BLUEBERRY CORNBREAD MUFFINS



Blueberry Cornbread Muffins image

Cornbread makes a perfect backdrop for blueberries, which burst as they bake, creating little pockets of juice that keep the muffins tender.

Number Of Ingredients 12

¾ cup milk
1 tablespoon lemon juice (see note)
1½ cups all purpose flour, spooned into measuring cup and leveled-off
½ cup yellow cornmeal
¾ cup sugar
2 teaspoons baking powder
1 teaspoon salt
1 cup blueberries (see note)
2 large eggs
1½ teaspoons vanilla extract
Zest of 1 lemon (about 1½ teaspoons)
1 stick unsalted butter, melted

Steps:

  • Preheat the oven to 350°F degrees. Line a muffin pan with paper liners (don't skip the liners or the blueberries will stick to the pan).
  • Combine the milk and lemon juice. Let sit for 10 minutes.
  • In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt.
  • Place the blueberries in a small bowl and toss with 1 teaspoon of the flour mixture. Set aside.
  • In a separate bowl, whisk together the eggs, milk/lemon mixture, vanilla and lemon zest. Add to the dry ingredients, along with the melted butter. Stir until just blended; and then stir in the blueberries. Do not overmix.
  • Spoon the batter evenly into the prepared muffin pan, filling each cup very full. Bake for 28 to 30 minutes, or until the tops are set and golden around the edges. Cool the muffins for a few minutes in the pan, then serve warm with butter or transfer to a wire rack to cool completely.
  • Notes:Be sure to zest the lemon before juicing it. Don't be tempted to increase the blueberries: one cup is just the right amount -- if you jam-pack the muffins with berries, they'll be too tart and wet.
  • Freezer-Friendly Instructions: The muffins can be frozen in an airtight container or sealable plastic bag for up to 3 months. Thaw for 3 - 4 hours on the countertop before serving. To reheat, wrap individual muffins in aluminum foil and place in a preheated 350°F oven until warm.

2 large eggs
2 tablespoons honey
¾ cup milk (preferably whole but low-fat works too)
1¼ cups all-purpose flour, spooned into measuring cup and leveled-off
¾ cup yellow cornmeal
¼ cup plus 2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
1 stick (½ cup) unsalted butter, melted and cooled

Steps:

  • Preheat the oven to 350°F degrees. Spray an 8-inch baking dish with nonstick cooking spray.
  • In a medium bowl, break up the eggs with a whisk. Whisk in the honey, and then the milk. Set aside.
  • In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt. Add the milk mixture and the melted butter to the dry ingredients. Whisk until just blended. Do not overmix; it's okay if there are a few lumps. Spoon the batter into the prepared pan. Bake for 25 to 30 minutes, or until the top is set and golden. Cool the cornbread for 10 to 15 minutes in the pan, then cut into squares and serve warm.
  • Freezer-Friendly Instructions: Cornbread tastes best when served fresh out of the oven, but it can be frozen in an airtight container or sealable plastic bag for up to 3 months. Thaw for 3 for 4 hours on the countertop before serving. To reheat, wrap cornbread in aluminum foil and warm in a 350°F oven until hot. Alternatively, heat squares in the microwave at 50 percent power for 30 to 45 seconds, or until just hot; do not overheat or they will get tough.

1 cup all-purpose flour, spooned into measuring cup and leveled-off
½ cup yellow cornmeal
½ cup sugar
1 teaspoon salt
2 teaspoons baking powder
1 stick (½ cup) unsalted butter, melted, plus more for the baking dish
1 (8.5 oz) can creamed corn
1⅓ cups raw fresh corn kernels, cut from 2 ears of corn (frozen kernels may be substituted)
1 cup sour cream
2 large eggs, beaten

Steps:

  • Preheat the oven to 375°F and set an oven rack in the middle position. Grease a 2-quart or 8-inch baking dish with butter.
  • In a medium bowl, whisk together the flour, cornmeal, sugar, salt, and baking powder.
  • In a large bowl, mix the melted butter, creamed corn, and fresh corn kernels. Add the sour cream and beaten eggs and mix until evenly combined. Add the dry ingredients and mix until the batter is uniform. Transfer the batter to the prepared baking dish and bake until the top is golden brown and the center is set, 40 to 45 minutes (a cake tester or toothpick inserted into the center of the spoon bread should come out clean). Serve warm or room temperature.
  • Make-Ahead Instructions: Spoon bread can be made up to 2 days ahead of time. To reheat, cover the baking dish with aluminum foil and warm in a 300°F-oven for 30 to 35 minutes, or until warmed through.

Ubiquitous on southern tables, cornbread is a versatile side dish that can be cut into pieces from a cast-iron skillet or, as done in this recipe, portioned as individual muffins. This recipe by Alexander Smalls, a chef, author, restaurateur and former opera singer, uses finely ground cornmeal and two types of milk to create a savory batter, which also gets a kick from coriander. Fresh corn kernels add texture to the dense quickbread. Serve warm alongside a spread of vegetables or a meat dish, with plenty of butter.

1/2 cup/70 grams fine cornmeal, preferably white (see Tip)
1/2 cup/64 grams all-purpose flour
3 tablespoons light brown sugar
1 1/2 teaspoons ground coriander
1 teaspoon baking powder
1/2 teaspoon fine salt
1/4 cup/60 milliliters whole milk
1/4 cup/60 milliliters buttermilk
2 tablespoons vegetable oil
2 large eggs
3/4 cup/90 grams fresh or thawed frozen corn kernels

Steps:

  • Heat oven to 400 degrees. Line 6 cups of a muffin pan with paper liners or coat with nonstick spray.
  • In a large bowl, whisk together the cornmeal, flour, brown sugar, coriander, baking powder and salt. Whisk in the milk, buttermilk and oil, then whisk in the eggs until the batter is smooth.
