CRUNCHY FRIED SHRIMP

I've guessed on cook time here. These are the crunchiest shrimp I've had outside of a restaurant! This makes alot, but if you are going to make these you may as well go all out!! Everyone loves them! These have received so many mixed reviews that I thought maybe I should mention that I deep fry them in a Presto Fry Daddy and not very many at a time. I never said they were easy...and I get better each time I do it. Thanks for giving them so much attention!

2 lbs peeled jumbo shrimp
Crisco shortening, melted in deep fryer (till full by manufacturer standards)
2/3 cup flour
1 1/3 cups cornstarch
1/2 teaspoon salt
1/2 teaspoon baking powder
6 egg whites
2/3 cup water
4 tablespoons vegetable oil
corn flake crumbs

Steps:

  • In a medium bowl, stir flour, cornstarch, salt, baking powder, egg whites, water and oil together with a whisk.
  • Pour out a liberal amount of cornflake crumbs on a dinner plate.
  • Roll each shrimp well into batter mixture and quickly roll in cornflake crumbs.
  • Deep fry shrimp about 7 at a time till golden brown.
  • Drain on paper towels.
  • Serve with cocktail and/or tartar sauce.

I love making this with Kellogg's Special K Cornflakes, and so do my dinner guests! This crispy buttery cereal prawns will definitely prove to be a hit with your guests too! I usually prefer to remove the prawn shells, leaving the heads and tails intact, for the convenience of my guests. However, this dish is traditionally served with prawn shells intact such that the cornflakes will stick better to the shells. If you like, why not get your dinner guests to get their hands dirty and have fun peeling the prawns whilst remisicising over the dinner table?

500 g large shrimp, trimmed
1 teaspoon salt
3 tablespoons butter
cornflour
1 cup corn flakes
1 teaspoon salt
1 tablespoon sugar

Steps:

  • Clean prawns. I prefer to remove shells, leaving heads and tails intact for the convenience of my guests.
  • Melt butter in wok. Coat prawns with cornflour and add to wok. Remove when the prawns are pink.
  • Melt another 2 tbsp of butter in wok and mix in cereal, salt and sugar over medium fire. Ensure the cornflakes have been well-coated by butter and have turned a golden brown colour, taking care not to burn the cornflakes. (Your kitchen should smell like dreamy melted butter and sugar by now!).
  • Return prawns to pan and fry them with the cornflakes briefly.
  • Serve them while hot!

This wonderful recipe was in circulation when I was a kid in the 70s. Years later, a woman brought a tray of these to the office, which I instantly recognized as THOSE COOKIES FROM MY CHILDHOOD, and she refused to give me the recipe (said it was her babysitter's secret recipe)! I searched online (tried several recipes) and asked my friends and family off and on if they'd heard of it, for 10 years. I finally JUST found this online! They are SO GOOD! Bake them for your friends and family and share the recipe with the WORLD! Note, the number of cookies you get will vary - depending on how big you roll the balls.

Number Of Ingredients 12

1 cup butter
1 cup vegetable oil
1 cup white sugar
1 cup brown sugar
1 egg
1 cup crushed corn flakes
1 cup chopped nuts (I use walnuts or pecans)
1 cup quick-cooking oatmeal
4 cups flour, decrease to 3 1/2 cups for a chewier cookie
1 tablespoon baking soda
1/2 teaspoon salt
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 325.
  • Cream butter, sugars, vanilla and egg.
  • Add oil.
  • Mix in dry ingredients.
  • Form dough into walnut sized balls.
  • Place on cookie sheet and flatten with a fork dipped in water.
  • Bake for 10- 12 minutes.
  • Cool on pan for a minute or two, then transfer to a rack to cook.
