This rich and creamy crab soup seasoned with Old Bay is the essence of the Eastern shore.

3 tablespoons unsalted butter
3 tablespoons all-purpose flour
4 cups half & half
1 teaspoon Dijon mustard
1 tablespoon Old Bay seasoning, plus more for serving (see note)
¼ teaspoon salt
⅛ teaspoon freshly ground black pepper
2 tablespoons dry sherry
½ pound lump crabmeat, picked over to remove any shells
Finely chopped chives, for garnish
Lemon wedges, for serving (optional; see note)

Steps:

  • Melt the butter in a medium saucepan over medium-low heat. Add the flour and whisk for about 1 minute, until well blended.
  • Whisking constantly, gradually add the half & half. Add the mustard, Old Bay seasoning, salt, and pepper. Bring to boil, whisking frequently (be sure to scrape the edges of the pot, where the flour mixture tends to settle). As soon as the soup starts to boil, reduce the heat to a simmer and cook, uncovered, until thickened, about 30 seconds. Stir in the sherry and crabmeat. Taste and adjust seasoning if necessary. If the soup is too thick, add water, little by little, to thin it out (it will thicken the longer it sits on the stove, even off of the heat). Ladle into bowls and sprinkle with chives. Serve with lemon wedges, if desired.
  • Note: Old Bay seasoning is sold in the seafood department at most supermarkets. It can also be ordered online or made from scratch.
  • Note: Lemon is really only necessary if not using the sherry.

SCALLION GINGER CANTONESE CRAB

I don't claim that this Scallion Ginger Cantonese crab is an easy recipe to make, but follow these step-by-step directions and you'll be in for a real treat. This recipe tutorial will teach you how to prepare live crab for this iconic Cantonese crab dish.

3 live blue crab ((or similar))
2 tablespoons all purpose flour
6 tablespoons oil
4-5 slices ginger
4 scallions
3 tablespoons shaoxing wine ((measure it out in a small cup before you start cooking))
1/8 teaspoon sugar
1/8 teaspoon white pepper
2 teaspoons soy sauce

Steps:

  • Clean and prep the crabs for cooking (see step-by-step instructions within this post).
  • Take each of the crab halves and lightly dredge each large piece in a light coating of flour. Transfer to a clean plate along with the claws and shells. Sprinkle the remaining flour over the crab pieces.
  • Heat a wok with 4 tablespoons of oil, spreading the oil around the wok so it heats evenly. You know you have reached the right temperature when you start to see just a little (not a lot!) of smoke on the sides of the wok. Now quickly place each of the large pieces of crab in the oil and spread the claws and shells around the outside portion of the wok. Next, quickly tilt the wok around in a circle to get the oil spread around to all of the crab pieces, keeping the heat on high. After another 15 seconds of this, use a spatula and roll the pieces around the oil for another 15 seconds. Turn off the heat and remove to a plate or small sheet pan.
  • Clean the wok, add 2 tablespoons of oil and toss in the ginger pieces until they are just starting to caramelize (15 seconds) and then add half of the scallions - use the white pieces for this step.
  • Keep the heat on high and move quickly to add the crab to wok and toss the crab around with your spatula to get some good sizzle. After about 10 seconds, add the wine in a circle around the pan and immediately cover the wok and turn the heat down to medium. Let the crab cook for 2-3 minutes. During this process, it is best to hold the cover and tilt the wok so the liquid hits the hot sides of the wok and you hear and see a sizzle generating that elusive "wok hay" flavor. If you have no sizzle, the heat is too low.
  • Remove the cover and spread the rest of the scallions over the crab. Add the sugar, white pepper and soy sauce. Give everything a good mix for another 10 seconds. Plate and serve!

