My husband came up with this recipe by adding cranberries to fried green apples. We thought the colors were perfect for the holidays, and the flavor went well with our Christmas ham.

- In a large saucepan, combine all ingredients. Cook over medium heat for 15-17 minutes or until the apples are tender and the sauce is slightly thickened, stirring occasionally.

- Melt butter in a large skillet over medium heat.
- Stir in sugar, cinnamon, and nutmeg
- Add apple slices and stir.
- Add frozen cranberries.
- Cook until apples are tender, 5 to 8 minutes. The cranberries will start to pop.
- Give it a little taste to see if you want to add the salt. I feel that salt brings out the flavors of the contrasting fruits!
- Serve as a side dish with any meat but especially chicken, fish, and pork.

- Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.
- In a large bowl, mix together apples, cranberries, white sugar, cinnamon and nutmeg. Place evenly into baking dish.
- In the same bowl, combine oats, flour and brown sugar. With a fork, mix in butter until crumbly. Stir in pecans. Sprinkle over apples.
- Bake in preheated oven for 40 to 50 minutes, or until topping is golden brown, and apples are tender.

APPLE FRITTERS -- COOK'S COUNTRY
Regardless of their variety or whether they were sliced or grated, the apples in our Apple Fritters exuded juice and produced soggy, undercooked interiors. We found that the best solution was to dry the apples with paper towels and mix them with the dry ingredients. The dry ingredients sucked up the moisture that would otherwise have leached out during frying. We like Granny Smith apples in these fritters because they are tart and crisp. Apple juice doesn't have enough flavor-you really do need the cider. Penzeys Extra Fancy Vietnamese Cassia Cinnamon is the test kitchen's favorite brand.

- 1. Spread prepared apples in single layer on paper towel-lined baking sheet and pat thoroughly dry with paper towels. Combine flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg in large bowl. Whisk cider, eggs, and melted butter in medium bowl until combined. Stir apples into flour mixture. Stir in cider mixture until incorporated.
- 2. Heat oil in Dutch oven over medium-high heat to 350 degrees. Following step 1, use 1/3-cup measure to transfer 5 heaping portions of batter to oil. Press batter lightly with back of spoon to flatten. Fry, adjusting burner as necessary to maintain oil temperature between 325 and 350 degrees, until deep golden brown, 2 to 3 minutes per side. Transfer fritters to wire rack set inside rimmed baking sheet. Bring oil back to 350 degrees and repeat with remaining batter. Let fritters cool 5 minutes.
- 3. Meanwhile, whisk confectioners' sugar, cider, cinnamon, and nutmeg in medium bowl until smooth. Top each fritter with 1 heaping tablespoon glaze. Let glaze set 10 minutes. Serve.

STIR FRIED APPLES & CRANBERRIES
I am soooo having a blast with making up new recipes. I just made an awesome one this afternoon. I used Arrowroot in this. You can find it in the natural section most likely and it works like cornstarch as a thickener but healthier for you than cornstarch. I am going to try making a pie with this mixture and give it a pecan pie shell with crushed pecans that have been browned in butter and cinnamon. I think it will come out nice.

- I took one med. size green apple, peeled and cored it. Then I chopped it into even pieces about 1/3 of an inch thick. You don't want them too thick or they won't cook nicely.
- Then rinse frozen cranberries in warm water, this thaws them a little. Place apples and cranberries in a big bowl. Set aside.
- In a small bowl or dish mix cinnamon, nutmeg, arrowroot powder, and Stevia. Add mixture to apples and cranberries and toss to coat well. Scrape the bottom of the bowl as you mix; the arrowroot may cause the mix to stick to the bottom of the bowl.
- In a non-stick skillet melt the butter over medium heat. Add apple/cranberry mixture to the pan. Gently stirring frequently. Cook over medium heat for about 2 minutes. Reduce heat to medium low or low and cover.
- Cook additional 6-8 minutes, stirring occasionally, until apples are tender. Don't over cook and don't cook too hot or your cranberries will be really mushy (they should be soft with skins broken).
- Serve warm or chilled. You can serve as is or with sweet coconut cream and or crushed pecans.
