CORNED BEEF

Corned Beef image

For flavorful, tender meat, make Alton Brown's Corned Beef recipe from Good Eats on Food Network by beginning the salt-curing process 10 days ahead of cooking.

Provided by Alton Brown

Categories     main-dish

Time P10DT3h20m

Yield 6 to 8 servings

Number Of Ingredients 17

2 quarts water
1 cup kosher salt
1/2 cup brown sugar
2 tablespoons saltpeter
1 cinnamon stick, broken into several pieces
1 teaspoon mustard seeds
1 teaspoon black peppercorns
8 whole cloves
8 whole allspice berries
12 whole juniper berries
2 bay leaves, crumbled
1/2 teaspoon ground ginger
2 pounds ice
1 (4 to 5 pound) beef brisket, trimmed
1 small onion, quartered
1 large carrot, coarsely chopped
1 stalk celery, coarsely chopped

Steps:

  • Place the water into a large 6 to 8 quart stockpot along with salt, sugar, saltpeter, cinnamon stick, mustard seeds, peppercorns, cloves, allspice, juniper berries, bay leaves and ginger. Cook over high heat until the salt and sugar have dissolved. Remove from the heat and add the ice. Stir until the ice has melted. If necessary, place the brine into the refrigerator until it reaches a temperature of 45 degrees F. Once it has cooled, place the brisket in a 2-gallon zip top bag and add the brine. Seal and lay flat inside a container, cover and place in the refrigerator for 10 days. Check daily to make sure the beef is completely submerged and stir the brine.
  • After 10 days, remove from the brine and rinse well under cool water. Place the brisket into a pot just large enough to hold the meat, add the onion, carrot and celery and cover with water by 1-inch. Set over high heat and bring to a boil. Reduce the heat to low, cover and gently simmer for 2 1/2 to 3 hours or until the meat is fork tender. Remove from the pot and thinly slice across the grain.

CORNED BEEF

Corned Beef image

I know there are a lot of fancier versions of corned beef on here, but this is the way my Mum always makes it, and my sister, and until now, it has always been my way of doing it too. I plan to start trying some of the other recipes on here, but something tells me I'll keep coming back to this one.

Categories     Meat

Time 4h10m

Yield 6-8 serving(s)

Number Of Ingredients 5

1 kg corned beef
2 tablespoons apple cider vinegar
2 tablespoons tomato sauce
2 tablespoons brown sugar
6 carrots, cut into large chunks

Steps:

  • Place vinegar, sugar, and sauce into the crockpot. Add about a cup of water and blend all the ingredients.
  • Add silverside, and add enough water to cover. Cook on high for at least 4 hours, adding the carrots for the last hour.
  • I like to leave mine simmering in the crockpot for asd long as possible, all day is best, but 4 hours is enough.
  • To serve, cut the meat against the grain, and serve with the carrots, and some mashed potatoes, green beans, and white sauce. Yum!

CORNED BEEF

The way my mum made it, the way I make it. Mum used to cook her veggies (potatoes, carrots, parsnips, tiny onions) in the water, putting them in about 45 minutes before the meat was cooked. I find them over salty done this way. Reserve a half a cup of strained cooking liquid to make my Mustard Sauce for Corned Beef recipe #21617.Leftovers make good sandwiches with relish or chutney.

CORNED BEEF

Corned Beef image

The aroma of the spices in this recipe are so outstanding, that it almost unfair that you have to wait several hours before you can indulge. It is done to perfection when the corned beef is brown on the outside but rosy on the inside. It is so inviting...let's eat!

Provided by Myrna Turek

Categories     Lunch     Main Dish

Time 3h10m

Number Of Ingredients 9

4-5 lbs. Kosher Corned Beef (ask your butcher for the best meat to use.)
1 medium whole garlic clove
2 medium onions, peeled and cut into quarters
2 whole cloves
6-8 whole black peppercorns
1 large bay leaf
1/4 tsp. mustard seeds
1/4 tsp. dried rosemary
1 large head of cabbage, cut into quarters. (optional)

Steps:

  • Put beef into large stock pot, Add all the seasonings. Do not put the cabbage in the pot. Pour cold water into pot, to cover the meat. Bring to a boil. Skim off foam. Cover pot. Lower heat to a simmer.
  • If using the cabbage, after 3 1/2 half hours, add the cabbage. Simmer for 30 minutes more. This should be fork tender, if not let it simmer until it is fork tender. Use your judgement. Remove, and slice to your desired thickness. Corned Beef can be served cold or hot. Your choice. This is usually made into sandwiches. Rye bread, potato salad, coleslaw and pickles are excellent side dishes. Maybe French fries. Hmm.

