1 cup fresh or frozen cranberries
1 pastry shell (9 inches)
TOPPING:
1/2 cup packed brown sugar
1/3 cup all-purpose flour
1/2 teaspoon ground cinnamon
3 tablespoons cold butter
1/3 cup sliced almonds, toasted

Steps:

  • In a bowl, combine the sugar, flour, butter, nutmeg and salt. Add apples and cranberries; stir gently. Pour into pastry shell. , In a small bowl, combine the brown sugar, flour and cinnamon; cut in butter until crumbly. Stir in almonds; sprinkle over filling. Bake at 350° for 1 hour or until apples are tender.

1/2 cup slivered almonds, toasted
3 tablespoons sugar
1-2/3 cups all-purpose flour
1/4 teaspoon salt
1/4 cup butter, melted
1/4 cup heavy whipping cream
2/3 cup white baking chips
FILLING:
2 cups fresh or frozen cranberries
1 cup sugar
1/2 cup dried cranberries
1/3 cup orange juice
2 tablespoons butter
TOPPING:
2/3 cup white baking chips
2 teaspoons shortening
1/3 cup slivered almonds, toasted

Steps:

  • Preheat oven to 375°. Place almonds and sugar in a food processor; pulse until almonds are ground. Add flour and salt; pulse until blended. Transfer mixture to a small bowl; stir in melted butter and cream. Press onto bottom and up sides of an ungreased 9-in. fluted tart pan with removable bottom., Bake 15-18 minutes or until lightly browned. Remove from oven; sprinkle baking chips evenly over bottom. Cool on a wire rack., In a saucepan, combine filling ingredients; bring to a boil. Reduce heat, simmer, uncovered, 10-15 minutes or until slightly thickened, stirring occasionally. Pour over baking chips., Bake 20-25 minutes or until filling is bubbly and crust is golden brown. Cool on a wire rack. Refrigerate 2 hours or until cold. , In a microwave, melt baking chips and shortening; stir until smooth. Drizzle over tart. Sprinkle with almonds.

2 cups cranberries
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9 inch pie pan.

1/4 teaspoon salt
5 tablespoons cold butter or 5 tablespoons margarine, cut up
3 tablespoons vegetable shortening
4 1/2 tablespoons ice water
7 ounces almond paste
4 tablespoons butter, softened
1/2 cup sugar
3 large eggs
1/4 cup all-purpose flour
1 pinch salt
12 ounces cranberries
2/3 cup sugar
1/3 cup water
1/2 teaspoon grated fresh orange peel, plus additional (to garnish)

Steps:

  • To prepare baked pie shell: In food processor with knife blade attached, pulse flour and salt until well blended. Add cold butter and shortening, and pulse just until mixture resembles coarse crumbs. Sprinkle in ice water, 1 tablespoon at a time, pulsing after each addition, just until large moist crumbs begin to form.
  • With hands, shape dough into disk; wrap in plastic wrap and refrigerate 30 minutes or overnight. (If chilled overnight, let dough stand 30 minutes at room temperature before rolling to prevent cracking.).
  • Preheat oven to 425 degrees. On lightly floured surface, with floured rolling pin, roll dough into 12-inch round. Ease dough into 9-inch glass or ceramic pie plate. Gently press dough against bottom and up sides of plate without stretching. Trim dough edge, leaving 1-inch overhang. Fold overhang under; pinch to form stand-up edge, then make decorative edge. Freeze pie shell for 15 minutes.
  • Line pie shell with foil or parchment paper, and fill with pie weights, dried beans, or uncooked rice. Bake 10 to 12 minutes or until beginning to set. Remove foil with weights, and bake 13 to 15 minutes longer or until golden. If shell puffs during baking, gently press it down with back of spoon. Cool on wire rack at least 10 minutes. Reset oven control to 350 degrees.
  • To prepare almond filling: In food processor with knife blade attached, blend almond paste, softened butter, and sugar until smooth. Add eggs, flour, and salt; blend until well mixed, occasionally scraping down side of processor bowl with rubber spatula.
  • Fill pie shell with almond filling. Bake 30 to 33 minutes or until filling is slightly puffed and golden. Cool completely on wire rack, about 3 hours.
  • While pie is baking and cooling, prepare Cranberry Topping: In 2-quart saucepan, combine 1 1/2 cups cranberries with sugar, water, and 1/2 teaspoon orange peel; heat to boiling on high. Reduce heat to medium-low; simmer 5 minutes or until mixture thickens slightly and most cranberries have popped, stirring occasionally. Stir in remaining cranberries. Set cranberry topping aside to cool to room temperature.
  • To serve, spoon cranberry topping over almond filling just before serving; garnish with orange peel. Refrigerate any leftovers up to 4 days.

4 1/2 cups cranberries
3 tablespoons sugar
1 1/4 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 3/4 cups, plus 2 tablespoons sugar
2 eggs, beaten
1 stick unsalted butter, melted
Few drops orange oil
1/3 cup flaked almonds
Turbinado sugar, to sprinkle over

Steps:

  • Preheat the oven to 325 degrees F.
  • Melt 1/2 stick butter in a wide saucepan, then add the cranberries and sugar. Cook over a fairly high heat until the fruit begins to pop. This will take hardly anytime if the cranberries are fresh, and about 10 minutes if they're frozen. Remove the pan from the heat.
  • Combine the flour, baking powder, soda and sugar in a large bowl and add the eggs, melted butter and orange oil. Mix until smooth. Pour half of the batter into a 2-pint round pie dish. Cover with the cranberries, then top with the remaining batter; don't worry if the cranberries are not covered completely.
  • Sprinkle flaked almonds and turbinado sugar over and bake for 45 minutes to 1 hour, until the top is golden brown and set.

