A Chinese buffet favorite, this crab meat casserole is loaded with mild and creamy flavors. Made with imitation crab meat, cream cheese, sweet onions, etc.. Perfect for a holiday pot luck dinner.

Steps:
- In a bowl, shred the crab meat into smaller chunks.
- Add the cream cheese, sour cream and shredded swiss cheese to the bowl, and combine.
- Add in the onion and spices, and combine until fully mixed.
- Spread mixture into a casserole dish and then top with the cheddar cheese.
- Bake at 350 for 30 mins.
- Enjoy warm!

Steps:
- Heat oven to 375ºF.
- Whisk first 3 ingredients in medium bowl until blended. Add stuffing mix, crabmeat, peppers, celery, half the onions and 1/4 cup cheese; mix lightly. Let stand 3 min.
- Press crabmeat mixture firmly onto bottom of 8-inch square baking dish sprayed with cooking spray.
- Bake 25 min. or until golden brown. Sprinkle with remaining cheese and onions. Let stand 10 min. before cutting into pieces to serve.

After several days of craving a crab bake casserole like the one at my local Chinese buffet, I came up with this recipe by tweaking one that I found online. To me, this tastes pretty close to those that I've had at several chinese buffets.

Steps:
- Mix all ingredients together. Place into pan and sprinkle cheddar cheese on top. Bake in 350 degree oven for approximately 30 minutes.
- VARIATION: You can mix seafood types -- use 1/2 lb. crab and 1/2 lb. shrimp, lobster, or other seafood.
CHINESE BUFFET CRAB CASSEROLE RECIPE

- Preheat the oven to 325 degrees F.
- In a large bowl combine sour cream, lemon juice, garlic salt, ½ cup mozzarella cheese, cream cheese, mayonnaise, Worcestershire sauce, sugar, and milk. Mix well to combine and stir in the imitation crab meat. You can also add in any vegetables you may want, I added a little bit of sliced celery and onion.
- Spoon into a greased casserole dish, top with the remaining cheese.
- Place into the oven and Bake for 30 minutes or until the cheese is golden brown and the casserole is bubbly.

EASY CRAB CASSEROLE

- Preheat oven to 350 degrees F (175 degrees C).
- In a large pot of salted boiling water, cook pasta until al dente. Drain, and transfer to a large bowl.
- Add mayonnaise, Worcestershire sauce, ketchup, and onion to the noodles; mix well. Stir in green pepper, crab, shrimp and celery. Salt and pepper to taste. Spoon mixture into an 8x8 inch casserole dish. Sprinkle bread crumbs to taste over the casserole.

IMPERIAL CRAB CASSEROLE
This spicy crab casserole is a specialty of Sting-Ray's in Cape Charles, Virginia. Great baked until lightly browned and bubbling in the center and served hot with toast on the side. A winner in our house.

- 1. Preheat oven to 400^. Butter 6 shallow 6 oz. ramekins or a 2 quart casserole. Set aside.
- 2. Heat 5 Tablespoons of the butter in a 2 qt. saucepan over medium-high heat. Add flour, and cook, stirring until smooth, about 2 minutes;making a roux. Whisk in the cream and bring to a boil; reduce heat to medium, and cook, stirring until thickened, about 10 minutes.
- 3. Remove from heat and stir in crabmeat, half the bred crumbs, bell pepper, onion, half the parsley, sherry, lemon juice, worcestershire, half the paprika, cayenne, mustard salt and pepper.
- 4. Divide mixture into prepared ramekins or casserole dish; place ramekins on a baking sheet set aside. --- In a small bowl, mix remaining butter, crumbs, and paprika until evenly coated; sprinkle on top of casserole or ramekins. Bake until lightly browned and bubbling in the center, about 20 minutes. Sprinkle any remaining crumb mixture over each serving if any is left. Serve hot with toast if desired on the side. Enjoy!

- Cook pasta according to package directions. Meanwhile, in a skillet, saute onions, mushrooms and green pepper in butter until crisp-tender. Add garlic; cook 1 minute longer. Remove from the heat. Drain pasta; add to vegetable mixture. Stir in the crab, sour cream, salt and basil. , Transfer to two greased 8-in. square baking dishes. Sprinkle with cheese. CRAB AND BRIE CASSEROLE WITH WILD MUSHROOM CRUMB TOPPING

- Bring a large pot of salted water to a boil. Add the egg noodles to the pot and cook until just tender, but not too soft. Drain and set aside.
- In a large, deep skillet with high sides, melt the butter over medium heat. Add the shallots to the butter and saute them until translucent, about 4 to 5 minutes. Add the garlic and oregano and cook for 2 minutes.
- Pour in the white wine, stir, and let the mixture come to a simmer. Cook until the wine is reduced by half. Add the seafood stock.
- Cut the brie into bite-size chunks and add it to the pan. Stir until the brie is melted. Remove the skillet from the heat.
- Stir in the egg noodles then gently stir in the crab. Set aside. Cover and keep warm.
- Preheat the oven to 350 degrees F.
- In a spice grinder or food processor, grind the shiitake mushrooms until coarsely ground. Place the mushrooms in a bowl and combine with the panko bread crumbs. Melt the butter and pour into the breadcrumb-mushroom mixture. Stir to coat the crumbs with butter.
- Pour the crab noodles into a 9 by 13-inch ovenproof casserole dish and sprinkle the bread crumbs over the top. Bake the casserole in the oven until the crumbs are golden brown, about 5 to 7 minutes. Serve the casserole hot.

This is so good and smells wonderful while it is baking! I got it from a Virginia Country Cookbook. Its a great company dish that can be prepared several hours in advance.

- Heat oil in a large saute pan on medium heat. Sweat shallots, garlic, carrot, celery and yellow corn in oil until tender; do not brown. Add white wine and reduce to almost dry, followed by lobster stock and whipping cream. Reduce by half to a slightly thick consistency. Remove from heat. Fold in chopped parsley; season with salt and pepper. Add crabmeat and mix together. In 6 ungreased small individual baking casseroles, pipe a small layer of potato puree on bottom. Divide the stuffing equally among casseroles on top of potatoes. Cover with shredded cheeses.
