GRAMMY CARL'S RULE FOR BAKED BEANS

Grammy Carl's Rule For Baked Beans image

Provided by Nancy Fuller

Categories     side-dish

Time 16h

Yield 12 to 14 servings

Number Of Ingredients 7

1 pound dried navy beans
8 ounces salt pork
1 large onion, chopped
3/4 cup molasses
1/2 cup ketchup
1 teaspoon dry mustard
Kosher salt and freshly ground black pepper

Steps:

  • Put the beans in a large bowl or pot with water to cover and soak at room temperature overnight.
  • The next day, dice half the salt pork and leave the other half in 1 piece. Drain the beans and put them in a large Dutch oven with the whole piece of salt pork and enough water to cover, about 1 quart. Bring to a boil over medium heat, cover, and simmer until soft, about 1 1/2 hours. Drain the beans, reserving 2 cups cooking liquid.
  • Preheat the oven to 325 degrees F. Put the diced salt pork in another large Dutch oven (or clean the first one) and cook over medium-high heat, stirring occasionally, until translucent and slightly crispy, 3 to 5 minutes. Add the onion, molasses, ketchup, dry mustard, cooked beans and enough of the reserved cooking liquid to cover the beans. If necessary, add more water to cover the beans.
  • Bake, covered, until the beans are soft to the tooth and most of the liquid has been absorbed, about 2 hours. When finished, season with some salt and pepper and serve hot.

MAMA NEELY'S BAKED BEANS

Mama Neely's Baked Beans image

Pat: Every Fourth of July, Mama Neely made her famous baked beans: she'd brown ground beef and then doctor that beef with molasses, brown sugar, and plenty of spices. Let me tell you, those beans were good. And so are these. We've found that using smoked sausage in place of the ground beef (or pork shoulder, as in our restaurant recipe) adds a smoky depth to the dish. Once you make these beans, there is no going back. If you want to put your own spin on it, you can use kidney beans instead of pork and beans, but I say my mama's way is best.

Provided by Patrick and Gina Neely : Food Network

Categories     side-dish

Yield Serves 6

Number Of Ingredients 11

2 tablespoons canola oil
1 large onion, finely chopped
3 cloves garlic, finely chopped
1/2 pound smoked sausage, sliced
Three 16-ounce cans pork and beans
1/2 cup ketchup
1/2 cup light molasses
1/4 cup light-brown sugar
2 tablespoons apple-cider vinegar
2 tablespoons prepared mustard
Dash of hot sauce, preferably Tabasco

Steps:

  • Preheat the oven to 350 degrees F. Heat the oil in a Dutch oven set over medium- high heat. Once it's hot, toss in the onion and garlic, and saute until the onion is tender, about 3 or 4 minutes. Add the sausage, and continue to cook until the meat has browned, about 4 minutes more. Stir in the pork and beans, ketchup, molasses, sugar, vinegar, mustard, and hot sauce. Bring the beans up to a simmer, then put in the hot oven for 45 minutes, uncovered, until the mixture is bubbly and thick.

2 teaspoons ground black pepper
1 to 2 cup pure maple syrup, plus more if desired

  • Preheat oven to 250 degrees F.
  • Drain beans and place in 4-quart bean pot. Add onion, dry mustard, pepper, salt, and maple syrup. Add water to cover. Cut salt pork into 1-inch pieces and place on top of beans. COUSIN ELLEN'S BAKED BEANS

Cousin Ellen's Baked Beans image

Honest to goodness, these are THE best baked beans I have ever had. I'm tossing any and all recipes I have held on to and replacing them with this one. The recipe comes from my husband's cuz Ellen. She got the recipe from her grandmother who got it from her mother (that would be Ellen's great grandmother) in case your keeping track. Now cousin Ellen is 60y/o...... as you can see, this recipe has been in the family 4EVER! Update: 8/2010 Please don't attempt to make this in a crockpot, I did and it never thickened and got yummy ooey gooey the way I like it. It tasted great but this is best baked in the oven, long and slow! I have successfully halved this recipe many times. Enjoy!

