2 teaspoons salt
2 Cornish hens, thawed
1/2 cup butter, melted
1 cup white wine
1/2 teaspoon tarragon

Steps:

  • Sprinkle Salt on each Hen.
  • Place Hen on a shallow baking pan.
  • Mix butter, wine and the tarragon in a bowl.
  • Pour 1/4 of the mixture over each hen.
  • Bake at 350 for 30 minutes.
  • Pour 1/2 of the remaining butter mixture over each hen and bake 25 more minutes.

1 Cornish hen
1/2 cup flour
1/2 cup finely grated parmesan cheese
1 pinch salt
1/2 teaspoon marjoram or 1/2 teaspoon oregano, fresh or dried
1 1/2 tablespoons olive oil

Steps:

  • Split the game hen in half lengthwise, using a sharp knife to cut through the breast and backbone.
  • Mix flour, cheese, salt and herbs.
  • Add olive oil and mix until a paste is formed.
  • Pat game hen dry.
  • Smear paste over skin, coating as much as possible.
  • Place halves in baking 8"x8" baking dish, cut side down.
  • Bake at 375 degrees until browned, about 35-40 minutes.
  • Baste 2-3 times with pan juices toward the end of cooking.
  • Do not overcook or meat will become dry.

1 large Spanish onion, sliced
2 Cornish hens
Cornbread Stuffing, recipe follows
Olive oil
Kosher salt
Freshly ground black pepper
4 tablespoons unsalted butter
1 cup yellow onion, chopped
2 1/2 cups cornbread
1 celery stalk, diced
1/4 cup chicken stock
2 tablespoons chopped flat-leaf parsley
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the sliced onion in the bottom of a roasting pan. Remove the giblets from the hens, and rinse them inside and out. Remove any excess fat and leftover pinfeathers and pat the outsides dry. Place the hens on top of the sliced onion.
  • Pack the cavities of the hens with the cornbread stuffing.
  • Tie the legs together with kitchen string and tuck the wing tips under the body of the hens. Rub the hens with olive oil and sprinkle with salt and pepper.
  • Roast the hens for 30 minutes, or until the juices run clear when you cut between a leg and thigh.
  • Melt the butter in a large saute pan. Add the onion and cook for 5 minutes over medium-low heat, until translucent. Break the cornbread into pieces and place the pieces in a large bowl. Add the onion mixture to the cornbread. Add the celery, chicken stock, parsley, salt and pepper, and mix together.
  • Yield: 2 servings

1 tablespoon salt
2 tablespoons lemon-pepper
1 tablespoon dried basil
1 tablespoon poultry seasoning
2 tablespoons olive oil
6 Cornish game hens, about 1 1/2 pounds each, rinsed and dried thoroughly
1 green bell pepper, large dice
2 stalks celery, large dice
1 onion, large dice

Steps:

  • Preheat oven to 375 degrees F.
  • In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.

1 tablespoon orange juice
2 Cornish hens, halved
salt and pepper, to taste

Steps:

  • Preheat oven to 350°F.
  • Melt butter and stir in honey and chili powder; mixing well.
  • Stir in orange juice, salt and pepper and remove from heat.
  • Cut each hen into two halves.
  • Rinse well and pat dry with paper towels.
  • Place hens in baking dish, skin side down, and place in oven for 6-8 minutes.
  • Turn hens over and baste generously with all of the mixture.
  • Bake for approximately 45 minutes or until well browned.

Anyway, simple, easy & delicious, crispy on the outside & moist & tender on the inside, this little birdie will serve two and makes for a lovely romantic dinner (especially when you have some extra beer!!!)

