Spinach and Basil Salad With Pine Nut Dressing image

This salad has fresh spinach and basil leaves and is topped with a creamy pine nut dressing. From the R.S.V.P. section of a May 1989 issue of Bon Appetit. It was requested from Woodrow's Bar and Grill in Princeton, New Jersey.

1 1/4 cups pine nuts, toasted (about 6 1/2 oz.)
1/2 beaten egg 2 t. minced shallot (or green onion)
3/4 teaspoon fresh lemon juice
1/2 cup olive oil
3 tablespoons balsamic vinegar (or red wine vinegar)
salt & freshly ground black pepper
1 1/4 lbs spinach, stemmed
1 small bunch basil, stemmed
3 tablespoons water (optional)
4 ounces piece parmesan cheese, cut into shavings with a vegetable peeler

Steps:

  • Dressing:.
  • Puree 1/2 cup pine nuts in processor; add egg, shallot and lemon juice and puree.
  • Gradually add oil and vinegar alternately through feed tube and blend until smooth; season to taste with salt and pepper.
  • (Can be prepared 1 day ahead. Cover and refrigerate.).
  • Salad:.
  • Toss spinach and basil in large bowl .
  • Thin dressing with water if desired and spoon enough dressing over greens to season to taste and toss.
  • Divide greens among plates, top with cheese and remaining pine nuts and serve.

A very nice low-fat salad from Rosie Daley. I've also made this substituting the balsamic vinegar with a Champagne vinegar that was good too.

6 navel oranges, chilled
4 cups spinach, trimmed (1 large bunch)
1 1/2 cups watercress, trimmed (1 bunch)
1 tablespoon pine nuts
1/3 cup shallot, minced (2-3)
2 garlic cloves, minced
5 tablespoons white balsamic vinegar
2 teaspoons sherry wine
black pepper

Steps:

  • Peel the oranges and remove the white pith.
  • Over a bowl positioned to catch the juice, separate the segments of each orange from the membrane with a sharp knife, discarding the seeds, and set them aside.
  • Squeeze the residual juice from the membranes into the bowl and reserve.
  • Combine the spinach and watercress in a mixing bowl.
  • Put the pine nuts in a small saute pan and cook over medium heat for about 6 minutes, shaking the pan occasionally, until the nuts are golden brown.
  • Transfer the pine nuts to a small bowl.
  • Put the shallots, garlic, vinegars, and reserved orange juice into the saute pan.
  • Bring to a boil over low heat.
  • Stir in the black pepper, then pour the dressing over the spinach and watercress.
  • Toss to coat.
  • Arrange the mixture on salad plates, spoon orange segments atop each, and garnish with the pine nuts and, if you like, orange wheels.

this is such an easy low carb recipe. It comes from the 'Dr Atkins quick and easy new diet cookbook'. theres 18g per serving, but these come from the nuts, so exclude them if you're in the first few weeks.

2 tablespoons olive oil
4 slices streaky bacon, cut into 1 cm pieces
2 tablespoons pine nuts
2 cloves garlic, finely chopped
1 lb spinach leaves, trimmed,washed and spun dry
1 tablespoon balsamic vinegar
1 tablespoon grated parmesan cheese

Steps:

  • Heat 1 tbsp of oil in heavy frying pan over medium- high heat until hot, but not smoking.
  • Add the bacon and saute, stirring occasionally for 4 mins or until browned.
  • Reduce heat to a minimum, add pine nuts and cook for 1 min, stirring occasionally Add the garlic and cook, stirring for 30 seconds.
  • Add the spinach, vinegar and remaining tbsp of oil and cook, tossing gently for 15 seconds, or until the spinach is warm and a bit wilted.
  • Transfer to serving plates, sprinkle with parmesan and serve immediately.

This I had years ago at Woodrow's Bar and Restaraunt. I wrote for the recipe and got it!! It's fabulous!! I've also made it with grilled chicken and served it on top for a Heartier Meal!! It's refreshing in the summer with fresh basil out of the garden.

5 ounces toasted pine nuts, pureed
1 whole egg
1 large shallot, minced
1/4 ounce lemon juice
3 ounces balsamic vinegar
10 ounces olive oil
20 ounces spinach
96 basil leaves
4 ounces shaved aged provolone cheese or 4 ounces good parmesan cheese
4 ounces toasted pine nuts

Steps:

  • Dressing-Put pine nut in a food processor add whole egg,shallots, and lemon juice,Puree.
  • Slowly add oil in a stream alternate with vinegar till all is incorporated.
  • Season with salt and pepper to taste.
  • Salad-- On 8 plates arrange 2 1/2 ounces of spinach leaves and 12 basil leaves.
  • Divide dressing over the salads.
  • Top with 1 tablespoon of cheese and 1 tablespoon of pine nuts.

4 -6 cups spinach, washed, stems removed and roughly chopped
2 peaches (sliced or cut into smaller chunks)
1 small red onion
1/2 cup toasted pine nuts
2 tablespoons grainy mustard
1/4 cup balsamic vinegar
6 tablespoons extra virgin olive oil
1 1/2 teaspoons minced garlic
1 tablespoon sugar
cracked black pepper, to taste

Steps:

  • Make the vinaigrette: Using a whisk, combine mustard, vinegar, olive oil, garlic and sugar in a small bowl, and set aside.
  • Either in a large serving bowl or in 4 individual serving bowls, arrange spinach, onion, peaches and pine nuts.

In a surprising twist, Tuscan kale is served raw-and makes for a substantial and satisfying winter salad. Be sure to choose bunches of Tuscan kale with small leaves, which are more tender. I adapted the recipe from one I found in this month's "Bon Appétit" (February 2009). It's by acclaimed chef Dan Barber, of New York's famous Blue Hill restaurants. Allow the currants to marinated for at least a few hours. After that, this dish takes minutes to throw together.

2 tablespoons dried currants
7 tablespoons white balsamic vinegar, divided
1 tablespoon unseasoned rice vinegar
1 tablespoon honey
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
2 bunches tuscan kale, center ribs and stems removed, leaves thinly sliced crosswise (about 1 pound)
2 tablespoons pine nuts, lightly toasted
parmesan cheese, shavings

Steps:

  • Place currants in small bowl; add 5 tablespoons white balsamic vinegar. Let soak overnight. Drain currants.
  • Whisk remaining 2 tablespoons white balsamic vinegar, rice vinegar, honey, oil, and salt in large bowl. Add kale, currants, and pine nuts; toss to coat.
  • Let marinate 20 minutes at room temperature, tossing occasionally. Season to taste with salt and pepper. Sprinkle cheese shavings over salad and serve.
