COTTAGE PUDDING WITH ORANGE SAUCE
I have one son who is crazy for carrots. This recipe kind of reminds me of his favorite, carrot souffle.

Steps:
- Heat oven to 350. Grease and flour an 8- or 9-inch square pan.
- Mix all ingredients except those for the Orange Sauce in a medium bowl with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 3 minutes, scraping bowl occasionally. Pour into pan.
- Bake 30 to 35 minutes or until toothpick inserted in center comes out clean.
- For sauce, mix sugar and flour in 2-quart saucepan. Gradually stir in water. Cook over medium heat, stirring constantly with wire whisk, until mixture thickens and boils. Boil and stir 1 minute; remove from heat. Stir in butter and orange juice. Serve immediately over warm pudding.

COTTAGE PUDDING WITH BROWN SUGAR SAUCE
I don't know why this is called a pudding because it is really a cake that lends itself to any flavor of sauce. I happen to like it with a brown sugar sauce. This recipe is passed down from my Canadian mother.

Steps:
- To make cake, in small bowl stir flour, baking powder, and salt together; set aside.
- In mixing bowl cream shortening and sugar together.
- Beat in egg and vanilla until light and fluffy.
- Add dry ingredients to creamed mixture alternately with milk.
- Pour into greased 9-inch square pan.
- Bake in preheated 350 degree oven for 35 to 40 minutes or until cake tests done with toothpick.
- Serve warm with Brown Sugar Sauce.
- While cake is baking make sauce.
- To make sauce, in saucepan, over low heat, melt butter.
- Blend in flour, brown sugar, and salt.
- Gradually stir in water and cook on medium heat, stirring constantly until thickened.
- Remove from heat and stir in vanilla.
- Serve immediately with Cottage Pudding by spooning over individual servings of cake.

COTTAGE PUDDING
My mother has been making this recipe for years and her mother before her. It's not really pudding, but is more like a yellow cake with berries in it. My family always uses black raspberries and we usually sit down and eat it for a meal. But it could also be used as dessert or maybe a snack. It's best served warm, with milk poured overtop of it!

- Cream sugar, crisco and eggs.
- Mix flour, baking powder and salt.
- Add altenately wtih milk and vanilla.
- Add berries last.
- Pour batter into greased and floured 9" by 13" pan.
- Bake 375 for 45 minutes.

Steps:
- Preheat the oven to 400* (F).
- Butter and lightly flour an 8-inch square cake pan.
- Mix the flour, baking powder, salt, and sugar together in a large bowl.
- Melt the butter in a small pan, remove from heat, and whisk in the milk and egg, beating well.
- Add to the flour mixture and blend.
- Pour into prepared pan and bake for about 25 minutes, or until toothpick inserted in center comes out clean.
- Cool in pan for 5 minutes.
- Turn out onto wire rack.
- Serve warm with lemon sauce/vanilla sauce, or your favorite thick chocolate sauce.
- For Lemon/Vanilla Sauce: Mix the sugar and cornstarch together in a small bowl.
- Add sugar mixture to boiling water, stirring constantly.
- Boil 5 minutes.
- Remove from heat and swirl in the butter, lemon juice and rind OR vanilla extract, and pinch of salt.
- Serve warm.