1 Cornish hen
1 (12 ounce) can beer (I prefer Arrogant Bastard Ale)
all purpose Greek seasoning (liberally sprinkled)
garlic salt (a good coating)
pepper (whatever will stick)

Steps:

  • Preheat oven to 400 degrees.
  • Line a broiler pan with foil, open the Game bird package (Tyson sells them in packages of two, individually wrapped which is darned convenient, you can freeze the other one for next time) & find an empty beer or soda can (or you can go the cheap route & use a can of Bud which works just as well) and fill to the brim with Arrogant Bastard Ale, get the dark stuff, gives a lovely flavor, pop the top (if going the Bud route) & stick it up that randy little bird's butt. Seriously. If I can add a photo you'll see what I mean, I'll give it my best shot --.
  • You can put the dry ingredients in a ziplock bag & shake the bird until good & coated or just sprinkle on once on the can. VERY IMPORTANT - IF YOU USE AN ALREADY IN THE CAN BEER, POP THE TOP, I'm pretty sure you don't want it to explode in your oven -- Place the bird atop the can (really give it a good shove, get it in there good & solid) place the whole shebang in the middle of the broiler pan & then place pan in the middle of your oven. Set the timer for 45 minutes & go have a beer or two while you wait. You could also use this time constructively by getting together some nice veggies to sautee as a side dish but if you're already into the beer you probably won't care either way --.
  • Enjoy the heck out of this, make two so you can invite the neighbors over, make sure you open the oven so they can point & laugh and tell you what a freak you are, it adds to the fun!
  • When you think the bird is done, usually in about 45 minutes (check the thigh joint to see if the juices run clear, smaller birds don't take as long as bigger ones, duh) remove the tray from the oven & ever so gently extract the can from the bird's behind (it will be very hot so be careful!). I usually slice the bird from stem to stern while still atop the can, makes extraction easier. Whatever you do DON'T SPILL THE BEER, especially if you're naked as it will leave a nasty burn, trust me on this one--.
  • Anyway, enjoy the heck out of this recipe, it's simple and you'll really love the Game hen. To substitute a regular chicken use a tall beer can & roast for an hour or more -- .

1/3 cup pistachios, shelled
1/4 cup parmesan cheese, fresh grated
1 tablespoon butter, melted
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • In a food processor crush pistachios until crumb-like.
  • Mix grated parmesan cheese and pistachios in a small bowl.
  • In an 8 x 8 casserole dish baste the game hen with the melted butter.
  • Pat the pistachio mixture onto the bird, covering entirely.
  • Bake at 350°F for 1 hr 10 minutes.
  • Internal temperature of bird should be 175-180°F.

Another fabulous recipe from Mary Nell Reck's weekly cooking lesson in the Houston Post. This one came out in February of 1989 and is a recipe from Johnny Carrabba, chef and owner of Carrabba's Restaurant here in Houston, way back when there was only the original restaurant. The Cornish hens may be prepared ahead of time and refrigerated until ready to grill.

4 Cornish hens
2 garlic cloves
1/2 cup parmesan cheese, freshly grated
1/2 cup pine nuts
2 cups basil leaves, packed
1/2 cup Italian parsley
salt & freshly ground black pepper, to taste
1/4 cup extra virgin olive oil

Steps:

  • Cut off the wing tips of the Cornish hens.
  • Split open, cutting through the breast.
  • Split in half through the back by cutting on both sides of the backbone.
  • Using a small, sharp knife, remove the ribs and breastbone.
  • These bones are easily removed and doing so makes it much easier for the diner to enjoy.
  • Slip your fingers under the skin to separate it from the meat. Go in from the side which was next to the backbone. This is where the pesto stuffing goes. Set hen aside while preparing the pesto.
  • Give the garlic cloves a firm whack with the side of a knife to remove the skin.
  • Crush to release the oils then place in a food processor along with the parmesan cheese, pine nuts, basil leaves,parsley,salt and freshly ground pepper.
  • Process until finely ground.
  • Slowly add just enough olive oil to make the pesto pasty and moist, but not runny.
  • Place about 2 tablespoons of the stuffing under the skin of each half and evenly distribute it by applying gentle pressure to the skin.
  • Any remaining pesto can be placed in a covered container and refrigerated for several weeks. Because the parsley has been added it will retain its bright green color.
  • Sprinkle the skin with salt and freshly ground pepper.
  • Lightly drizzle with olive oil.
  • Cover with plastic wrap and refrigerate until ready to serve.
  • Close to serving time, place about six pieces of pecan or oak chips in water to soak.
  • Get a charcoal fire ready to grill on or turn on the gas grill if using that.
  • Place the wet wood chips on the coals/ burner to create flavorful smoke.
  • Grill the stuffed hens until richly browned on both sides, about 10-20 minutes in all, depending on size of hen.
  • Serve immediately.
