I made the recipe up with leftovers I had one day. It's a ham and potato based soup with leeks, onions, rosemary, cream, bacon, and carrots. The ham and bacon give this soup a smoky taste while the cream gives it a rich texture. Chowder is better served the next day.

8 cups chicken or ham stock
4 cups cubed Country ham
4 tablespoons dried rosemary
2 pounds bacon, diced
2 large onions, diced
3 leeks, diced
3 cloves garlic, minced
6 green onions, diced
6 large potatoes, cubed
1 pound carrots, cubed
1 ½ cups heavy cream

Steps:

  • Pour stock into a large pot set over medium heat, and bring to a simmer. Stir in the cubed ham and 2 tablespoons rosemary.
  • In a large skillet over medium heat, cook diced bacon until crisp. With a slotted spoon, remove bacon, and add to pot. Drain half of the bacon grease, and return skillet to medium heat. Stir in onions, leeks, garlic, and green onions; cook until tender, then add to pot.
  • Place cubed potatoes, carrots, and 2 tablespoons rosemary in pot; simmer until vegetables are tender, about 20 minutes. Turn off heat, and add cream to pot.

1 cup thinly-sliced onion
2 tablespoons butter
1 cup diced cooked potato
2 cups cooked corn, drained (15 oz. can)

2 1/2 cups milk
salt and pepper

Steps:

  • Cook onion in butter til soft, not brown.
  • Combine with all else, and heat.
  • Serve.

Delicious, very modifiable chowder. Serve this with a salad and rolls or beer bread. Yum! Consider this a basic recipe that can be modified according to specific tastes and needs. Carrots and celery can be added when cooking the potatoes if desired. Bacon would be delicious in this as well.

½ cup chopped onion
2 cloves garlic, chopped

  • Bring water, potatoes, onion, garlic, salt, and pepper to a boil in a large saucepan. Reduce heat, cover with a lid, and simmer until vegetables are just tender, 8 to 10 minutes. Remove saucepan from heat.
  • Melt butter in a separate large saucepan over medium heat. Stir flour into melted butter until smooth. Gradually stir milk into butter-flour mixture; bring to a boil. Reduce heat and simmer, stirring constantly, until thickened, about 2 minutes.
  • Stir cream cheese and Cheddar cheese into milk mixture until melted. Pour potato mixture, including liquid, into milk-cheese mixture; add corn and ham. Cook, stirring occasionally, until soup is heated through, 10 to 15 more minutes.

1 ¾ cups chicken broth
½ cup sliced carrots

1 medium onion, finely chopped

¼ cup peach preserves
2 tablespoons prepared mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a roasting pan with aluminum foil.
  • Set ham into the prepared roasting pan and pierce several times with a fork.
  • Stir brown sugar, peach preserves, and mustard together in a bowl; spread over the ham. Cover the ham with a sheet of aluminum foil.

4 cups thinly sliced leeks (white and light-green parts only, well washed)
2 cups low-sodium chicken broth
2 1/2 cups chopped red potatoes (about 1 pound)

1 1/2 cups baby spinach
1/3 cup heavy cream

Steps:

  • Heat the oil in a large pan and fry the leeks over a low heat for 3 mins until softened. Stir in the potatoes and flour, then slowly blend in the milk, stirring with a wooden spoon. Bring to the boil and simmer, uncovered, for 10-12 mins until the potatoes are soft.

My mother found this recipe in the 1999 edition of The Best of Country Cooking. I could not get enough of this soup! It goes great with corn bread. From the book: "We also call this 2-day Bean Chowder, since it can be started in the afternoon, chilled overnight, and finished off the next day--if you can wait to taste it!"

1 lb dried great northern beans
2 cups chopped onions
1 cup sliced celery
2 minced garlic cloves
3 tablespoons butter or 3 tablespoons margarine
1 meaty ham bone
2 cups water
1 (14 1/2 ounce) can chicken broth
1 (14 1/2 ounce) can stewed tomatoes
2 bay leaves
2 whole cloves
1/2 teaspoon pepper
2 cups milk
2 cups shredded cheddar cheese

Steps:

  • Place beans in a Dutch oven or soup kettle.
  • Add water to cover by 2 inches.
  • Bring to a boil; boil for 2 minutes.
  • Remove from heat; cover and let stand for 1 hour.
  • Drain beans and discard liquid.
  • In same kettle, saute onion, celery, and garlic in butter until tender.
  • Add beans, ham bone, water, broth, tomatoes, bay leaves, cloves, and pepper; bring to a boil.
  • Reduce heat; cover and simmer for 2 hours.
  • Remove ham bone; bay leaves, and cloves.
  • When cool enough to handle, remove ham from bone; cut into small pieces and return to soup.
  • Chill for 8 hours, or overnight.
  • Skim fat from soup.
  • Stir in milk; cook on low until heated through.
  • Just before serving, stir in cheese.
  • ENJOY!