1 tablespoon butter
4 Anjou or Bosc pears, peeled and small diced
1 1/2 cups granulated sugar
3 whole cloves
1 teaspoon fresh lemon juice
1 tablespoon golden syrup, such as Lyle's Golden Syrup
1 tablespoon fresh orange zest
24 ounces fresh cranberries (pre-bagged)
3/4 cup all-purpose flour
3/4 cup granulated sugar
1 teaspoon ground cinnamon
1 teaspoons ground (dried) ginger
1 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, cubed
1 cup slivered almonds, toasted
1 lemon, for zesting on top
Vanilla ice cream, for serving
Orange Garnish, recipe follows, optional
8 oranges
2 cups granulated sugar
Pinch turmeric

Steps:

  • Make the filling: Heat the butter in medium saute pan. Add the pears and saute until slightly tender and juicy, 3 to 5 minutes. Add 1/2 cup sugar and the cloves. Toss and remove from the heat to cool.
  • Combine the remaining 1 cup sugar, the lemon juice, syrup and orange zest and mix. Add the cranberries and toss to coat the fruit.
  • Heat a medium saute pan and add the cranberry mixture. Saute quickly, 3 to 5 minutes.
  • Combine the pear and cranberry mixtures in a bowl and set aside to cool.
  • Make the topping: In a medium bowl, combine the flour, sugar, cinnamon, ginger and salt. Mix to blend. Work the butter in with your fingers until the mixture is coarse and somewhat moist. The butter should not be fully integrated but there should not be any large chunks either. At the last minute, gently blend in the almonds.
  • Assemble the crumble: Arrange the fruit in the baking dish and spread the topping evenly over the fruit. Place the dish in the center of the oven and bake for 30 to 35 minutes. The fruit should be tender and yielding when pierced with the tip of a knife. Allow to cool slightly before serving. Grate a little zest from the lemon on top of the crumble. Serve with scoops of vanilla ice cream topped with Orange Garnish if desired.
  • Bring 2 small pots of water to a boil.
  • Using a small knife, peel one single piece of skin from around the "equator" (center) of each orange. Trim any thick pith off the inside of each peel, taking care they stay in one piece.
  • Drop the zests into the first pot and boil for 1 minute. Strain and drop them into the second pot. Cook for 1 minute, strain and set them aside.
  • In a third small pot, bring the sugar, 2 cups water and turmeric to a boil. Submerge the orange zests and cook over high heat until the liquid boils. Reduce to a simmer and cook until the zests are tender, 15 to 20 minutes. Remove the zests to a baking sheet and allow them to cool flat.

I got this recipe from Taste of Home magazine. It is so delicious and can be made very light by using fat free whipped topping and pie shells. I often use the graham ready crust and it is good too. I haven't tried the chocolate crust yet, but I imagine that would be a treat. The toasted almonds are a must in this recipe. They add just the right flavor to make this recipe special. I hope you enjoy it as much as we do.

500g sweet shortcrust pastry
150g marzipan , grated
400g jar mincemeat
100g cranberries
50g icing sugar , for dusting

Steps:

  • Cut the pastry in two. Wrap one half and set aside. On a surface lightly dusted with flour, roll out the other half to a square large enough to line a 22cm loose-bottomed fluted tart tin (we used a square tin, but a round one would also work). Press the pastry into the tin, leaving any excess hanging over the edge.
  • Scatter the marzipan over the pie base. Add the mincemeat and top with the cranberries.
  • Roll out the remaining pastry to a square (or circle) the thickness of a £1 coin. Use a pizza cutter to slice the pastry into 1.5cm-wide strips. Weave the pastry strips over the pie to create a lattice, pressing down at the edges to seal with the pastry base. Trim off any excess pastry. Chill for 20 mins and heat oven to 180C/160C fan/gas 4.
  • Bake for 45 mins until golden. Cool for 15 mins in the tin, then transfer to a plate or board and dust with the icing sugar.

200g very cold butter , cubed
400g plain flour , plus extra for dusting
100g ground almonds
100g golden caster sugar
zest 2 oranges
2 tbsp milk (or use orange juice)
100g frozen cranberries
400g jar good-quality mincemeat
handful flaked almonds
2 tsp icing sugar , plus dusting
200ml tub crème fraîche

Steps:

  • Whizz the butter, flour and ground almonds in a food processor until the butter has disappeared. Pulse in the sugar and half the orange zest. Add the milk and keep whizzing until a rough dough comes together. Tip onto the work surface, press together and shape into a smooth disc, kneading once or twice if you need to. Chill for 15 mins. Can be made up to 3 days ahead and chilled, or frozen for up to 1 month.
  • Scatter a little flour onto the work surface. Roll out the dough to about the thickness of a £1 coin. Using an 8cm cutter, stamp out 24 circles and use to line the holes of 2 x 12-hole bun tins.
  • Heat oven to 200C/180C fan/gas 6. Mix cranberries and mincemeat, then spoon into cases. Scatter each pie with flaked almonds. Can be frozen for up to 1 month. Bake the pies for 18-20 mins until the pastry and almonds are golden. When ready to serve, dust with the tiniest bit of icing sugar. Stir 2 tsp icing sugar and remaining zest into the crème fraîche, then dollop onto each pie to serve.
