Cornwallis Yams image

Named after a favorite dish of General Cornwallis during the Revolutionary War. This came from North Carolina Sweet Potato Commission. I have not tried this, just posting for safe keeping.

6 medium sweet potatoes
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup butter
3 eggs
1/2 cup crushed pineapple
1 cup sugar
1/2 cup grated coconut, plus some for garnish
1 1/2 cups milk

Steps:

  • Boil sweet potatoes until softened. Peel and mash. Season with cinnamon, nutmeg, and butter.
  • Beat eggs and add to potatoes. Combine with remaining ingredients. Pour into a greased 9x13-inch or 3-quart casserole.
  • Bake in a 350 oven until light brown, about 1 hour. Top with a sprinkle of coconut.

Candied Yams with Pecans image

These candied yams topped with sugary pecans and marshmallows are a perfect choice during the holidays, but also fun to serve as a sweet winter side dish any night of the week.

2 pounds yams, peeled and cut into 1 inch pieces
¼ cup butter, cubed
5 tablespoons brown sugar, divided, or more to taste
1 tablespoon cream
¾ teaspoon ground cinnamon, divided
½ cup pecans
14 small marshmallows

Steps:

  • Bring a large pot of lightly salted water to a boil. Add yams and cook, stirring occasionally, until tender, 12 to 15 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Drain and transfer to a bowl with butter, 4 tablespoons brown sugar, cream, and 1/2 teaspoon cinnamon. Mash until all ingredients are incorporated and butter is melted. Transfer to a casserole dish and sprinkle with remaining brown sugar and cinnamon. Arrange pecans and marshmallows over the top.
  • Bake in the preheated oven for 20 minutes.
