1 c water
1/2 c chopped onion
1 Tbsp Old Bay seasoning
1/2 tsp thyme, leaves
1/2 tsp marjoram
dash white pepper
1 lb shrimp, peeled and deveined and cut up
1 lb jumbo lump crab meat
2 can(s) cream of chicken soup
2 can(s) half and half from soup can
2 Tbsp sherry
2 tsp lemon zest, grated

Steps:

  • 1. In a soup pot/Dutch oven, combine water, onions, and all seasonings. Heat to a boil then reduce heat to low; simmer for 10 min.
  • 2. Add shrimp, simmer 10 more min.
  • 3. Stir in soup.
  • 4. Add 1/2 and 1/2...
  • 5. ... crab meat, and sherry and lemon zest. Heat through.
  • 6. Ladle into bowls and serve with crust bread. makes 4 servings or 6 cups.

4 TBS Unsalted Butter (- DIVIDED)
1 pound large Shrimp (- peeled, deveined & shells reserved (SEE NOTES))
2 Seafood Bouillon Cubes (mixed with 4 ¼ cups of water) ( - can substitute clam juice or seafood stock (SEE NOTES))
2 Bay Leaves
8-10 Green Onions (- sliced: white/light green parts only (about ¾ cup) (reserve dark green parts for garnish))
2 medium Carrots (- small dice (about ¾ cup))
2 medium ribs Celery (- small dice (about ¾ cup))
3 cloves Garlic (- chopped)
1 ½ tsp EACH: Sweet Paprika & Old Bay Seasoning
1 tsp Dried Thyme ((not ground thyme))
¼ - ½ tsp Cayenne ( - more or less to taste)
Kosher Salt & Ground Black Pepper
2 TBS Tomato Paste
¼ Cup All Purpose Flour (- spooned & leveled)
¼ Cup EACH: Brandy & Dry Sherry ((or dry white wine))
1 ½ - 2 Cups Heavy Cream (- more or less to taste)
8 ounces Lump Crab Meat (- DIVIDED)
Optional Garnish: Chopped Parsley, Hot Sauce, Paprika

Steps:

  • Make quick stock: Melt 1 tablespoon of butter in a Dutch oven or large heavy pot over medium-high heat. Add the shrimp shells and sauté, stirring frequently, until they are lightly browned, about 2-3 minutes. Add the bouillon cubes with water and bay leaves. Bring to a simmer. Reduce heat to maintain a gentle simmer and cook for 15 minutes. Strain the stock into large bowl, discarding the shells. Transfer the stock to a large (4 cup) measuring cup. You should have 3 ¾ cup of stock. If not, add enough water to make 3 ¾ cups. Set aside.
  • Sauté Shrimp: (Lightly wipe out pot if necessary) Return pot to the stove and melt 1 tablespoon of butter over medium heat. Add the shrimp and season to taste with salt and pepper. Sauté, stirring occasionally, until just cooked and opaque, about 3-4 minutes. Use a large-slotted spoon to transfer the shrimp to a plate. Set shrimp aside - reserving 4-6 shrimp for garnish, the rest will go back in the soup in step 6.
  • Sauté vegetables: Melt the remaining 2 tablespoons of butter in the pot over medium heat. Add the onions (white & light green parts only), carrots and celery. Sauté (sweat), stirring occasionally, until tender, about 5-6 minutes. Add the garlic, paprika, old bay, cayenne and season with ¾ teaspoon salt and ¼ teaspoon pepper. Cook until fragrant, about 1 minute.
  • Add thickening agents + wine: Add the tomato paste and cook, stirring, until the paste is caramelized, about 2 minutes. Sprinkle the flour over the vegetable mixture and cook, stirring, for 2 minutes. Add the brandy and sherry, using the back of a wooden spoon to scrape up any brown bits stuck to the bottom of the pan. Cook until the brandy/sherry are almost evaporated.
  • Add stock: Slowly whisk in the reserved seafood stock - whisking continuously while you add the stock to the pan to prevent clumping. Bring soup to a simmer, then immediately reduce heat to maintain a simmer. Cook, whisking occasionally, for 15 minutes.
  • Add shrimp & puree: Turn off the heat and add the shrimp to the pot (minus the shrimp you are reserving for garnish). Puree the soup using an immersion blender or transfer the soup in batches to a high-powered blender.
  • Add cream & crab: Return the heat to medium-low and stir in 1 ½ cups of the cream. Add half of the crab meat. Cook, stirring occasionally, until warmed throughout - don't overcook or let the bisque boil! Taste and adjust for seasoning with more cream, salt and pepper if desired.
  • Serve: Divide the bisque among serving bowls. Top with reserved shrimp and remaining crab meat. Sprinkle with remaining scallions (dark green parts) and optional garnishes if desired. Enjoy!

