WHIPPED FROSTING I
A light tasting whipped frosting suitable for filling a rolled cake or whoopee pies. Great on angel food cake. Never fails as long as you don't let it cool uncovered or a skin will form on the paste.

Steps:
- In a small saucepan, mix milk into flour gradually to prevent lumps. Cook, stirring constantly over low heat until thick. Cover with waxed paper and cool completely or set in bowl of ice water and stir until cooled.
- In mixer bowl, combine shortening and margarine, beat 4 minutes. Add sugar; beat 4 minutes. Add cooled paste and vanilla and beat well.

- Using both a chilled bowl and chilled beaters, beat the cream until frothy.
- Add the icing sugar and vanilla gradually while beating.
- Whip until light and a thick enough consistency to spread as an icing.
- Use immediately.

Steps:
- Preheat oven to 350 degrees.
- Mix graham cracker crumbs, 2 Tbl. sugar, cinnamon, and melted butter.
- Line an 8" or 8 1/2" springform pan with crumb mixture on bottom and insides of pan.
- Refrigerate until ready to fill.
- Whip egg whites until stiff and dry.
- Beat cream cheese with beaters until soft.
- Add 1 cup sugar, and blend.
- Beat in egg yolks, one at a time.
- Blend in sour cream, flour, vanilla,and lemon extract.
- Fold in whipped egg whites, and then pour into prepared pan.
- Place cheesecake in oven in a shallow pan of hot water, and bake for one hour and 20 minutes.
- Turn off oven, leaving the cake inside.
- Allow it to cool off in the oven for 1-2 hours.
- Remove from oven, and let stand.
- When at room temperature, refrigerate overnight.
- Store any leftovers in the refrigerator.

I love Costco cakes...and their fillings are soooo yummy. I found this on another site and doctored it up a bit. It can be any flavor you want or need!

- Combine all in a bowl and mix with hand blender until smooth and thick.
- For Vanilla - Use Vanilla flavored pudding.
- For Milk Chocolate - Use chocolate pudding.
- For dark chocolate - Use chocolate pudding and add 2 T cocoa powder (or more to your liking).
- For cheesecake flavored - Use cheescake pudding.
- Be sure to use it on cooled layer cakes and refrigerate it after it is mixed and/or on the cake. You can use fat free milk if you want to but it is no where near as rich, thick and creamy.