CORNED BEEF SURPRISE

Corned Beef Surprise image

This is a recipe from Guam and uses canned corned beef (Hormel makes a 12-oz variety). You could also substitute a can of Spam (a Hawaiian favorite) for a similar result.

Provided by threeovens

Categories     Meat

Time 35m

Yield 4 serving(s)

Number Of Ingredients 12

1 tablespoon vegetable oil
1/2 onion, chopped
1/2 bell pepper, chopped
1 (12 ounce) can corned beef (Hormel or other brand)
kosher salt & freshly ground black pepper
1 dash italian seasoning (optional)
1 dash dried basil (optional)
1 dash dried parsley (optional)
1 dash chili powder (optional)
1 dash cayenne pepper (optional)
1 (15 ounce) can tomato sauce
4 cups small grained white rice, cooked for serving

Steps:

  • Heat a large skillet, over medium heat, and lightly saute onion and bell pepper in the oil about 2 to 3 minutes; add the corned beef and combine with the onion and peppers by breaking the beef up with a wooden spoon and stirring.
  • Flatten mixture evenly in the bottom of the pan, then pour the tomato sauce evenly over top; reduce heat, if needed, to prevent sauce bubbling out of the pan.
  • Season with salt and pepper and other seasonings as desired, to taste (DO NOT STIR).
  • Simmer, uncovered, over medium low heat, until liquid has mostly evaporated, about 15 minutes.
  • Place about 1 cup of rice on each of 4 serving dishes, then divide beef mixture into 4 and use a spatula to place each portion on top of the rice.

CORNED BEEF IN CAN REVIEW - THE BAILIWICK ACADEMY

From blog.thebailiwickacademy.com
  • Argentina. Price – Php32; Weight – 150g. For us, Argentina has the most brand recall among the brands here. We don’t know why. Maybe it’s because of that song by Madonna.
  • Palm. Price – Php219; Weight – 326g. Palm canned corned beef definitely scored some uniqueness points with us right away. While all the other brands are in tall, cylindrical cans, Palm is in a flatter cylinder.
  • Swift Premium. Price – Php74; Weight: 150g. The packaging of Swift definitely caught our eye. It was definitely different from all the others with its nice and warm design.
  • Delimondo. Price – Php179; Weight – 380g. We associate Delimondo with two things: corned beef, white can. The simple and minimalist packaging of this corned beef in can belies the amazing taste!
  • Star. Price – Php30; Weight – 150g. As we already mentioned, Argentina and Star have similar-looking labels. Star just has a more solid yellow one. And just like Argentina, Star has a very good brand recall.
  • Cattle Co. Price – Php165; Weight- 380g. This is one we would say that would be directly competing against Delimondo. It’s actually a pretty new brand to us.
  • Purefoods. Price – Php71; Weight – 150g. Purefoods is a popular brand in the Philippines and is definitely a classic favorite. If you happened to be searching for recipes using corned beef in a can, we can bet that for most of your life, you would have been using Purefoods.

HOW TO COOK CORNED BEEF - FOOD.COM

From food.com
  • Soak the Corned Beef. Place the beef in your pot, cover with cold water and let soak at room temperature for 15 to 30 minutes. Soaking helps draw out some of the salt from the curing process.
  • Add Cooking Liquid. Pour out the water used to soak the beef. Sprinkle spices from the spice packet that comes with the corned beef into the pot. If you don’t have a packet or you simply want to amp up the spice, toss in a bit of pickling spice.
  • Skim Foam. Bring the pot to a boil. Use a slotted spoon to skim off any foam that forms on the top.
  • Simmer the Beef. Cover, reduce the heat and gently simmer for 3 hours until the corned beef is fork-tender.
  • Prepare the Vegetables. Corned beef’s classic veggie partner is cabbage. When the 3-hour slow-simmer time is almost up, cut one small to medium-sized head of cabbage into large wedges.
  • Add Vegetables. Place prepared vegetables in the pot with the corned beef. Increase heat to return the pot to a boil. Once boiling, reduce heat, cover and continue to simmer gently for about 30 minutes or until vegetables are tender.
  • Slice and Serve. Remove corned beef to a cutting board and trim off the fat. Cut the meat into slices, placing slices on a serving platter. To make the meat more tender, slice corned beef across the grain (with the knife running perpendicular to the lines of the meat).Use a slotted spoon to remove vegetables from the pot, letting excess water drain.
