CRAB AND CAVIAR TWICE-BAKED POTATOES

Crab and Caviar Twice-Baked Potatoes image

Provided by Katie Lee Biegel

Time 2h25m

Yield 4 servings

Number Of Ingredients 9

4 russet potatoes, scrubbed
6 tablespoons unsalted butter
1 shallot, minced
1/2 cup creme fraiche, plus more for garnish
2 tablespoons minced fresh chives, plus more for garnish
1 teaspoon lemon zest
Kosher salt and freshly ground black pepper
8 ounces lump crabmeat
2 ounces caviar or salmon roe

Steps:

  • Preheat the oven to 425 degrees F.
  • Pierce the potatoes with a fork a few times on all sides. Place on a baking sheet and bake until fork-tender, 1 hour to 1 hour 20 minutes. Let cool slightly. (Leave the oven on.)
  • Meanwhile, melt 4 tablespoons butter in a small skillet over medium heat. Add the shallot and cook until softened but not browned, about 5 minutes. Transfer to a small bowl. Melt the remaining 2 tablespoons butter in a small bowl in the microwave.
  • Once the potatoes are cool enough to handle, use a paring knife to make a slit lengthwise down the top of each, cutting about halfway through. Make another small slit across the first to make a "t". Gently push the sides of the potato with your hands to loosen the filling. Scoop out the flesh to a large bowl with a spoon or melon baller, leaving a 1/4 inch of flesh in the skins to preserve the shape of the potatoes. Return the potato skins to the baking sheet.
  • Mash the potato flesh until smooth. Add the shallot butter mixture, creme fraiche, chives and lemon zest, then season with salt and pepper. Gently fold in the crabmeat.
  • Spoon the mixture evenly into the potato skins. Drizzle with the remaining melted butter. Bake until browned, 20 to 25 minutes. Top each potato with a dollop of creme fraiche, a sprinkle of chives and a spoonful of caviar. Serve immediately.

CRAB STUFFED TWICE BAKED POTATOES

Crab Stuffed Twice Baked Potatoes image

Provided by Food Network

Categories     side-dish

Time 1h55m

Yield 6 stuffed potatoes

Number Of Ingredients 11

6 large baking potatoes
2 tablespoons plus 4 to 6 tablespoons butter, depending on size of potatoes, divided
2 medium shallots
3 cloves garlic, minced
2 tablespoons fresh thyme leaves
2 cups cooked crabmeat, preferably Alaska king crab
1 to 2 cups grated cheese, depending on size of potatoes (provolone, Muenster or Jack - something mild)
1/2 cup sour cream
1 tablespoon freshly chopped Italian parsley leaves
Salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Prick holes in the potatoes with a fork and place directly on the oven rack. Roast until cooked through, about 45 minutes, depending on the size of the potato.
  • While the potatoes are cooking prepare the crab: Add 2 tablespoons of butter to a frying pan. Add the shallots and cook until translucent. Next add the minced garlic and saute in the frying pan to gently brown the shallots and garlic. Add the thyme and crab and cook until heated through. Then set aside.
  • Lower the oven to 350 degrees F.
  • Once the potatoes are cooked and cool enough to handle cut, off a small portion of the top making an opening in the potato.
  • Take a spoon and scoop the pulp into a bowl. Place the potato skins on a cookie sheet and put in a 350 degree F oven for about 5 minutes to dry them out and ensure they will be crispy when done.
  • To the potato pulp, add the shallot/crab mixture, remaining butter, cheese and sour cream and mix. Then add parsley, salt and pepper, to taste. Fill the potato shells with the potato/crab mixture. Bake until cheese has melted around 35 to 45 minutes.
  • Sprinkle with parsley.

CRAB-BOIL POTATOES

Crab-Boil Potatoes image

I first tried these delicious little potatoes while in New Orleans but did not think to get a recipe. I have adapted this recipe to match the taste as best I can. They are somewhat adaptable, you can adjust the spice level to your own preference - these are what I would consider a medium level (I ususally use a bit more spice b/c I like things spicy!)

Provided by Kerry G

Categories     Potato

Time 10m

Yield 8 serving(s)

Number Of Ingredients 4

3 lbs red potatoes
1 tablespoon tony chachere's original creole seasoning (you could use regular salt)
3 tablespoons liquid crab boil (or 1 bag of the dry kind)
2 ounces hot sauce (not Tabasco- the flavor isn't right)

Steps:

  • Place the potatoes (I like mine cut up but you could keep them whole) in a pot and add just enough water to cover the potatoes. Add the crab boil.
  • Bring the water to a rolling boil then add Tony Chacheres (or salt) and the hot sauce.
  • Allow the potatoes to boil until they are fork-tender (5-10 minutes depending on the size of the potatoes and whether you cut them or left them whole).
  • Drain the potatoes and allow them to sit for 5 minutes or so.
  • You can serve these hot, or allow them to cool (the flavor gets stronger as they cool) and serve them at room temperature.