2 Dungeness crab, shell off (save shells), claws cracked and body chopped up into 2-inch pieces
2 cups cornstarch, for dusting and to make a slurry with 1 tablespoon
3 cups peanut oil
1 1/2 tablespoons rinsed fermented black beans, chopped
4 large slices bruised ginger
8 cloves garlic, thinly sliced
5 scallions, chopped into 2-inch pieces
1/4 cup shaoxing(cooking wine)
1 tablespoon naturally brewed soy sauce
2 cups chicken stock
Salt and white pepper, to taste
Small pot cooked Chinese rice

Steps:

  • In a large wok, bring peanut oil to high temperature. Dust the crab pieces with cornstarch and a little salt. Shallow fry the crab for only 1 to 2 minutes until the crab shells turn red. Drain on paper towels. Do the same with the 2 shells. Reserve oil and wipe wok clean. Add 2 tablespoons oil back to the wok on high heat. Stir-fry the beans, ginger, garlic and scallions for 1 minute until soft. Add back the crab and deglaze with shaoxing and add soy and stock. Check for seasoning and bring to a boil. Thicken with the slurry and cook 30 more seconds. Serve immediately with the cooked shells.
  • PLATING On a large oval, place the 2 shells down near both ends. Fill with hot rice. Mound the crab between the shells. Enjoy with your fingers. Can also serve with lemon finger bowls.

Ginger scallion crab is a classic Cantonese dish that I've enjoyed my entire life. Although many restaurants have their own version, nothing has ever come close to the one my dad makes. Like an artist, he spent years perfecting his technique to find the delicate balance between the sweetness of Dungeness crab, kick from fresh ginger coins and exact consistency of the slurry that coats the crab as it simmers for the final minutes. I promise it's even better than a restaurant! When I was younger, I would help smash the garlic cloves and whisk the sauce together. As I got older, I moved on to prepping the aromatics and even cleaning the crab. But the day I learned to cook it by myself for my dad is one I'll cherish forever. He took one bite and I knew it was a success. I hope when you make this recipe in your home, you can taste the work we've both put into this family favorite meal.

2 large Dungeness crab, about 2 1/2 pounds each, cleaned, shell and claws reserved (see Cook's Note)
2 bunches scallions, trimmed (about 10 bulbs)
3 tablespoons oyster sauce
1 1/2 teaspoons sugar
1/2 teaspoon ground white pepper
1/4 cup plus 1 1/2 teaspoons cornstarch
3 tablespoons canola oil, plus more for frying (about 3 cups)
5 medium cloves garlic, smashed
One 5-inch piece ginger, sliced into 1/4-inch-thick
2 tablespoons Shaoxing wine
Steamed white rice, for serving

Steps:

  • Remove the top shells from the crabs. Halve each crab body and cut each half into 2 pieces. Using a meat mallet or the back of a chef's knife, gently smash the claws to break up the shell slightly. Transferred the crab body pieces to a colander set over a large bowl. Place the top shells and claws on a plate.
  • Separate the scallion whites and greens. Split the scallion whites lengthwise, cut into 2-inch pieces and place in a small bowl. Cut the remaining scallion greens into 2-inch pieces and place in another small bowl.
  • Make the sauce. Whisk the oyster sauce, sugar, white pepper and 1/2 cup water in a medium bowl until combined. Set aside.
  • Shake off the excess liquid from the crab pieces in the colander over the sink. Reserve the large bowl. Transfer half of the crab pieces to a large plate and set aside.
  • Sprinkle 2 tablespoons cornstarch over the crab pieces in the colander and toss until coated completely. Place the colander over the reserved large bowl. Wait to coat the remaining crab until the first batch is frying to prevent the cornstarch from becoming too thick.
  • Fill a wok or high-sided large skillet a little less than halfway (about 3 inches) with canola oil and heat over high until shimmering. Carefully add the coated crab to the oil. Fry until the crab legs begin to turn orange and the cornstarch coating is translucent, about 2 minutes. Meanwhile, transfer the crab pieces on the plate to the colander. Sprinkle with 2 tablespoons cornstarch, toss to coat and set aside. Wash your hands, then use a slotted spoon or spider to transfer the fried crab pieces to a paper towel-lined plate. Repeat with remaining crab.
  • Remove all but 3 tablespoons of oil from the wok and reduce the heat to medium high. Add the garlic, ginger and scallion whites. Gently stir-fry until the garlic and ginger are golden brown and the scallion whites soften, 2 to 3 minutes. Add the claws and all of the crab pieces and toss with a wooden spoon or metal spoon. Add the Shaoxing wine and cook until reduced slightly, about 15 seconds. Add the oyster sauce mixture, scallion greens and 1/2 cup water. Toss again until well combined. Place the reserved crab top shells, hard side-up, on top in the wok and cover. Reduce the heat to medium and cook until the crab is vibrant orange and fully cooked through, about 8 minutes (see Cook's Note).
  • Meanwhile, mix the remaining 1 1/2 teaspoons cornstarch with 1 1/2 teaspoons water in a small bowl. Remove the lid and drizzle the slurry on the crab. Toss again, increase the heat and bring to a full boil. Once boiling, reduce the heat to medium-low and simmer until the sauce thickens slightly, about 2 minutes.
  • Transfer to a platter and serve warm with white rice.

