Delicious sausage-and-eggs breakfast is impossibly easy when it's baked all in one pan.

1 package (12 oz) bulk pork sausage
1 small bell pepper, chopped (1/2 cup)
1 medium onion, chopped (1/2 cup)
1 1/2 cups frozen shredded hash brown potatoes
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick™ mix
1 cup milk
1/8 teaspoon pepper
2 eggs

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • In 10-inch skillet, cook sausage, bell pepper and onion over medium heat 8 to 10 minutes, stirring occasionally, until sausage is no longer pink; drain. Mix sausage mixture, potatoes and 1/2 cup of the cheese. Spread in pie plate.
  • In medium bowl, stir Bisquick mix, milk, pepper and eggs until blended. Pour into pie plate.
  • Bake 30 to 35 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese; bake 1 to 2 minutes longer or just until cheese is melted. Let stand 5 minutes before serving.

1 frozen pie crust
8 ounces pork sausage, browned and Drained
1 cup frozen southern style hash brown potatoes, thawed
1/4 cup sliced green onion
1/4 cup red pepper, chopped
1/4 cup sharp cheddar cheese, Shredded
4 large eggs
1/4 cup milk
1/4 teaspoon seasoning salt
1/4 teaspoon fresh coarse ground black pepper

Steps:

  • Preheat oven to 375°F.
  • Place crust on baking sheet.
  • Sprinkle sausage around bottom of crust.
  • Top with potatoes, onions, bell peppers and cheese.
  • Beat eggs, milk, salt and pepper until blended; pour over sausage-potato mixture in crust.
  • Bake 30 minutes or until egg mixture is cooked and crust is lightly browned.
  • Sprinkle with additional cheese and peppers, if desired.
  • Makes 6 servings.

1 (7 ounce) package Jones Dairy Farm All Natural Golden Brown® Sausage Links, cooked according to package directions, cooled and cut into small pieces
5 eggs, beaten
1 (10 ounce) package frozen mixed vegetables, thawed
1 cup shredded Cheddar and Jack cheese
Salt and black pepper
1 egg, beaten

Steps:

  • Preheat oven to 400 degrees F. Place 1 pie crust into an ungreased 9-inch pie plate.
  • Mix prepared sausage, 5 eggs, mixed vegetables and cheese together in bowl; season with salt and pepper. Pour into crust. Top with remaining pie crust and crimp edges to seal. Cut 3 slits in top crust. Brush with remaining 1 beaten egg.
  • Bake for 35 to 37 minutes or until internal temperature reaches 165 degrees F. If needed, cover pot pie with foil to prevent top crust from over browning.
  • Let stand for 10 minutes before cutting and serving.

1 lb country-style breakfast sausage
1 large shallot, minced
1/2 lb fresh mushrooms, sliced
1 (8 ounce) package cream cheese, cut into small chunks
8 large eggs
1/4 cup packaged unseasoned breadcrumbs
1 sheet frozen puff pastry, thawed for 30 minutes (half of a 17.3 oz. pkg.)
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350°.
  • In a big skillet over med-high heat, brown sausage, breaking up with the back of a wooden spoon, until cooked through.
  • Remove from skillet to a paper-towel lined plate.
  • Add shallot to skillet; saute until softened, about 2 minutes.
  • Add in mushrooms; saute until browned, about 6 minutes.
  • Add in cheese and sausage to skillet; cook, stirring, until cheese has melted, about 3 minutes.
  • Spoon into ungreased 8x8x2 inch baking pan.
  • In same skillet, scramble eggs, leaving slightly undercooked; spoon eggs over sausage; sprinkle with breadcrumbs.
  • On a lightly floured surface roll out pastry to a 9-inch square; brush with some melted butter.
  • Place pastry on baking pan, butter side down; crimp edges.
  • Brush with butter; cut 5 steam vents.
  • Bake 30-35 minutes until pastry is golden brown and filling is bubbly.

Found this in a Pillsbury Pot Pie recipe book. OMG this is good! Great for breakfast or brunch. I am listing the entire recipe for 8 people, but since it was just two of us I cut the recipe in half. Great way to get rid of leftover ham!