Provided by Chicagoland Chef du

Categories     Beans

Time 3h30m

Yield 12 serving(s)

Number Of Ingredients 7

4 (16 ounce) cans great northern beans, ie. Bush's, do not drain
1/2 cup water, rinse bean cans and reserve some water to equal 1/2 C
3/4 cup dark brown sugar, packed
1/3 cup dark corn syrup, ie. Karo
1 -1 1/4 cup ketchup, ie. Heinz
1/2-3/4 lb bacon, cooked and divided
3/4 cup onion, chopped

Steps:

  • Preheat oven to 350°F.
  • Spray 9x12 baking dish w/ nonstick spray.
  • Slice the uncooked bacon into 1 to 2" pieces.
  • Fry lightly over medium heat , stirring occasionally, until it begins to crisp up around the edges.
  • Scoop out the bacon and set aside in a bowl. Do NOT drain.
  • SAVE the bacon grease that is in the skillet. (optional, see step below).
  • Throw the onions into the skillet with the bacon grease and cook long enough to wilt them a bit. Stirring them around in the hot grease a couple of minutes or so.
  • NOTE: You have 2 options here: 1) remove the cooked onions and reserve them for the recipe or 2) add both the onions & bacon grease to the recipe. I found no difference, one way or the other, so I toss it.
  • Combine the first 5 ingredients into a large bowl: beans, water, dark brown sugar, corn syrup and ketchup. Stir.
  • Add the onions AND the grease from the bacon pan. Stir gently until mixed with bean mixture. Add 1/2 of bacon to the beans, stir to combine.
  • Pour mixture into a 9x 12 prepared baking dish or any oven safe serving dish.
  • Top with the remaining bacon pieces.
  • Bake UNCOVERED for approximately 3 hours at 350°F . Watch so that it doesn't dry out. It will be thick and look very dark and almost caramelized when it is done.
  • NOTE: You can stretch the recipe by adding an additional can or 2 of beans without compromising the end result. No need to add any other ingredients.
  • I DO NOT recommend making this in the crock pot.

They also have cooked their baked beans in a cast iron pot or ceramic pot, plus they made it over night in a wood burning stove. This recipe for baked beans I have recreated to take you back to those earlier days, by baking your beans in a cast iron pot and locking in the aroma you remember has a child. Slow baked in a cast iron pot to make these baked beans taste so delicious.I will share with you more delicious meals that will make you feel so good. Traditional Newfoundland Peas Soup & Doughboys Peas soup and doughboys with pieces of picnic ham, salt beef and lots of fresh vegetables.Maybe you would like to have another soup your mom would make has a child, Lob Scouse! Traditional Newfoundland Cabbage Soup (Lob Scouse) Traditional Newfoundland Cabbage Soup also called Lob Scouse.I can't say enough good things about making homemade baked beans it is so delicious. I will share with a link to our first and second cookbook, I hope you check it out. https://www.bonitaskitchen.com/cookbook Bonita's Kitchen first CookbookThis is our link to our second cookbook. Now continue on to our recipe for Baked Beans and enjoy.

Yield 1

Number Of Ingredients 11

Onion
Cold Water
Cider vinegar
Brown sugar
Yellow Mustard
Molasses
Ketchup
Black pepper
Sea salt
Fat pork or bacon
White Pea beans

Steps:

  • Pre-heat 325° bake for 3:30 to 4:00 hours, covered. 1. In a medium bowl with lid add 2 cups of white pea beans top with cold water then cover, 1/2 tsp sea salt, leave soaking over night. 2. When ready to start making baked beans, you will need a cast iron pot or ceramic pot with cover. ( Also you can cook these beans in your slow cooker ) 3. Start with chopping your onions and add to the bottom of your cast iron pot. 4. Next drain all water off beans then put beans in a medium boiler with cover and top with new cold water and boil for 1 1/2 hours on medium heat with cover part way opened. 5. When boiling have completed drain water into a container and keep for soup or your baking, then add the beans to your cast iron pot. 6. Then add 5 cups of cold water to your pot, in a small bowl mix together the remainder of your ingredients except your pork. 7. Mix together, then pour over onions and beans in pot, mix together then top with fat pork or bacon. 8. Put lid on bake pot then place in a 325° oven for 3:30 to 4:00 hours, check half way through the bake time add more water if needed then cover and continue baking. 9. This is a serving for eight people if you like more double recipe. Bake beans can take a long time to make, I reduced bake time by adding a extra hour on the boiling process. 10. When baked beans are done remove from heat, serve hot or cold. If you would like to bottle them just follow the canning process. Always label and date your bottles before storing them.