5 (14 1/2 ounce) cans college inn garden vegetable broth
1 (28 ounce) can peeled chopped tomatoes, any brand,undrained
20 large shrimp, peeled and deveined (save shells)
4 large crab legs, shells on
3 stalks celery, chopped
1 large carrot, chopped
1 medium green pepper, chopped
1 teaspoon Old Bay Seasoning (more or less to taste)
salt & fresh ground pepper, to taste

Steps:

  • Bring broth and shrimp shells to a boil.
  • Add crab legs.
  • Cook 4 minutes.
  • Remove crab legs to a bowl to cool.
  • Remove shrimp shells and discard.
  • Strain broth for any leftover pieces of shells.
  • Reduce heat to medium.
  • Add celery, carrots, peppers, tomatoes and seasonings.
  • Cook until vegetables are tender.
  • Meanwhile, shell crab legs and break meat into bite size pieces.
  • Add juices to the soup from the bowl the crab cooled in.
  • Add shrimp and cook about 4 minutes.
  • Add crab meat.
  • Serve with hot crusty bread and salad.
  • Delicious.

  • add butter to medium size sauce pan, cut veggies into small diced sizes and add to butter. Heat over low and sweat veggies til soft - about 10mins.
  • after veggies are soft, add soup, milk and cream corn into pan. then add your spices. heat on low so you don't scorch milk. This should take 10/15 minutes.
  • Drain your crab and tiny shrimp. after the soup base has been warming for 10/15 minutes add the crab and tiny shrimp. raise heat to med/high stirring until hot. Remove from heat and serve. ENJOY!

2 tablespoons green onion, chopped
2 tablespoons celery, chopped
3 tablespoons all-purpose flour

1/2 teaspoon freshly ground black pepper

1 cup heavy whipping cream
8 ounces cooked baby shrimp (or other seafood)
8 ounces crabmeat
2 tablespoons sherry wine
Garnish: parsley, cilantro and/or green onion tops, chopped

Steps:

  • Gather the ingredients.
  • Melt the butter in a Dutch oven or large saucepan over medium-low heat; add the chopped green onion and celery. Sauté, stirring, until tender, about 2 minutes.
  • Blend the flour into the butter and vegetables until well incorporated. Continue cooking, stirring, for about 2 minutes.
  • Warm the milk in another saucepan over medium heat.
  • Slowly stir the warmed milk into the butter and vegetables. Continue cooking, stirring until thickened, about 3 minutes.
  • Add the freshly ground black pepper, tomato paste, and heavy cream.
  • If desired, puree the soup in a blender or food processor at this point and then return it to the saucepan.