SOUFFLE OF DOVER SOLE WITH CRAB, GINGER AND LEMON GRASS

4 (6-ounce) pieces of sole fillet
Salt and pepper to taste
2 tablespoons melted butter
2 cups vegetable stock
1-inch piece ginger, roughly chopped
2-inch piece of lemon grass, roughly chopped
1 tablespoon heavy cream
1 tablespoon unsalted butter
Salt and pepper to taste
1 (6-ounce) piece of sole fillet
1 egg yolk
1 whole egg
1/4 cup heavy cream
Salt and pepper to taste
4 egg whites
2 ounces crab meat
8 drops lemon juice
12 grapefruit segments
4 sprigs of chervil

Steps:

  • Make the sole: Lightly score the skin side of the sole fillet to keep the sole from the shrinking. Season sole with salt and pepper and brush with the melted butter. Turn sole on its side, and form a circle, skin side in, with the fillets. Secure with a toothpick. Place on a lightly greased non-stick baking tray. Refrigerate until needed.
  • Make the sauce: Combine the vegetable stock, ginger and lemon-grass. Reduce by half. Add heavy cream and butter. Season with salt and pepper. Strain sauce. Keep warm in a small saucepan.
  • Make the souffle: Combine sole fillet, egg yolk, whole egg, cream, salt and pepper. Puree until smooth. Whip egg whites until stiff peaks form. Fold egg whites into puree. Layer crab meat and souffle mixture into sole circles, starting with the crab. Use half an ounce of crabmeat total per sole fillet. Squeeze lemon juice over crab during layering. Place souffles in a preheated 375 degree oven for 7 minutes. Souffle should be golden brown. Assemble the dish: Using a spatula, carefully remove the souffle to a serving plate. Spoon sauce around edge of plate. Garnish each plate with three grapefruit segments and sprigs of chervil.

2 onions, peeled and chopped
6 cups chicken broth
2 pounds carrots, peeled and sliced
2 tablespoons grated fresh ginger
1 cup whipping cream
Salt and white pepper
Sour cream
Parsley sprigs, for garnish

Steps:

  • In a 6-quart pan, over medium high heat, add butter and onions and cook, stirring often, until onions are limp. Add broth, carrots, and ginger. Cover and bring to a boil. Reduce heat and simmer until carrots are tender when pierced.
  • Remove from heat and transfer to a blender. Don't fill the blender more than half way, do it in batches if you have to. Cover the blender and then hold a kitchen towel over the top of the blender*. Be careful when blending hot liquids as the mixture can spurt out of the blender. Pulse the blender to start it and then puree until smooth. Return to the pan and add cream, stir over high heat until hot. For a smoother flavor bring soup to a boil, add salt and pepper, to taste.
  • Ladle into bowls and garnish with dollop sour cream and parsley sprigs.

