This creamy, cheesy Tuna Noodle Casserole is a healthy weeknight dinner made without the use of canned soups! It's quick, easy and full of savory goodness.

4 cups dry wide egg noodles
4 tablespoons butter
2 celery stalks, (chopped)
1 small red bell pepper, (diced)
1 small yellow onion, (diced)
1 clove garlic, (minced)
2/3 cup all-purpose flour
1 teaspoon ground mustard, (or 1 tablespoon dijon mustard)
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 1/4 cups milk
12 ounces can white tuna in water, (drained and flaked into chunks)
4 ounces shredded cheddar cheese
1 cup finely crushed ritz crackers, (or panko crumbs)
4 tablespoons butter, (melted)

Steps:

  • Preheat oven to 375˚F.
  • Grease a 9x13 baking dish with cooking spray and set aside.
  • Cook the noodles according to the directions on the package.
  • Drain noodles and return drained noodles back to the pot; set aside.
  • Melt the butter in a large saucepan or large deep skillet set over medium heat.
  • To the melted butter, add celery, peppers and onions; cook for 8 to 10 minutes or until vegetables are tender.
  • Stir in the garlic and cook for 20 seconds.
  • Stir in flour, mustard, salt and pepper.
  • Add milk; cook and stir until bubbly and thickened. Sauce will be thick.
  • Pour the sauce over the noodles.
  • Add flaked tuna and cheese to the noodles.
  • Gently fold and mix until everything is thoroughly combined.
  • Transfer tuna mixture to the baking dish; set aside.
  • In a mixing bowl, combine crushed ritz crackers and butter; sprinkle over the casserole.
  • Bake uncovered for 25 to 30 minutes, or until heated through.
  • Remove from oven and let stand for 5 to 8 minutes before serving.

Kosher salt
6 ounces wide egg noodles
2 tablespoons unsalted butter
6 scallions (white parts sliced, green parts finely chopped)
3 stalks celery, thinly sliced, plus 2 tablespoons chopped leaves
One 12-ounce can fat-free evaporated milk
Freshly ground pepper
1 cup frozen peas and carrots
1 tablespoon Dijon mustard
1/2 cup light sour cream
3/4 cup shredded low-fat Monterey jack cheese (about 3 ounces)
One 5-ounce can water-packed tuna, drained and flaked
1/4 cup panko breadcrumbs

Steps:

  • Preheat the oven to 400 degrees F. Bring a large pot of salted water to a boil. Add the noodles and cook according to the package directions. Reserve 1/2 cup of the cooking water, then drain the noodles and return to the pot.
  • Meanwhile, melt 1 tablespoon of the butter in a large skillet over medium-high heat. Add the scallion whites and sliced celery. Cook, stirring occasionally, until softened, about 2 minutes. Add the evaporated milk, 1/2 teaspoon salt and a few grinds of pepper. Stir in the peas and carrots and the mustard. Bring to a boil, then reduce the heat to medium low. Cook, stirring occasionally, until slightly thickened, 2 to 3 minutes.
  • Pour the sauce over the noodles; stir in the sour cream, 1/2 cup of the cheese, the tuna and reserved cooking water. Transfer to a 1 1/2-quart baking dish.
  • Melt the remaining 1 tablespoon butter. Toss with the panko, scallion greens, celery leaves and remaining 1/4 cup cheese; season with salt and pepper. Sprinkle over the casserole. Bake until golden, 15 to 20 minutes.

I have been making this recipe for over 25 years and think it came from my mother originally but can't be sure. It has a creamy texture from the cheese added and the mayonnaise which makes it sumptuous. Can be doubled easily.

1 (10 1/4 ounce) can cream of celery soup
1 (6 ounce) can tuna, drained
1 (15 ounce) can Veg-All or 1 (15 ounce) can mixed vegetables, drained
1/2 cup milk
1 cup cubed cheddar cheese
1/2 stalk celery, chopped finely
1 small onion, finely chopped (if you prefer, use onion powder)
1/2 cup mayonnaise
1 (8 ounce) package egg noodles, cooked (macaroni may be used)

Steps:

  • Preheat oven to 350°F.
  • prepare and mix all ingredients in large bowl and put into covered casserole dish to bake for 30-45 min or until bubbly.
  • May be topped with buttered bread crumbs if crusty top is desired.

10 tablespoons butter
salt
4 1/2 cups flat egg noodles
5 scallions, chopped
3 tablespoons flour
1 1/2 teaspoons dry mustard
3 1/3 cups milk
fresh ground black pepper
1 (12 ounce) can tuna in vegetable oil, drained and broken into small chunks (packed in oil)
1 1/2 cups homemade fresh breadcrumbs

Steps:

  • Preheat oven to 375 degrees.
  • Rub inside of a 2 1/2 quart casserole dish with 1 tablespoons butter.
  • Bring large pot of salted water to boil over high heat.
  • Add noodles and cook until al dente, 5-7 minutes. Drain and transfer noodles to a large bowl.
  • Melt 4 tablespoons butter in a medium saucepan over medium-high heat.
  • Add half the scallions and cook until softened, 1-2 minutes.
  • Add flour and mustard and cook, stirring frequently, for 1 minutes.
  • Gradually pour in milk, whisking constantly, and bring to a boil.
  • Cook sauce, stirring frequently, until smooth and thickened, 16-18 minutes.
  • Season with salt and pepper to taste.
  • Transfer sauce to bowl with noodles.
  • Add tuna and stir gently to combine.
  • Transfer tuna-noodle mixture to prepared dish.
  • Melt remaining butter and toss with remaining scallions, bread crumbs, and salt and pepper to taste in a bowl.
  • Scatter seasoned bread crumbs over tuna-noodle mixture and bake until golden brown and bubbling, 20-25 minutes.
  • Let casserole cool slightly before serving.

This is a simple tuna noodle casserole. I found this recipe on Campbell's website, but adjusted it to fit my family's taste.

1 (10 3/4 ounce) can condensed cream of mushroom soup
1/2 cup milk
1 cup peas (I just use a whole can)
2 (6 ounce) cans canned tuna, drained
2 cups cooked pasta, I used egg noodles, but any will do

Steps:

  • MIX soup, milk, peas, tuna and cooked noodles
  • Transfer to a casserole dish.
  • Bake at 400°F for 15 min (may vary a few minutes either way depending on your oven).
  • Let cool 5-10 minutes before serving.
