THE BEST COTTAGE PIE

The Best Cottage Pie image

The Best Cottage Pie Recipe ~ ground meat with veggies and gravy under a glorious crown of golden potatoes ~ Cottage Pie and its cousin Shepherd's Pie are the crown jewels of Irish and British country cooking and everyone should know how to make one.

Provided by Sue Moran

Categories     Main Course

Number Of Ingredients 15

2 Tbsp olive oil
2 leeks (trimmed, thinly sliced, and washed)
1 bunch thin young carrots or 2 regular sized (trimmed, peeled and sliced)
1 and 1/2 lb ground beef short ribs (you can use regular ground beef as well)
2 Tbsp tomato paste (I always keep a tube in the fridge)
2 Tbsp Dijon mustard
1 Tbsp Worcestershire sauce
1 cup good beef stock or bone broth
a sprinkle of Wondra flour (a quick dissolving flour optional)
salt and fresh cracked black pepper to taste
1 and 1/2 lb russet potatoes (peeled and cut in chunks)
1/2 cup buttermilk
4 Tbsp unsalted butter (divided)
1 cup shredded sharp cheddar cheese
salt and pepper to taste

Steps:

  • Preheat oven to 350F
  • Heat the oil in a skillet and sauté the leeks and carrots for about 5 minutes. Remove to a plate.
  • Brown the ground beef, breaking it up as it browns so it has a nice crumbly texture. If it's excessively greasy, drain some off. I didn't, I like to retain the fat for flavor unless there's a ton of it.
  • Stir in the tomato paste, mustard, Worcestershire sauce, and broth to combine. Bring up to a simmer and let simmer gently for 15 to 20 minutes to allow the broth to reduce. Season to taste with salt and pepper. If your gravy is very thin you might want to stir in a sprinkling of Wondra flour, about a teaspoon to start, which will thicken it up instantly. Be sparing with it, a little will do.
  • Add the vegetables back into the pan and mix well. Turn the mixture into a large pie plate or casserole dish. Spread out evenly.
  • Meanwhile boil the potatoes until very tender. Drain and mash with the buttermilk and 3 tablespoons of the butter. Add more buttermilk if the potato mixture seems dry. Fold in the cheese and season with a little salt and pepper if needed.
  • Spread the mashed potatoes over the top of the pie. Melt the remaining 1 tablespoon butter and gently brush over the mashed potatoes.
  • Put the baking dish on a baking sheet to catch any drips, and bake for about 50 minutes, or until browned and bubbling.

COTTAGE PIE

Cottage Pie image

A traditional cottage pie is made with ground beef and topped with mashed potatoes. We used potato slices, which saves time and looks good, too. For a shepherd's pie, use lamb. Or, try a turkey twist: Add 2 cups finely minced turkey meat along with the peas.

Time 1h15m

Number Of Ingredients 11

3 tablespoons unsalted butter, melted
1 large yellow onion, diced medium
2 large carrots, cut into 3/4-inch pieces
Coarse salt and ground pepper
2 tablespoons tomato paste
1 pound ground beef or lamb
2 teaspoons fresh thyme leaves
1 cup dark (porter) beer
2 tablespoons all-purpose flour
3/4 cup frozen peas
1 large russet potato (3/4 pound), very thinly sliced

Steps:

  • Preheat oven to 400 degrees. In a large skillet, heat 1 tablespoon butter over medium-high. Add onion and carrots and cook, stirring often, until onion is soft, 5 minutes. Season with salt and pepper and stir in tomato paste. Add meat and cook, breaking up with a wooden spoon, until almost cooked through, 3 minutes. Add thyme and beer and bring to a boil. Cook, stirring frequently, until slightly reduced, 2 minutes. Sprinkle flour over mixture and stir to combine. Add 1 cup water and cook until mixture thickens, about 2 minutes. Stir in peas and season with salt and pepper.
  • Transfer mixture to a 2-quart baking dish. Top with potatoes, overlapping slices. Season potatoes with salt and pepper and drizzle with 2 tablespoons butter. Bake until potatoes are browned around edges and tender when pierced with a knife, 40 to 45 minutes. Let cool 10 minutes before serving.

COTTAGE PIE

Cottage pie image

This great-value family favourite freezes beautifully and is a guaranteed crowd-pleaser

Provided by Good Food team

Categories     Dinner, Main course

Time 2h25m

Number Of Ingredients 18

3 tbsp olive oil
1 ¼kg beef mince
2 onions, finely chopped
3 carrots, chopped
3 celery sticks, chopped
2 garlic cloves, finely chopped
3 tbsp plain flour
1 tbsp tomato purée
large glass red wine (optional)
850ml beef stock
4 tbsp Worcestershire sauce
few thyme sprigs
2 bay leaves
1.8kg potatoes, chopped
225ml milk
25g butter
200g strong cheddar, grated
freshly grated nutmeg

Steps:

