8 oz. imitation crab, cut into 1/2" pieces
1/2 cup mayonnaise
1 red bell pepper, diced
1 small onion, minced
1 1/4 cup shredded Monterey Jack cheese
2 tsps dried oregano
3 pita breads, separated into 6 rounds
Freshly grated Parmesan cheese

Steps:

  • In a bowl, mix imitation crab, mayonnaise, pepper, onion, Monterey Jack cheese and oregano until well blended. Spread one-sixth of mixture on inner, rough side of each pita. Sprinkle with parmesan cheese. Broil for 4 to 5 minutes or until cheese melts and mixture is bubbly.

1 cup shredded Monterey Jack cheese
½ cup shredded Parmesan cheese
1 green onion, chopped
2 teaspoons minced fresh garlic
1 teaspoon seasoned salt
1 teaspoon paprika
⅛ teaspoon red pepper flakes
2 (6 ounce) cans white crabmeat, drained
1 (17.5 ounce) package frozen puff pastry, thawed
1 egg white, beaten

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease 2 baking sheets or use parchment paper.
  • Stir Monterey Jack cheese, Parmesan cheese, green onion, garlic, seasoned salt, paprika, and red pepper flakes together in a bowl. Fold in drained crabmeat.
  • Unfold pastry sheet on a lightly floured surface. Brush with some of the beaten egg white. Top with crab mixture. Roll up like a jelly roll starting at the short side. Cut into 1/2-inch slices. Place slices cut-side down on the prepared baking sheets. Brush with remaining egg white.
  • Bake in the preheated oven until golden, 15 to 20 minutes. Serve warm or at room temperature.

These are a very tasty appetizer or anytime snack...I first made them for a New Years Eve party, and got rave reviews...I adapted this recipe from a ham type pinwheel my Aunt always made...my family has come to love this one even better... Enjoy!

1 - 8 oz cream cheese, softened
6 - 8 oz imitation crab - or crab meat - chopped or shredded
1/2 c sweet red pepper, diced small
3 green onion, chopped - plus tops
1/2 c shredded, cheddar cheese
1/4 c fresh parsley, chopped or dried
1 tsp hot pepper sauce
chili powder to taste
garnish with paprika
5 - 6 6 inch flour tortilla's

Steps:

  • 1. In a medium sized bowl; beat cream cheese until smooth. Fold in the parsley, red pepper, sauce, onion, cheese and crab. Sprinkle with desired chili powder.
  • 2. Lay out your tortilla's Spread about 1/4 cup onto each tortilla.
  • 3. Roll tightly. I cut the ends with kitchen shears.
  • 4. Wrap tightly in plastic wrap and refrigerate for about 2 hours.
  • 5. Preheat oven to 350 degree F. Slice each roll into 5 - 6 slices and place on a sprayed baking sheet.
  • 6. Bake for 10 - 15 minutes or until bubbly. Sprinkle with paprika and enjoy!

1 package (8 ounces) reduced-fat cream cheese
1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
3/4 cup diced sweet red pepper
1/2 cup shredded reduced-fat cheddar cheese
2 green onions, thinly sliced
3 tablespoons minced fresh parsley
1/4 to 1/2 teaspoon cayenne pepper
6 flour tortillas (6 inches)

Steps:

  • Beat cream cheese until smooth; stir in crab, red pepper, cheese, green onions, parsley and cayenne. Spread 1/3 cup filling over each tortilla; roll up tightly. Wrap in plastic, twisting ends to seal; refrigerate at least 2 hours. , To serve, preheat oven to 350°. Unwrap rolls; trim ends and cut each into 6 slices. Place on baking sheets coated with cooking spray. Bake until bubbly, about 10 minutes. Serve warm.

I am posting 2 versions of this recipe. This is the original recipe I got off a recipe card in the grocery store a number of years back. I think it is very good as written, but I have made enough changes to it that I decided to post the recipe also as Imitation Crab Wheels Recipe 2. It is a very fast and easy recipe, and oh so yummy. Because you are broiling it the veggis are very crispy and flavorful.

Steps:

  • In a bowl, mix imitation crab, mayonase, pepper, onion, Montery Jack cheese and oregano until well blended.
  • Spread 1/6 of mixture on inner, rough side of each pita.
  • Sprinkle with parmesan cheese.

QUICK AND EASY SEAFOOD PINWHEELS

My daughter and I loved seafood and wanted to take an easy serve snack to a friends. I came up with this.

Number Of Ingredients 6

4 oz cream cheese, room temperature
1/4 c sour cream
1/4 c cocktail sauce
1 can(s) tiny shrimp or pkg. imitation crab sticks
6 tortillas, flour 8 in.
green onion, chopped finely opt.

Steps:

  • 1. Combine cream cheese, sour cream, and cocktail sauce. Stir until smooth. Add green onions if you like them. If you are using the shrimp it can be mixed in at this time. Spread the mixture on tortillas. If you are using the crab sticks they will be rolled into the center of each roll up. You will need 1 ½ to 2 per roll up depending on the size of your tortillas. Once you have them rolled up wrap each one in plastic wrap. It is best if they sit an hour before serving. These can be made a couple days in advance. Slice in 1/2 to 1 in. slices. You can serve it with a dot of cocktail sauce on top of each one.
  • 2. Alternative Cracker spread: Mix cream cheese and sour cream. Spread on a plate. Spread cocktail sauce on top of that. Sprinkle 1 can of baby shrimp on top. Serve with your favorite crackers.

This is like the first recipe I posted, but I made a number of changes according to prefrences of the family and decided to post them as a seperate recipe. This is quick and very tasty. Because you are broiling this dish it leaves the veggis warm and firm. Since raw peppers and onions don't appeal to everyone in my family I cook them first.

Number Of Ingredients 9

8 ounces imitation crabmeat, cut into 1/2-inch pieces
1/2 cup mayonnaise
1 red bell pepper (have used green as well)
1/2-1 small onion, minced (according to taste)
1 1/4 cups swiss cheese (I use swiss or any white cheese I have on hand)
2 teaspoons dried oregano
4 English muffins, seperated into 8 rounds
1 (8 ounce) can black olives, sliced or broken up (more or less to taste)
parmesan cheese

Steps:

  • Saute the peppers and onions in pan until soft.
  • Drain the peppers and onions on a paper towel and let cool.
  • In a bowl, mix imitation crab, mayonnaise, cooled peppers and onions, cheese, olives, and oregano until well blended.
  • Spread a few spoonfuls on rough side of english muffin halves.
  • Sprinkle with parmesan cheese.
  • Broil for 4-5 minutes or until cheese melts and mixture is bubbly.
