4 eggs
1 tablespoon onion, minced
2 tablespoons butter
1 tablespoon celery, finely chopped
3/4 cup lobsters, diced or 3/4 cup crabmeat

Steps:

  • Beat the eggs and cook in an omelet pan over medium heat.
  • While eggs are beginning to cook in another pan sauté' the onions in the butter, add celery and lobster or crabmeat to onions and simmer for 3 minutes.
  • Before folding the omelet, spread it with the filling mixture.
  • Fold and serve garnished with parsley.

It seems that I often have crabmeat left over after making crab cakes or other crab dishes. This is a great way to use it up the following morning. This recipe can be halved.

6 ounces flaked crabmeat (, backfin recommended)
2 tablespoons shredded parmesan cheese
salt
freshly ground black pepper
6 eggs
2 tablespoons water
1 ounce butter
2 tablespoons heavy whipping cream

Steps:

  • Mix the flaked crabmeat with the cheese and season with salt and pepper.
  • Lightly beat the eggs in a bowl with the water and salt and pepper.
  • Melt the butter in a small skillet and when the froth subsides, pour in the eggs.
  • Place the crab and cheese on top of the eggs just when the eggs are beginning to set.
  • Pour on the cream while the eggs are still liquid and transfer under a hot broiler for a few minutes until the top is golden brown.
  • Do not fold, but slide on to a hot plate and serve immediately.

This crab omelette recipe makes for a great weekend eggs dish, perfect if you're just back from an early morning visit to the fish markets. It's decadent, a little sweet, a little hot, and very, very moreish.

80 grams cup fresh cooked crabmeat (blue swimmer if possible)
1 long red chilli (halved, seeds removed)
1 teaspoon grated fresh ginger
1 teaspoon butter
1 tablespoon of neutral oil
4 spring onions (thinly sliced)
1/2 cup snow pea sprouts
3 eggs
2 teaspoons soy sauce
1 teaspoon fish sauce
1 tablespoons oyster sauce
1 small bunch coriander
Sriracha sauce to taste

Steps:

  • Deseed the chilli and finely chop half the chilli and add to a hot pan with a little oil and the white ends of the spring onions and the ginger.
  • Cook until the spring onions and the ginger are translucent and add to the crab meat in a small bowl and stir.
  • Lightly beat the eggs until yolks are broken and mix in the soy and fish sauce.
  • Prepare your garnish. Thinly slice the remaining chilli into strips. Pick a small handful of coriander leaves. Wash and drain the snow pea sprouts.
  • Over medium-high heat add the rest of the oil and the butter to an omelette pan. When it's hot add the egg mixture and leave it for 15 seconds to start to set a little. With a silicon spatula, begin pushing the cooked egg towards the centre of the pan and additionally swirl the pan to get the unset eggs to cook. Run the spatula around the rim of the pan to stop it from sticking.
  • When the omelette is becoming firm and there is only a little liquid on the surface of the omelette add the crab mixture to the centre of the omelette. Using the spatula, fold one side of the omelette to just over centre of the pan, followed by the other side. This will be the bottom of the omelette.
  • Take the pan off the heat and turn the omelette over onto a plate.
  • If you're going to present this to guests and want a fancy presentation, slice the omelette in half and arrange as in the photo (above).
  • Drizzle with the oyster sauce and Sriracha, followed by the snow pea sprouts, the chilli strips and the coriander.

1 1/2 tablespoons green onions, chopped
1 1/2 teaspoons parsley, chopped
1 1/2 teaspoons butter
1/2 cup lump crabmeat
salt and pepper
Tabasco sauce
1 teaspoon lemon juice

Steps:

  • Saute green onions and 1 tsp parsley in butter until soft, being careful not to let butter brown.
  • Add crabmeat, tossing lightly so as not to break up lumps.
  • Season to taste and add lemon juice.
  • Prepare basic omelette.
  • When eggs begin to set, add crabmeat mixture and turn down heat.
  • When omelette is set, fold two sides toward center, over filling.
  • Garnish with the remaining parsley.

I bought a package of frozen crabmeat and was looking for ways to use it up, since I was too lazy to make crabcakes. This is a very simple dish - I served it as a side for dinner, but I imagine it would be wonderful for breakfast/brunch too!

3 large eggs, lightly beaten
1 pinch salt
1 dash pepper
4 teaspoons canola oil, divided
3 -5 drops sesame oil
1 small yellow onion, sliced thinly
5 ounces crabmeat, thawed and drained (or 5 ounces shrimp)
1 teaspoon light soy sauce
1 stalk scallion, chopped
1/2 tablespoon red chile, chopped (optional)

Steps:

  • Lightly beat eggs with salt and pepper, set aside.
  • Heat wok with 2 tsp oil and sesame oil.
  • Add onion and fry until soft.
  • Push to one side of the wok, add crabmeat or shrimps and stir-fry well.
  • Stir in soy sauce, more salt and pepper if desired, then remove crabmeat mixture and set aside.
  • Heat the remaining 2 tsp oil in the wok; add beaten eggs.
  • Swirl pan around to spread the omelette evenly.
  • When eggs have set, add the cooked crabmeat/shrimp mixture and sprinkle with spring onion and red chillies.
  • 'Fold'in the four corners of the omelette to cover the filling.
  • Cover pan with a lid for 1 minute, then turn out omelette onto a plate and serve immediately.

6 large eggs
1 tablespoon cold water
1/4 teaspoon salt
1/4 teaspoon black pepper
4 tablespoons butter (1/2 stick)
8 ounces crabmeat (fresh or canned, cleaned of all debris & divided in half)
4 green onions (thinly sliced & divited in half)
6 ounces brie cheese (rind removed, cut in sml pieces & divided in half)

Steps:

  • Preheat broiler.
  • Whisk 1st 4 ingredients in lrg bowl to blend. Melt 1 tbsp butter in 10-in flame-proof non-stick omelette pan over med-high heat.
  • Pour 1/2 of egg mixture into pan & cook till almost set, tilting pan & lifting egg mixture w/rubber spatula to allow uncooked portion to run underneath (about 1-2 min).
  • Spoon 1/2 of crab over rt half of omelet. Sprinkle 1/2 of green onions & 1/2 of cheese over crab. Season w/salt & pepper.
  • Place pan under broiler til cheese begins to melt & egg is almost cooked (about 15-20 seconds).
  • Fold lt side of omelet over filling. Slide omelet onto plate & keep warm.
  • Wipe pan w/paper towel & repeat Steps 3-6 w/rest of ingredients, forming 2 omelets. Serve omelets immediately.