  • Heat 1 tbsp olive oil in a large saucepan and fry 1¼ kg beef mince until browned - you may need to do this in batches. Set aside as it browns.
  • Put the other 2 tbsp olive oil into the pan, add 2 finely chopped onions, 3 chopped carrots and 3 chopped celery sticks and cook on a gentle heat until soft, about 20 mins.
  • Add 2 finely chopped garlic cloves, 3 tbsp plain flour and 1 tbsp tomato purée, increase the heat and cook for a few mins, then return the beef to the pan.
  • Pour over a large glass of red wine, if using, and boil to reduce it slightly before adding the 850ml beef stock, 4 tbsp Worcestershire sauce, a few thyme sprigs and 2 bay leaves.
  • Bring to a simmer and cook, uncovered, for 45 mins. By this time the gravy should be thick and coating the meat. Check after about 30 mins - if a lot of liquid remains, increase the heat slightly to reduce the gravy a little. Season well, then discard the bay leaves and thyme stalks.
  • Meanwhile, make the mash. In a large saucepan, cover the 1.8kg potatoes which you've peeled and chopped, in salted cold water, bring to the boil and simmer until tender.
  • Drain well, then allow to steam-dry for a few mins. Mash well with the 225ml milk, 25g butter, and three-quarters of the 200g strong cheddar cheese, then season with freshly grated nutmeg and some salt and pepper.
  • Spoon the meat into 2 ovenproof dishes. Pipe or spoon on the mash to cover. Sprinkle on the remaining cheese.
  • If eating straight away, heat oven to 220C/200C fan/gas 7 and cook for 25-30 mins, or until the topping is golden.
  • If you want to use a slow cooker, brown your mince in batches then tip into your slow cooker and stir in the vegetables, flour, purée, wine, stock, Worcestershire sauce and herbs with some seasoning. Cover and cook on High for 4-5 hours. Make the mash following the previous steps, and then oven cook in the same way to finish.

COTTAGE PIE (OR SHEPHERD'S PIE)

Cottage Pie (or Shepherd's Pie) image

Easy Cottage Pie made with a mixture of ground beef, ground sausage, and mixed vegetables in a delicious gravy and baked under a layer of fluffy mashed potatoes.

Provided by Lauren Allen

Categories     Main Course

Time 1h30m

Number Of Ingredients 25

1 lb lean ground beef
1 lb ground sausage ((I use Jimmy Dean pork sausage))
1 teaspoon salt
1/2 teaspoon black pepper
1 small yellow onion (, chopped)
2 ribs celery (, chopped)
1-2 carrots (, chopped (about 1 cup))
3 cloves garlic (, minced)
1/4 cup white flour
2 1/2 cups beef broth
2 tablespoons tomato paste
1 cube beef bouillon
2 tablespoons Worcestershire sauce
1 teaspoon fresh thyme (, chopped (or ¼ teaspoon dried thyme))
1 teaspoon fresh rosemary (, chopped (or ¼ teaspoon dried rosemary))
2 bay leaves
½ cup frozen corn
½ cup frozen peas
2 1/2 pounds potatoes (, Yukon gold or russet potatoes)
¼ cup sour cream
½ cup milk
4 tablespoons butter
Salt and pepper (, to taste)
½ cup freshly shredded parmesan cheese
½ cup shredded cheddar cheese (, for topping)

Steps:

  • Preheat the oven to 375 degrees F.
  • Make mashed potatoes: Add potatoes to a saucepan with 3 inches of water. Cover and bring to a boil. Cook until fork tender, about 12-15 minutes.
  • Drain the water and leave the potatoes in the pot. Cover with the lid and allow to steam for a few minutes.
  • Mash the potatoes lightly with a potato masher (avoid over-mixing the potatoes). Add butter, sour cream, milk, parmesan cheese and salt and pepper and stir just until smooth. Set aside.
  • Make the meat filling: In a large, oven-safe* 12 inch skillet with sides, add the ground beef and ground sausage (or ground lamb, to make shepherd's pie). Season with salt and pepper.
  • Cook over medium heat until browned, breaking the meat into small pieces with a wooden spoon as it cooks. Drain some of the grease (reserving some in the pan) and remove meat to a plate.
  • Add the onion, celery and carrots to the pan and saute for about 5-8 minutes, until tender. Add garlic and flour and toss to combine. Cook for 1 minute.
  • Add the beef broth, tomato paste, Worcestershire sauce, herbs and bay leaves and stir to combine.
  • Bring to a simmer and cook for 5 minutes. Taste and add extra seasonings, if needed. Remove bay leaves and stir in frozen peas, corn and cooked meat.
  • Assemble the pie: Spoon the mashed potatoes over the meat mixture to completely cover the top. Sprinkle with shredded cheddar cheese.
  • Bake for about 30 minutes, until golden and bubbling. Allow to cool for 15 minutes before serving, to allow the gravy sauce in the meat mixture to cool and thicken.

JAN'S CHEESY GNOCCHI

Jan's Cheesy Gnocchi image

Tender cheesy gnocchi using Lactaid® cottage cheese instead of ricotta makes a delicious lactose-free dinner.

Provided by Lactaid

Categories     Trusted Brands: Recipes and Tips     LACTAID®

Time 1h22m

Yield 4

Number Of Ingredients 7

1 (16 ounce) container LACTAID® Cottage Cheese
2 eggs
½ cup non-dairy Parmesan cheese substitute
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 cup all-purpose flour, plus more for rolling out dough

Steps:

  • Place cottage cheese in a mesh strainer over a bowl. Let drain for 2 hours, stirring occasionally, pressing any liquid out. You should be able to express 1/2 cup of liquid. Discard liquid.
  • Mix drained cottage cheese, eggs, non-dairy Parmesan cheese substitute, salt, pepper, garlic powder and flour together in a bowl. Stir until mixture is well combined and forms a very soft, sticky dough.
  • Scrape cheese into a ball and lightly dust with flour. Cover with plastic wrap and refrigerate for 1 hour.
  • Divide the dough into 4 pieces. On a lightly floured surface, roll each piece into a 1/2-inch thick rope. Cut each rope into 1-inch pieces, and place on a lightly floured baking sheet. Roll the gnocchi down the tines of a fork or a gnocchi board to create ridges and return them to the floured baking sheet. Refrigerate until ready to use.
  • Bring a large pot of salted water to a boil. Add the gnocchi and gently stir the pot. Cook the gnocchi until they float to the top surface of the water, about 2 minutes. Drain well and serve with your favorite sauce.
