will look like cookie dough.
  • Line a 12x8 glass dish with dough.
  • Bake for 7 minutes or until crust is set, but not browned.
  • Cream the cream cheese with the powdered sugar, vanilla and 1 egg.
  • In separate mixing bowl combine cranberry sauce with nutmeg.
  • Pour cream cheese mixture over top of crust, making sure to spread evenly.
  • Spoon cranberry sauce into three horizontal lines. Run a butter knife through cranberry sauce into cream cheese mixture to create swirls.
  • Bake for 35 minutes or until cream cheese mixture is set.
  • Cool completely and cut into bars.