CRAB SOUP WITH SWEET SPICES AND GINGER JUICE

3/4 pound jumbo crabmeat, picked over to remove cartilage
1 fresh cayenne chile
3 tablespoons canola oil
1 large garlic clove, blanched and minced
1 tablespoon onion, finely chopped
2 teaspoons Garam Masala
2 tablespoons fresh ginger juice
1 teaspoon saffron powder
4 cups heavy cream
Coarse salt, to taste

Steps:

  • Set aside 1/4 cup of the crabmeat for a garnish. Wash the chile and remove the stem. Cut the chile in half crosswise and mince the top half only. Reserve the bottom for another use. Heat the oil in a large heavy-bottomed saucepan over medium heat. Add the garlic, onion, and minced chile. Saute for about 3 minutes or just until vegetables begin to brown slightly. Stir in the garam masala. When well combined, add the ginger juice. Stir well again. Add the larger portion of the crabmeat and bring to a simmer again. Simmer for 5 minutes, stirring gently from time to time. Stir in the saffron and simmer for an additional minute. Add the cream and bring to a simmer again. Lower the heat and allow the soup to just barely simmer for about 15 minutes, or until it is slightly reduced. Taste and adjust seasoning with salt. If necessary. Pour an equal portion into 6 shallow soup bowls. Garnish the center of each serving with some of the reserved crabmeat and serve immediately.

9 medium blue crabs, preferably female
8 cups water
2 celery ribs, chopped
1 large carrot, peeled and chopped
1 medium onion, chopped
1 dark green top of leek
3 sprig fresh thyme
3 parsley stems
3 bay leaves
1 tablespoon Old Bay seasoning
1 teaspoon black peppercorns
4 cups water
2 teaspoon powdered fish bouillon
6 tablespoon salted butter
1/2 cup all-purpose flour
1/2 cup diced celery
2 tablespoon salted butter
3 tablespoon cream sherry
3 tablespoon brandy
1/4 cup crab roe, chopped
1 cup light cream
3/4 cup jumbo lump crab meat

Steps:

  • To make the stock: Combine the crabs, water, celery, carrot, onion, leek top, thyme, parsley, bay leaves, Old Bay, and peppercorns in a large saucepan. Bring to a boil over high heat. Reduce the heat and cook at an active simmer for 45 minutes. Strain the stock and reserve (you can refrigerate overnight). When the crabs are cool enough to handle, crack them and pick the meat. Cover and refrigerate until needed. If the crabs have roe, reserve it separately, also covered in the refrigerator. Discard the other solids.
  • To make the base: Combine 4 cups of the crab stock with the water and fish bouillon in a large saucepan. Bring to a simmer. Melt the butter in a separate saucepan over medium heat. Stir in the flour to make a roux and cook, stirring, for 2 minutes. Don't let the roux brown. Gradually whisk in the warmed stock, making sure you don't leave any lumps, and bring to a boil. Reduce the heat and simmer, whisking once in awhile, for 20 minutes.
  • To finish the soup: While the base is simmering, bring a small saucepan of water to a boil. Add the celery, bring back to a boil, and blanch for 2 1/2 minutes. Drain, refresh the celery under cold running water, and drain again. Add the butter, sherry, brandy and roe to the base. Bring to a boil over medium-high heat. Pour in the cream and add the reserved crab meat, jumbo lump crab meat, and the celery. Bring back to a simmer and serve hot.
  • Note: Crab base is available online. To make a quick crab stock, bring 4 cups of water to a simmer. Add HOW MUCH crab base and whisk to dissolve it. You'll need 1 1/2 cups of jumbo lump crab meat to finish the soup. You can order crab roe from charlestonseafood.com. but keep in mind that it's a seasonal product.
