I found this quick and easy recipe in one of my old cookbooks years ago. It's a standby on a hot summer day.

Number Of Ingredients 8

Ingredients

1/2 cup chopped cooked corned beef
2 tablespoons plus 1 teaspoon mayonnaise
2 tablespoons finely chopped celery
1 green onion, finely chopped
1/2 teaspoon prepared mustard
4 slices pumpernickel bread
2 slices Swiss cheese
1 tablespoon butter, softened

Steps:

In a small bowl, combine the first five ingredients. Spread over two slices of bread. Top with cheese and remaining bread. Spread outside of sandwiches with butter., In a small skillet over medium heat, toast sandwiches for 2-3 minutes on each side or until cheese is melted.

My daughter shared this recipe with me. It's become a favorite of our entire family.

Ingredients

3/4 cup mayonnaise
3 tablespoons chili sauce
1 can (14 ounces) sauerkraut, rinsed and well drained
12 ounces shredded deli corned beef
2 cups shredded Swiss cheese
30 sliced rye bread
1/2 cup butter, softened
Thousand Island salad dressing, optional

Steps:

In a large bowl, combine the mayonnaise, chili sauce, sauerkraut, corned beef and Swiss cheese. Spread over 15 slices of bread, about 1/3 cup on each; top with remaining bread. Lightly butter the outside of sandwiches. Toast on a hot griddle for 4-5 minutes on each side or until golden brown. Serve with Thousand Island dressing if desired.

1/3 cup light mayonnaise or 1/3 cup mayonnaise
1/3 cup Dijon mustard
2 -4 tablespoons prepared hot creamed horseradish
6 loaves crusty Italian bread (6 to 7 inch loafs)
1 (12 ounce) jar roasted red sweet peppers, drained and cut into 1/4 inch wide strips
12 ounces thinly sliced roast beef
6 ounces thinly sliced monterey jack cheese
2 cups fresh watercress
2 cups fresh spinach

Steps:

Combine mayonnaise dressing, mustard and horseradish in a small bowl.
Using a serrated knife, slice sandwich breads in half horizontally.
For each sandwich spread one bread half with mayonnaise mixture.
Top each with roast beef, roasted red peppers, cheese, watercress, spinach and remaining half of bread.
To serve, cut each sandwich in half.
