VANILLA PUDDING
Super creamy and easy, this classic pudding is great all on its own or can be dressed up with our suggested stir-ins.

Steps:
- Heat 4 cups of the milk in a large saucepan over medium heat until steaming.
- Whisk the sugar, cornstarch and 1/2 teaspoon salt in a large bowl. Whisk in the egg yolks and the remaining 1/2 cup milk.
- Whisk half of the hot milk into the egg mixture until smooth, then gradually whisk the egg-milk mixture into the saucepan. Cook over medium heat, whisking constantly, until the mixture boils. Continue to cook, whisking constantly, until it has thickened to a puddinglike consistency, 3 to 4 minutes. Remove from the heat and stir in the vanilla.
- Cool slightly, stirring a few times to prevent a skin from forming. Place a piece of plastic wrap directly on top of the pudding and refrigerate until completely cooled and thickened, about 4 hours.
- Before serving, whisk the pudding vigorously until smooth and creamy.
- Stir-ins:
- Cookies and Cream: Crush 20 chocolate wafer cookies, stir some into the pudding and top with the rest.
- Fresh Berries and Gingersnaps: Fold in 2 cups of fresh, mixed berries and top with about 12 finely crushed gingersnaps.
- Vanilla-Banana: Fold in 3 sliced bananas. Cover and refrigerate for 1 hour. Fold in 24 crushed vanilla wafer cookies and top with more sliced bananas.
- Rocky Road: Fold in 1 cup each mini marshmallows and toasted chopped walnuts and 1/2 cup of mini chocolate chips. Sprinkle with more chocolate chips.
- Peanut Butter* and Jelly (See Cook's Note): Fold in 1 cup quartered red grapes and 1/3 cup each chopped roasted peanuts and peanut butter chips. Top with whole grapes.
CHOCOLATE CORNSTARCH PUDDING
My mom's best chocolate pudding recipe made with cornstarch and cocoa.

FERENI STARCH PUDDING

- Dissolve cornstarch in 1 cup of cold milk.
- Bring remaining 1 cup milk to boil with cardamom and ground almonds. Reduce heat to medium, and whisk in cornstarch mixture.
- Add sugar and rosewater to taste. Allow the mixture to boil for about 3 more minutes on medium heat, stirring constantly. Remove cardamom seeds from the mixture and pour it into serving dishes. Garnish with slivered almonds and serve warm or cold. Enjoy!

CREAMY MILK CHOCOLATE CORNSTARCH PUDDING
For a lighter milk chocolate flavor use 3 tablespoons cocoa, increase to 4 tablespoons for a darker flavor, this is very good!

- In a saucepan combine the first 4 dry ingredients.
- Add in milk and half and half cream; cook over medium heat stirring/whisking until thickened and just at a slight bubble (do not boil hard) remove from heat.

CORNSTARCH CUSTARD PUDDING
This is from my husband's home economics class from 1979. We love it. I especially love to eat it warm.

- Mix sugar, cornstarch and salt in double boiler.
- Gradually stir in milk, stir well.
- Place the mixture over boiling water stirring constantly for 12 minutes, until it begins to thicken.
- Cover and let cook for ten minutes.
- Beat 2 eggs with an electric beater.
- Stir 1/2 cup of the cooked mixture into the beaten eggs very gradually while continuing to beat mixture with electric mixture.
- Repeat 3 times.
- Stir well and cook for 2 more minutes.
- Remove from heat.
- When slightly cooled, stir gently, and add vanilla.
CORNSTARCH PUDDING
This if from the cornstarch box. It takes me back to the good ol' days of seventh grade homemaking class. Very easy and a nice treat.

- Place cornstarch, salt, and sugar in mixing bowl, and mix well.
- Add 1/2 cup milk, and stir until smooth.
- Scald 1 1/2 cups milk in top of double boiler, and add cornstarch mixture slowly, stirring constantly.
- Place over boiling water in bottom of double boiler, and cook slowly, stirring constantly until smooth and thickened.
- Cover, and cook for 15 minutes longer, stirring occasionally.
- Add vanilla and stir.
- Pour into individual molds which have been rinsed in cold water.
- Chill until firm.
- Unmold and serve with maple syrup, cream, chocolate sauce, sliced peachs, or sliced apricots as desired.
- Chocolate: Add 1 square unsweetened chocolate, melted, at the same time vanilla is added.
- Coconut: Add 1/2 cup shredded coconut to scalded milk.
OLD FASHIONED BUTTERSCOTCH PUDDING
I have tried several "Old Fashioned" butterscotch pudding recipes..and this is the best I have found...and also, by FAR, the simplest.

- Combine sugar and cornstarch in medium saucepan.
- Stir in evaporated milk and water.
- Cook over medium heat, stirring constantly, until mixture comes just to a boil.
- Remove from heat.
- Place egg in small bowl; stir in small amount of milk mixture.
- Add to milk mixture; cook, stirring constantly, for 1 minute (be careful, mixture will bubble and might spatter on your hand so use caution).

- Place a fine-mesh sieve over a medium heatproof bowl and set aside. In a medium saucepan, combine sugar, cornstarch, and salt. In a medium bowl, whisk together milk, cream, and egg yolks; add to saucepan.
- Whisking constantly, cook over medium-high until mixture thickens and is bubbling, 8 to 12 minutes. Reduce heat to medium-low and cook, whisking, 1 minute.
- Remove pan from heat and pour mixture through sieve into bowl. Stir in butter and vanilla until combined.
- Press plastic wrap directly against surface of pudding to prevent skin from forming and refrigerate 3 hours (or up to 3 days). To serve, whisk until smooth and divide among four small bowls.

EASY VANILLA PUDDING
This was a recipe my mom would make when we were young. I think she originally got it from the back of the cornstarch box. To make this chocolate pudding, increase the sugar to 2/3 cup and add 2-3 Tbs cocoa with the cornstarch.