2 Tbsp butter
1 medium yellow onion ((chopped))
1 large carrot ((chopped))
2 ribs celery ((chopped))
1/2 c leek ((chopped))
2 Tbsp garlic ((finely minced or crushed))
1 cube Knorr chicken bouillon
2 tsp thyme ((dried or fresh))
1 pinch each, salt & pepper ((adjust to taste))
6 large russet potatoes ((diced or cubed, peeled or not))
4 cups ham ((diced or cubed))
8 cups chicken broth ((or ham stock from ham bone))
1 1/2 cups heavy cream

Steps:

  • In a large stock pot, add butter and melt over medium heat. Add onion, carrots, celery, leek, and garlic. Saute until onions are softened and becoming translucent, about 3-4 minutes.
  • Add seasoning (bouillon cube, thyme, salt and pepper), potatoes, ham and chicken or ham stock. Adjust heat to medium high and bring to a low rolling boil.
  • Reduce heat and simmer for 20 minutes, or until potatoes are fork tender. Use a masher, if desired to break up your potatoes.
  • Stir in the heavy cream and serve. Garnish with chopped green onion or chives, bacon or fried ham, and cheddar cheese.
  • Add chopped vegetables (onion, celery, carrots, leek, garlic), seasoning (bouillon cube, thyme, salt and pepper), potatoes, ham and chicken or ham stock to your crock pot or slow cooker.
  • Cover and cook on the low setting for 8 hours, or until the potatoes are fork tender.
  • Stir the heavy cream into the soup in your slow cooker. Return the cover and cook on high setting for 20 minutes before serving. Garnish with chopped green onion or chives, bacon or fried ham, and cheddar cheese.

6 ears corn, shucked
5 tablespoons unsalted butter
4 sprigs thyme
1 large onion, diced
3 stalks celery, thinly sliced
1 large clove garlic, minced
Kosher salt
1 8-ounce ham steak, diced
2 large russet potatoes, peeled and cut into 1-inch cubes
6 scallions, chopped
2/3 cup heavy cream

Steps:

  • Slice the corn kernels off the cob and reserve the cobs. Heat 4 tablespoons butter in a large pot over high heat. Add the thyme, onion, celery, garlic, 1 teaspoon salt and all but 1/2 cup each corn kernels and ham; cook 1 minute. Add the potatoes, corn cobs and 5 cups water. Cover and cook until the potatoes are very tender, 20 to 25 minutes.
  • Meanwhile, heat the remaining 1 tablespoon butter in a skillet over medium-high heat. Add the reserved corn kernels and ham and cook until the ham is browned, about 6 minutes. Add the scallions and cook until softened, about 1 minute.
  • Remove the corn cobs from the soup and discard. Stir in the heavy cream and cook until heated through, about 1 minute. Ladle the soup into bowls and top with the corn-ham mixture.

2 medium potatoes, cut into 1/2 - inch cubes
3 tablespoons butter or 3 tablespoons margarine
3/4 cup finely chopped onion
1/4 cup finely chopped carrot
1/4 cup finely chopped celery
3 tablespoons all-purpose flour
2 1/2-3 cups milk
1/4 teaspoon salt and pepper (optional)
2 teaspoons dijon-style mustard (I usually leave this out ) (optional)
1 cup finely chopped ham (i add extra ham )
1 1/2 cups grated sharp cheddar cheese (you can use medium cheddar instead)

Steps:

  • Simmer potatoes in 3/4 cup of water in a covered saucepan for about 10 minutes or until tender. Teserve any liquid for soup.
  • Melt butter in a large saucepan. Sauté onion carrot and celery until golden and soft. Do not brown.
  • Stir in flour and cook for 2 minutes, stirring well.
  • Add milk potatoes with liquid, pepper salt and mustard if used. bring to a simmer.
  • Add ham and cheese. Cook over low heat for 5 minutes.
  • Serve hot or keep warm over very low heat with lid until ready to serve.

1 onion, diced
3 red potatoes, quartered, or more to taste
½ cup cubed cooked ham, or to taste
3 cups heavy whipping cream
1 (15 ounce) can creamed corn
1 (12 ounce) package frozen corn kernels
1 cup 2% milk
½ cup water
1 cube chicken bouillon
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground ginger
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium heat; cook and stir onion until translucent, 5 to 10 minutes. Add potatoes and ham to onion; cook and stir until ham is heated through, about 5 minutes.
  • Mix whipping cream, creamed corn, frozen corn kernels, milk, water, chicken bouillon, garlic powder, onion powder, and ground ginger into onion-potato mixture; cook over medium-high heat until potatoes are softened, 30 to 45 minutes. Season soup with salt and pepper.
