Provided by Food Network Kitchen

Time 2h30m

Yield 4 to 6 servings

Number Of Ingredients 17

3/4 teaspoon ground cinnamon
Kosher salt and freshly ground pepper
4 Cornish hens (about 1 1/4 pounds each), rinsed and dried
15 jarred grape leaves (optional)
3 cups low-sodium chicken broth
1 1/2 cups wild rice blend
6 tablespoons unsalted butter
1 large shallot, minced
1 clove garlic, minced
3/4 teaspoon ground ginger
3/4 teaspoon ground cumin
3/4 cup pomegranate seeds, plus more for serving
2 tablespoons chopped fresh parsley, plus sprigs for serving
2 tablespoons chopped fresh cilantro, plus sprigs for serving
3 large egg yolks
3/4 cup fresh orange juice
1 tablespoon pomegranate molasses

Steps:

  • Mix the cinnamon, 4 teaspoons salt and 1/2 teaspoon pepper in a bowl; sprinkle all over the hens and inside the cavities. Place the hens on a rack set on a rimmed baking sheet and refrigerate, uncovered, at least 2 hours or overnight. Meanwhile, soak the grape leaves in water 1 hour.
  • Bring the chicken broth and 2 cups water to a boil in a saucepan; add the rice blend and cook as the label directs. Drain and rinse under cold water.
  • Preheat the oven to 400 degrees F. Melt 4 tablespoons butter in a large skillet over medium-high heat. Add the shallot, garlic, ginger and cumin and cook, stirring, until soft, about 3 minutes. Remove from the heat; add the cooked rice, pomegranate seeds, and chopped parsley and cilantro; toss to coat. Season with salt and pepper. Add the egg yolks and stir to combine.
  • Make the glaze: Bring the orange juice and pomegranate molasses to a boil in a small skillet over medium heat. Cook until reduced by half, about 5 minutes. Remove from the heat and swirl in the remaining 2 tablespoons butter.
  • Fill the cavity of each hen with about 1/2 cup of the rice mixture (reserve the rest); tie the legs together with twine. Roast 20 minutes, then brush with the pomegranate glaze. Continue roasting, glazing every 10 minutes, until a thermometer inserted into the thigh registers 165 degrees F to 170 degrees F, 1 hour to 1 hour, 10 minutes. (Rotate the hens halfway through cooking; if the skin gets too dark, cover loosely with foil.)
  • Meanwhile, drain the grape leaves and pat dry. Use some of the leaves to line a 9-inch pie dish. Fill with the reserved rice mixture and drizzle with 2 tablespoons water. Cover with the remaining grape leaves, shiny side up, then cover with foil. (If you aren't using grape leaves, spoon the rice into a pie dish, sprinkle with water and cover with foil.) After the hens have roasted about 20 minutes, transfer the rice to the oven and cook until heated through, about 45 minutes.
  • Transfer the hens to a platter and add some parsley and cilantro sprigs and pomegranate seeds. Peel the grape leaves off the top of the rice and serve alongside the hens.

PAELLA WITH WILD RICE, SEAFOOD AND CORNISH HEN

Paella with Wild Rice, Seafood and Cornish Hen image

Provided by Chuck Hughes

Categories     main-dish

Time 4h

Yield 2 servings

Number Of Ingredients 15

2 cups wild rice
2 red bell peppers
1 large yellow onion
1/2 chorizo sausage or other spicy sausage
1 Cornish game hen
4 Rock Tiger shrimp, heads on
1/2 pound mussels
3 to 4 large squid
2 tablespoons olive oil
2 teaspoons ground turmeric
1 teaspoon smoked paprika
4 cloves garlic
4 cups chicken stock
Pinch saffron threads
1 cup frozen green peas

Steps:

  • Soak the wild rice in 4 cups cold water for at least 2 hours. It will absorb some of the water and puff up a little bit.
  • To roast the red peppers: Place the red bell peppers directly onto the fire on your gas stove. Or place directly onto your electric burner. Char well for over 15 minutes on all sides. You are looking for a very black exterior. Pop the peppers into a bowl and cover tightly with plastic wrap to seal in the heat and sweat. In 10 minutes you can peel off the charred skin. If you want you can do this under running cold water, which makes it a little easier. Cut in wide slices and set aside.
  • Peel and finely dice the onion. Slice the sausage into 1/2-inch pieces.
  • To fabricate the Cornish game hen: Remove the carcass from your hen beginning at top of bird along either side of breast bone. Using a sharp knife, work your way down each side of carcass trying to remove as much meat from the bone as possible, to make 2 halves. Leave in the leg and wing bones, but discard the carcass (or save for stock). Then cut the leg and wing pieces off from the breast pieces.
  • To clean the shrimp: Start by holding the shrimp, backside up, and run your knife down the length of its spine. This will expose the vein. To remove the vein you can use your finger, or the tip of your knife to pull it out of the shrimp.
  • To clean the mussels: Scrub the mussels removing any sand and seaweed bits. If mussels are open, test them by pressing the two shells together. If they start to close, then they are still alive and safe to use. If not, discard them.
  • To clean the squid: Grab the head, while holding the end and PULL. Most of the guts will come out in one neat pile. You need to remove the transparent spine (or quill) by running a finger along the inside of the mantle holding it by the tip and pulling. Check the base in case there is a bit of spine left and that can be removed as well. Remove the wings by pulling off and then peel the rest of the skin off, which should come off in one piece. Slice the squid body open, score it on the diagonal (making a shallow incision but not cutting all the way through). Then cut this squid piece into flat triangles, or if you prefer simply cut the squid body into rings.
  • In a large skillet turn a large pan on high heat and drizzle in the oil. Add the hen pieces to the hot pan and sear and brown on all sides, about 8 to 10 minutes. Take the pieces out of the pan and set aside. Add the chorizo or other sausage to the pan. Stir until browned, about 3 to 4 minutes. Leave there. In the same pan, continue to build the dish by adding the onions, and saute until golden. Add the turmeric, and smoked paprika, and then add the garlic. Add the wild rice, and stir to coat with all the flavors and allow the grains to toast slightly.
  • Return the seared hen pieces to the pan. Add your warm chicken stock to which you have added the saffron. Reserve about a cup of stock for later. Cover the pan with a lid or tin foil, and let cook, about 40 minutes.
  • Finish by adding the seafood (shrimp, mussels, squid), and the last cup of stock just before the last 10 minutes. Just before serving, add the peas and the reserved roasted red peppers. Cover for a minute and the residual heat will warm both.
  • Ladle up into two personal paella pans.

