2 tablespoons good olive oil
1 tablespoon light brown sugar
1/2 teaspoon kosher salt, plus extra for sprinkling

Steps:

  • Preheat the oven to 450 degrees.
  • Halve the sweet potatoes lengthwise and cut each half into 3 long spears. Place them on a sheet pan and toss with the olive oil. Spread the potatoes in one layer. Combine the brown sugar, salt, and pepper and sprinkle on the potatoes. Bake for 15 minutes and then turn with a spatula. Bake for another 5 to 10 minutes, until lightly browned. Sprinkle lightly with salt and serve hot.

2 tablespoons olive oil, canola oil or melted unsalted butter
Kosher salt
Freshly ground black pepper
Paprika or desired spices, for sprinkling (optional)
Ketchup and/or ranch dressing, for serving (optional)

Steps:

  • Preheat the oven to 375 degrees F. Line a rimmed baking sheet with parchment paper.
  • Peel the sweet potatoes and cut them into 1/2-inch thick wedges.
  • Put the potatoes in a large bowl and drizzle with the oil. Season with salt, pepper and your choice of other spices, if using, and toss to coat. Arrange the potatoes in a single layer on the prepared baking sheet.
  • Roast the potatoes, flipping once if their bottoms darken quickly, until tender and crispy, about 20 minutes, depending on their size. Serve with ketchup and/or ranch, if desired.

1/2 cup Cotija cheese
olive oil to coat, approximately 1/4 cup

Steps:

  • Preheat oven to 450 degrees F. Slice Sweet potatoes into ¼x1/4 inch thick wedges. Coat sweet potato slices lightly with olive oil. Combine garlic powder, pepper, salt and Cotija cheese together in a large bowl. Toss in oil-coated sweet potatoes and cover to coat them with seasoning. Spray two 18x13 inch cookie sheets with cooking spray. Evenly distribute sweet potato slices in a single layer across the cookie sheets. Bake at 450 degrees F for 25-30 minutes until cooked to desired doneness. Remove and let cool 5 minutes on cookie sheets before trying to remove.

6 large sweet potatoes, peeled and cut into steak fries
2 teaspoons salt
garlic powder
cinnamon

Steps:

  • Preheat oven to 425 degrees.
  • Put cut fries into large ziploc bag with olive oil, put in salt, garlic and cinnamon and shake to coat.
  • Place fries onto baking sheet leaving space between fries.
  • Put in oven for 10 minutes and then flip them over.
  • Place back in for 10 more minutes.
  • They should be soft on the inside and browned on the outside.
  • Let cool for 5 minutes.
  • You may also use regular potatoes or 1/4 packet taco seasoning to alter taste to your liking.

2 red onions, thinly sliced
1 tablespoon balsamic vinegar
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 1/2 pounds sweet potatoes or garnet yams (about 3 medium), scrubbed, unpeeled and cut into 1/4-inch-by-4-inch fries, soaked in ice water
Canola oil or vegetable oil
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1/4 cup (1/2 stick) unsalted butter, at room temperature
1 tablespoon chopped fresh thyme
3 cloves garlic, minced
8 ounces shredded fontina, for serving

Steps:

  • For the caramelized onions: Heat the oil over medium heat in a large nonstick skillet. Add the onions, vinegar, salt and pepper, stirring occasionally, until the onions are deep golden brown, about 20 minutes.
  • Fries: Drain the potatoes and dry completely on a clean kitchen towel. In a large heavy-bottomed saucepan, pour enough oil to fill the pan about a third of the way. Heat over medium-high heat until a deep-frying thermometer inserted in the oil reaches 375 degrees F. (If you don't have a thermometer a cube of bread will brown in about 5 minutes.)
  • While the oil is heating, in a large bowl, whisk together the flour, baking powder, baking soda, salt and 2 1/2 cups water until smooth. Coat the potatoes in the batter. Transfer 8 to 10 potatoes to the oil, allowing any excess batter to drip back into the bowl. Fry until golden and crisp, 5 to 6 minutes. Drain on paper towels. Repeat with the remaining potatoes.
  • For the sauce: In a small skillet, melt the butter over low heat. Add the thyme and garlic and cook for 2 minutes. Pour the sauce over the fries and gently toss until coated.
  • Place the fries on a platter and spoon the onions on top. Sprinkle with fontina and serve immediately.

1 tsp olive oil
1 tsp sweet smoked paprika or other seasonings such as Cajun seasoning, BBQ seasoning or garlic granules
½ tsp mixed herbs

Steps:

  • Peel the sweet potatoes and slice into ½ cm sticks. Put in a bowl, drizzle over the oil and give them a good toss to coat. Sprinkle over the paprika, mixed herbs and ½ tsp each of salt and pepper, then give it all a good mix with your hands to ensure it's evenly coated.

  • While the oil is heating up, fill a large bowl with ice water. Place a cooling rack on a baking sheet lined with paper towels. Cut the potatoes into 1/4-inch to 1/3-inch matchsticks. Add them to the ice water immediately after cutting, stirring occasionally to make sure the potatoes are not sticking to each other.
  • Remove about a quarter of the potatoes from the water. Pat dry with clean kitchen towels or paper towels. Once dry, carefully add them to the hot oil and fry for 2 to 3 minutes, stirring with tongs or a spider to make sure they aren’t sticking to each other. The fries should start to look creamy and matte in color. If they begin to brown, take them out. Transfer the fries to the baking sheet with the cooling rack and repeat the process with the remaining potatoes.
  • When all the potatoes have been fried and transferred to the baking sheet with the rack, raise the heat of the oil to 375°F to 400°F, or raise the heat under the casserole to medium-high.