3 1/2 quarts (14 cups) plus 1 1/4 cups water
1 live Dungeness crab, 1 1/2 pounds
2/3 cup dried shrimp
1 3/4 teaspoons salt
2 tablespoons fish sauce
8 egg whites, lightly beaten
3 tablespoons canola or other neutral oil
1 yellow onion, finely chopped
1 can (28 ounces) whole tomatoes, coarsely chopped with juices reserved
3 tablespoons fine shrimp sauce
Bowls
1 pound small dried round rice noodles, cooked in boiling water for 3 to 5 minutes, drained, and flushed with cold water
2 or 3 scallions, green part only, thinly sliced
1/4 cup chopped fresh cilantro, leafy tops only
Garnishes
1/4 to 1/3 pound water spinach stems, split into fine shreds, soaked in water to curl, and drained, or leaves from 1 small head romaine lettuce, halved lengthwise and cut crosswise into 1/4-inch-wide ribbons
3 cups bean sprouts (about 1/2 pound)
3/4 cup thinly sliced banana blossom bract (leaf), soaked in acidulated water, massaged with warm water, and drained well (optional; see Note)
2 or 3 limes, cut into wedges
12 to 20 sprigs Vietnamese balm and/or Thai basil (optional)
Spoonful of fine shrimp sauce (optional)
Mellow Chile-Garlic Mix (page 315), optional

Steps:

  • Pour the 3 1/2 quarts water into a 5- or 6-quart Dutch oven and bring to a rolling boil over high heat. Add the crab and cook, clean, and pick it as directed on page 322. Set the meat and the tomalley and fat aside. If you don't like the tomalley and fat, discard them along with the shell bits. Reserve 3 quarts (12 cups) of the cooking liquid for the broth.
  • To rehydrate the dried shrimp, put them in a small saucepan with the 1 1/4 cups water, bring to a simmer over medium heat, and cook for 10 minutes, or until slightly soft. Drain the shrimp into a sieve placed over a bowl and let cool completely. Add the cooking liquid to the reserved crab cooking liquid.
  • Put the cooled shrimp in a food processor and process to grind to a coarse texture. Add the crabmeat and tomalley and fat. Pulse 3 times to combine but not pulverize the crabmeat. Transfer to a bowl and mix in 1/2 teaspoon of the salt, 1 tablespoon of the fish sauce, and the egg whites. Set aside.
  • In a large, wide pot, heat the oil over medium-high heat. Add the onion and cook, stirring occasionally, for about 3 minutes, or until fragrant and a bit soft. Add the tomatoes and their juices and the remaining 1 1/4 teaspoons salt and bring to a vigorous simmer. Cook, stirring frequently, for 10 to 12 minutes, or until most of the liquid has evaporated and the mixture is thick.
  • Add the shrimp sauce, the remaining 1 tablespoon fish sauce, and the reserved cooking liquid. Bring to a boil over high heat, lower the heat to a gentle simmer, and cook for 30 minutes.
  • Meanwhile, bring a large pot of water to a rolling boil, for reheating the noodles; ready the scallions and cilantro for assembling the bowls; and arrange the garnishes on a plate or put them in small dishes and put on the table.
  • Keeping the broth at a gentle simmer, use a large spoon to slowly stir it in one direction, scraping the bottom of the pot. As you stir with one hand, use the other to pour in the egg mixture. Keep stirring, and as soon as the egg mixture floats to the top, remove the spoon. Let the broth cook undisturbed for 5 minutes. When small bubbles break the surface, the soup is done. The broth underneath will be golden and clear with some solids at the bottom. Lower the heat so the broth stays warm while you assemble the bowls.
  • When the water has reached a boil, place a portion of the noodles on a vertical-handle strainer (or mesh sieve) and dunk the noodles in the boiling water. After 5 to 10 seconds, pull the strainer from the water, letting the water drain back into the pot. Empty the noodles into a bowl and repeat with the remaining portions, while proceeding to assemble each bowl.
  • Use a slotted spoon to transfer an equal portion of the floater to each bowl, on top of the noodles. Bring the broth to a rolling boil, taste, and salt, if necessary. Ladle 2 cups broth into each bowl, distributing the hot liquid evenly. Top with the scallions and cilantro. Serve immediately with the garnishes. It is customary for diners to add some vegetables, torn herb leaves, and squeezes of fresh line. Anyone wanting a brinier bowl should mix in a dab of shrimp sauce, while heat seekers should add a little of the chile-garlic mix.
  • Notes
  • To split and curl water spinach stems, use only the hollow portion of the stems, removing all leaves and tender stems (save those for a stir-fry, page 178). Soak the stems in water for 5 minutes to make them easier to split. A knife is traditionally used to split the stems, but a water spinach splitter (dao che rau muong, literally "knife for splitting water spinach"), available at Vietnamese markets, works much better. The thin metal rod attached to the round plastic top contains a set of sharp blades arranged like wheel spokes. Slide the splitter into the stem and then push the stem through the blades until about 4 inches of split stem protrudes. Grab the split portion and pull on it to drag the remaining stem portion through the blades. Deposit the shreds in a bowl of cold water and let soak for 15 minutes to curl. Drain before using.
  • For information on banana blossoms, see page 52. Simply remove some of the bracts, stack them, and then slice them. Soak for 10 minutes in 1 tablespoon of distilled white vinegar and water to cover. Then massage and drain them.