SPICY BOILED CRABS, SHRIMP, POTATOES, CORN, AND GARLIC

Spicy Boiled Crabs, Shrimp, Potatoes, Corn, and Garlic image

Categories     Garlic     Potato     Crab     Shrimp     Corn     Summer     Boil     Gourmet

Yield Serves 6

Number Of Ingredients 12

24 live blue crabs
two 3-ounce packets Zatarain's crab boil or 5 tablespoons Old Bay seasoning
1 tablespoon cayenne
1/2 cup table salt
3 lemons, quartered
2 onions, halved
1 1/2 pounds small potatoes (about 2 inches in diameter)
2 heads of garlic (not separated into cloves)
6 ears of corn, shucked
2 tablespoons Old Bay Seasoning*, or to taste, for sprinkling over boiled seafood
2 pounds large shrimp (about 30, preferably with heads)
Accompaniments:Horseradish Cocktail Sauce and French bread

Steps:

  • In a 7- to 8-gallon kettle bring 5 gallons water to a boil.
  • While water is coming to a boil, in a deep sink rinse crabs in 2 or 3 changes of water. (Do not fill sink too full or crabs may crawl out.)
  • Add Zatarain's crab boil or 5 tablespoons Old Bay seasoning, cayenne, salt, lemons, and onions to boiling water and boil 5 minutes. Add potatoes and garlic and boil until tender, about 15 minutes. Transfer potatoes and garlic with a large sieve to a large platter and keep warm, covered with foil. Add corn to boiling water and cook until tender, about 5 minutes. Transfer corn with tongs to platter and keep warm, covered with foil.
  • Return water to a boil. Transfer about 6 crabs carefully with long tongs to sieve, holding them down in sieve with tongs, and turn crabs out into boiling water. Add remaining crabs in same manner. Return water to a boil and cook crabs until just cooked through, about 10 minutes. (To determine doneness, remove a claw and crack it with the handle of a dinner knife. Use Knife to extract meat from claw.) Transfer crabs with sieve to another large platter and sprinkle with 1 tablespoon Old Bay seasoning.
  • Return water to boil and cook shrimp until just cooked through, about 2 minutes. Transfer shrimp with sieve to large platter with crabs and sprinkle with remaining tablespoon Old Bay seasoning.
  • Serve crabs, shrimp, and vegetables with horseradish cocktail sauce and French bread.

CRAZY COOLER COOKED POTATOES

Crazy Cooler Cooked Potatoes image

I could NOT believe this recipe! Potatoes that are cooked and served in an ice chest like an Igloo cooler! What's more, they are YUMMY! like twice baked potatoes. This is the easiest and funniest way to cook a massive amount of potatoes. I usually cook them until they are almost done- not mushy just to the point where they could cook for a few minutes more- and let them finish in the cooler IF I have about an hour before having to open the cooler again. IF I need to serve them sooner I cook the potatoes until they are close to done or done but not mushry. They come out great and what a conversation piece for your next picnic, BBQ, get together, etc... You gotta try it to believe it! PS.. You CAN do these in a foil pan too for easy clean up. You can even put the pan in the cooler!

Categories     Potato

Time 20m

Yield 80 serving(s)

Number Of Ingredients 11

1 (3 ounce) package crab boil
20 lbs red potatoes
5 cups cheddar cheese, shredded
2 lbs butter
salt & pepper
chives (optional)
bacon bits (optional)
sour cream (optional)
green onion, chopped. (optional)
chives (optional)
creole seasoning (optional)

Steps:

  • Start with boiling pot of hot water. Add salt pepper and crab boil bag for flavor to the boiling water.
  • Add 20 lbs of chopped up red skin potatoes. Leave skins on if you desire. Boil until potatoes are almost done. I cook them til they are fork tender and just about done- as long as they are not mushy they will be fine. If you have taken them too far and they are cooked more than you like just let them cool until they are warm but not steaming before putting them in the cooler. You may want to warm the add ins before tossing them into the cooler to ensure they melt.
  • Dump boiled potatoes into clean cooler/ice chest Igloo type cooler. (We use a brand new one or one that has been cleaned well with bleach and rinsed well).
  • With clean plastic gloves and a long knife, slice through the entire 'mess' of food, cutting and slicing through to make the pieces as small as you like. This will also help to mix it well. Cut as much as you like and REMEMBER the potatoes are HOT- so be careful!
  • Optional Ingredients: You can either serve them separately and allow your guests to add their own OR you can add them now using the knife method.
  • Now, close the lid of the cooler and lock them up. Make sure NO ONE opens it! The steam will continue to cook the potatoes.
  • They will stay warm for HOURS and be ready and perfect when you are ready to serve.
  • PS. You CAN do these in a foil pan too for easy clean up. You can even put the pan in the cooler! Or line the cooler with foil!

BAKED POTATOES WITH CRAB, JALAPEñO AND MINT

Baked Potatoes With Crab, Jalapeño and Mint image

Mark Ladner, the chef at Del Posto in New York, serves pasta with crab, jalapeño and mint. Here the canvas is potato flesh instead, along with sour cream and butter and cheese. Pair with steak for an elegant take on the classic surf-and-turf dinner, or serve it on its own, with a green salad and a sharp white wine.

Provided by Sam Sifton

Time 1h15m

Yield 4 servings

Number Of Ingredients 11

4 large baking potatoes, like russets
1 teaspoon olive oil
1/2 pound lump crab meat
1 teaspoon lemon juice
2 teaspoons extra-virgin olive oil
1 tablespoon mint leaves, shredded
1 jalapeño pepper, seeded and diced
4 tablespoons sour cream
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper to taste
1 cup grated Parmesan cheese.

Steps:

  • Preheat oven to 450.
  • Scrub potatoes under running water; dry them, and rub the skin of each with the oil and a little salt. Pierce the skin of each in three or four places with the tines of a fork.
  • Place the potatoes in the oven, and roast for 45 minutes to an hour, depending on the size of the potatoes, until they offer no resistance when a knife is inserted in their centers.
  • While the potatoes are baking, lightly toss the crab meat in a bowl with the lemon juice, olive oil, shredded mint, diced jalapeño and sour cream.
  • When the potatoes are done, remove them from the oven, slice them open down the middle and use a spoon to scrape out their flesh into a bowl. Add the butter, salt and pepper and mash to combine. Spoon the mixture back into the empty jackets, place on a baking sheet, top with the crab-meat mixture and shower with cheese. Return to the oven for approximately 15 minutes, until the cheese is melted and golden.