ROCK CORNISH HEN AND WILD RICE

Rock Cornish Hen and Wild Rice image

One of our members is building on a rice dish theme, so thought I would offer this dish. The Rock Cornish Hen is a versatile little bird, that can be prepared in any number of ways. I chose a simple preparation for this one and accompanied it with my "Wild Rice and......" recipe, which see. A link is provided in the comments...

Provided by Gary Hancq

Categories     Chicken

Time 1h15m

Number Of Ingredients 8

1 rock cornish hen
1 Tbsp extra virgin olive oil
juice of 1/2 lemon
2 pats butter
lightly salt and pepper
just a pinch of poultry seasoning
just a pinch of thyme
just a pinch of onion powder

Steps:

  • 1. Rinse Hen well and dry with paper towels. Using Kitchen shears or knife, lay hen breast side up and snip or cut down one side of breast. as well as a short slice at the neck and tail, so you can lay the bird flat.
  • 2. In a foil lined cake pan or baking dish lay the hen out flat, breast and flesh side up. Drizzle with the Lemom Juice, sprinkle with the Salt,Pepper, Poultry Seasoning, Thyme and Onion Powder. Use a very little amount of each of these, less than a tenth of a teaspoon. **Just a Pinch** is what you can pick up between you thumb and forefinger. And then sprinkle lightly.
  • 3. Drizzle on the Olive Oil and rub on the Butter.
  • 4. Bake at 350 degrees for 45 to 50 minutes. They should brown nicely without the need to broil.
  • 5. If browned after 45 to 50 minutes, remove from oven and baste well with the juices. Lower oven temp to 250 degrees and bake an additional 10 to 15 minutes.
  • 6. Sever and separate the two halves, (This could be done before baking) and plate them up.
  • 7. This is great with homemade stuffing or rice. I prefer to accompany them with my Wild Rice recipe, which see. I incorporate Wild Rice, Brown and Long Grain Rice and white Rice. I cook all separately then combine and add finely minced Celery, Onions and Walnuts or Pecans. The wild Rice pairs excellently with Shrimp and Fish offerings as well.
  • 8. Note: The wild rice was retrieved from the freezer and was prepared three months earlier. I make a large batch and freeze in quart zip-lock bags and compress no thicker than my finger, so I can break off just what I need to serve. It freezes very well, and was just as good as the day I made it.

  • In a medium saucepan, bring 8 cups of water to a boil. Stir in the rice and 1 teaspoon salt and cook over moderately high heat, stirring occasionally, until tender but still slightly firm, about 25 minutes. Drain the rice and transfer to a large bowl.
  • Preheat the oven to 350°. Spread the nuts on a baking sheet and toast for about 7 minutes, or until lightly browned and fragrant. Transfer to a large plate to cool. If using hazelnuts, rub them vigorously in a kitchen towel to remove the skins. Coarsely chop large nuts, such as hazelnuts and walnuts. Add the toasted nuts to the rice along with the raisins, 1 1/2 cups of the chicken stock, the parsley, thyme and rosemary. Season with salt and pepper.
  • Preheat the oven to 475°. Stuff each hen with 1 cup of the rice and tie the legs together with cotton kitchen string; wrap the remaining rice in foil and set aside. Set the hens on racks in 2 large roasting pans, brush them with the melted butter and season with salt and pepper. Roast in the upper and lower thirds of the oven for 10 minutes. Switch the pans, baste the hens with 1/2 cup of the stock and roast for 10 minutes longer.
  • Reduce the oven temperature to 350°, baste the hens with another 1/2 cup of the stock and roast for about 25 minutes, until the birds are pale brown; baste occasionally. Raise the oven temperature to 400°. Switch the pans and baste the hens with the remaining 1 cup stock. Roast for about 30 more minutes, basting a few times, until the hens are richly browned and the temperature of the inner thighs registers 180° on an instant-read thermometer. Add water to the pans if the liquid evaporates during cooking. During the last 25 minutes of cooking, add the reserved stuffing to the oven and cook until heated through.

  • Preheat the oven to 350°. In a heatproof bowl, cover the dried porcini with the boiling water and let stand until the mushrooms are softened, about 15 minutes.
  • Meanwhile, in a medium saucepan, bring the chicken stock to a boil. Add the rice and simmer over moderate heat until al dente, about 10 minutes. Drain the rice; reserve the broth in a covered container in the refrigerator.
  • In the same saucepan, melt 3 tablespoons of the butter. Add the onion, celery and celery leaves and cook over moderate heat, stirring occasionally, until softened, about 7 minutes. Drain the porcini, reserving the soaking liquid. Coarsely chop the porcini. Add them to the saucepan and cook for 3 minutes. Remove from the heat. Pour in 1/4cup of the mushroom-soaking liquid; reserve the rest. Add the rice to the saucepan along with the cheese, season with salt and pepper and stir well.