This is a thick, creamy, and very flavorful chowder, and would be amazing in a bread bowl. I've made a lot of modifications to the original recipe as far as the ingredients go, and I've marked those with an asterisk, and I clarify it in the directions. I suggest reading through the recipe before shopping for your ingredients, just in case. Prep and cooking times are estimated.

1 cup onion, chopped
1/4 cup shallot, chopped*
3/4 cup celery, chopped
1/4 cup red bell pepper, diced small
1 garlic clove, minced
3 1/2 cups red potatoes or 1 lb red potatoes, cubed
3 tablespoons all-purpose flour
2 1/2 cups heavy whipping cream or 1 (16 ounce) carton heavy whipping cream
2 teaspoons fresh thyme, chopped*
1/2-1 1/2 teaspoon ground black pepper
1/4 teaspoon ground nutmeg
1 (15 ounce) can cream-style corn
1 (14 ounce) can chicken broth (*)
8 ounces cooked lump crabmeat, shells removed*
8 ounces precooked medium shrimp, shelled and deveined*
3 tablespoons fresh parsley, chopped
salt, to taste*

Steps:

  • * Instead of buying multiple small shallots, you can use one plum-sized shallot. It comes to a little more than 1/4 cup, but it still tastes great.
  • * If using dried herbs, it's suggested that you use less than the called-for amount, but I used about 3 teaspoons dried thyme and parsley in my modified version.
  • * I increased the amount of black pepper to about 1 1/4 to 1 1/2 teaspoons I like pepper, and 1/2 teaspoons just didn't seem like nearly enough.
  • * If not using canned broth, 2 cups of broth works well.
  • * I used two 6 oz. cans of crab meat each time I've made this chowder.
  • * I used I lb. of extra-large shrimp, cut into small pieces.
  • * This recipe did not call for any salt, but the first time I made it I found it to be somewhat sweet. Since it's such a large amount of chowder, I added about 3/4 tsp of salt, but feel free to add more or less depending on your tastes.
  • 1) In a large saucepan over medium-high heat, melt 2 tablespoons of butter.
  • 2) Add onion, shallots, celery, red pepper, and garlic. Saute for 4 minutes or until vegetables are tender.
  • 3) Add potatoes and saute for an additional 1 minute.
  • 4) Sprinkle flour over the mixture one tablespoon at a time, stirring well. Cook the mixture for one minute more.
  • 5) Add one more tablespoon of butter if the mixture if desired.
  • 6) Stir in cream, thyme, pepper, nutmeg, corn, and broth. Bring to a simmer over medium heat, stirring frequently.
  • 7) Cover, reduce heat, and simmer for 20 minutes or until the potatoes are tender, stirring occasionally.
  • 8) Stir in crab, shrimp, and parsley and cook for an additional 5 minutes, or until the chowder has reached the desired thickness. Continue to stir occasionally until done.