3 tablespoons vegetable oil
1 (20 ounce) bag refrigerated shredded hash browns
1 cup shredded cheddar cheese or 1 cup swiss cheese
8 eggs
1 tablespoon fresh chives
1/2 teaspoon salt or 1/2 teaspoon salt substitute
1/4 teaspoon ground pepper
1 1/2 cups cubed cooked ham
3 ounces cream cheese, cut into small cubes
1 (8 count) Pillsbury Refrigerated Crescent Dinner Rolls

Steps:

  • Heat oven to 375. Spray an 11x7 inch glass baking dish (2 Quart) with cooking spray. Cook hashbrowns according to the directions on the package. Remove hashbrowns and arrange in the bottom and around sides of casserole dish. Sprinkle cheese over potatoes.
  • In a bowl beat eggs. Stir in chives salt pepper and ham. Cook and stir over medium heat until partially cooked. Stir in cream cheese, cook and stir until eggs are cooked but moist. Spred over cheese and potatoes.
  • Seperate crescent rolls into triangles and roll half way. Arrange over eggs with tips in the center.
  • Bake 20-25 minutes or until crust is golden brown.

2 tsp olive oil
1 small onion , chopped
6 pork sausages
250g chestnut mushroom , halved
1 tbsp wholegrain mustard
4 tbsp low-fat crème fraîche
small bunch parsley , chopped
85g ciabatta , torn into small chunks

Steps:

  • Heat half the oil in a large frying pan. Add the onion and cook for 5 mins until softened, then push to one side. Squeeze the meat from the sausages and roll into balls. Add to the pan and fry for 5 mins until golden. Add the mushrooms and cook for 5 mins more until softened.
  • Season, then stir in the mustard, crème fraîche and 4 tbsp water. Bubble for 2 mins, then remove from the heat and scatter in the parsley.
  • Heat oven to 200C/180C fan/gas 6. Transfer sausage mixture to 2 small pie dishes or 1 large baking dish. Toss the ciabatta in the remaining oil, scatter over the top of the pies and bake for 20 mins until golden and bubbling.

12 eggs
2 minced garlic cloves
2 leeks, cleaned and chopped (discarding leaves)
2 celery ribs (chopped)
1 sprig rosemary (finely chopped)
1 lb bulk breakfast sausage (browned and drained)
3 tablespoons unsalted butter
1/2 cup parmesan cheese (grated)
1/2 cup all-purpose flour
1 quart milk
salt and pepper

Steps:

  • Directions:.
  • Melt butter in a large heavy bottomed pot (Dutch oven or stock pot) over medium heat. Add leeks, carrots, celery, garlic, and rosemary and saute until vegetables soften (about 10 min.). Stir in flour and continue to cook until the flour is well incorporated. At this point, stir in the cooked sausage, milk and parmesan cheese. Bring to a boil and then reduce heat and allow to simmer (stirring occasionally) until the gravy thickens (about 10-15 min.). Season with salt and pepper to taste.
  • Assembly:.
  • Pour thickened gravy into a medium sized casserole dish. Top with scrambled eggs. Cover the casserole dish with the puff pastry dough, crimping the dough around the edge of the dish. Lightly brush the pastry dough with egg wash. Place in preheated oven (400 degrees) and bake for approximately 30 minutes or until the pastry is golden brown.

  • Bake puff pasties according to package directions. Remove from oven and allow to completely cool. Remove the top center of each pastry and set pastry shells and tops aside, you will use them both.
  • Prepare Smithfield sausage patties according to package directions. I chose the stovetop method, cooking over medium heat for about 9 minutes. I continuously flipped the sausages so each side cooked evenly.
  • Once sausage patties are cooked, put them into the center of each puff pastry, like pictured. Place the pastry centers on top of each sausage; the sausage patty should be completely covered. Place each pot pie on a serving plate.
  • In a medium saucepan over medium heat, melt the butter. Add the flour and stir until smooth. Slowly mix in the milk. Season with rosemary, salt, and pepper. Bring this mixture to boil. Reduce heat to low and cook for 3 or 4 minutes - stirring often - until thickened.
