TUNA NOODLE CASSEROLE
This creamy, cheesy Tuna Noodle Casserole is a healthy weeknight dinner made without the use of canned soups! It's quick, easy and full of savory goodness.

- Preheat oven to 375˚F.
- Grease a 9x13 baking dish with cooking spray and set aside.
- Cook the noodles according to the directions on the package.
- Drain noodles and return drained noodles back to the pot; set aside.
- Melt the butter in a large saucepan or large deep skillet set over medium heat.
- To the melted butter, add celery, peppers and onions; cook for 8 to 10 minutes or until vegetables are tender.
- Stir in the garlic and cook for 20 seconds.
- Stir in flour, mustard, salt and pepper.
- Add milk; cook and stir until bubbly and thickened. Sauce will be thick.
- Pour the sauce over the noodles.
- Add flaked tuna and cheese to the noodles.
- Gently fold and mix until everything is thoroughly combined.
- Transfer tuna mixture to the baking dish; set aside.
- In a mixing bowl, combine crushed ritz crackers and butter; sprinkle over the casserole.
- Bake uncovered for 25 to 30 minutes, or until heated through.
- Remove from oven and let stand for 5 to 8 minutes before serving.

- Preheat the oven to 400 degrees F. Bring a large pot of salted water to a boil. Add the noodles and cook according to the package directions. Reserve 1/2 cup of the cooking water, then drain the noodles and return to the pot.
- Meanwhile, melt 1 tablespoon of the butter in a large skillet over medium-high heat. Add the scallion whites and sliced celery. Cook, stirring occasionally, until softened, about 2 minutes. Add the evaporated milk, 1/2 teaspoon salt and a few grinds of pepper. Stir in the peas and carrots and the mustard. Bring to a boil, then reduce the heat to medium low. Cook, stirring occasionally, until slightly thickened, 2 to 3 minutes.
- Pour the sauce over the noodles; stir in the sour cream, 1/2 cup of the cheese, the tuna and reserved cooking water. Transfer to a 1 1/2-quart baking dish.
- Melt the remaining 1 tablespoon butter. Toss with the panko, scallion greens, celery leaves and remaining 1/4 cup cheese; season with salt and pepper. Sprinkle over the casserole. Bake until golden, 15 to 20 minutes.

I have been making this recipe for over 25 years and think it came from my mother originally but can't be sure. It has a creamy texture from the cheese added and the mayonnaise which makes it sumptuous. Can be doubled easily.

Steps:
- Preheat oven to 375 degrees.
- Rub inside of a 2 1/2 quart casserole dish with 1 tablespoons butter.
- Bring large pot of salted water to boil over high heat.
- Add noodles and cook until al dente, 5-7 minutes. Drain and transfer noodles to a large bowl.
- Melt 4 tablespoons butter in a medium saucepan over medium-high heat.
- Add half the scallions and cook until softened, 1-2 minutes.
- Add flour and mustard and cook, stirring frequently, for 1 minutes.
- Gradually pour in milk, whisking constantly, and bring to a boil.
- Cook sauce, stirring frequently, until smooth and thickened, 16-18 minutes.
- Season with salt and pepper to taste.
- Transfer sauce to bowl with noodles.
- Add tuna and stir gently to combine.
- Transfer tuna-noodle mixture to prepared dish.
- Melt remaining butter and toss with remaining scallions, bread crumbs, and salt and pepper to taste in a bowl.
- Scatter seasoned bread crumbs over tuna-noodle mixture and bake until golden brown and bubbling, 20-25 minutes.
- Let casserole cool slightly before serving.
