Oven-roasted corn on the cob with homemade garlic butter is buttery, juicy, crunchy, and perfectly charred on the outside - without a grill.

1/4 cup unsalted butter, softened
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon ground black pepper
4 cobs of corn, peeled

Steps:

  • Preheat oven to 350 F.
  • In a small mixing bowl, cream together the butter, garlic, salt and pepper. Spread the butter mixture over each corn.
  • Wrap each corn in aluminum foil and place on a large half sheet baking pan. Roast in the preheated oven for 40 minutes, turning the corn over halfway.
  • Take out the corn and open the foil on top to expose it. Turn on the broiler function on the oven and place corn back in. Broil on high for 2-3 minutes.
  • Serve with a piece of butter on top. Sprinkle more salt and pepper as desired.

1/2 cup unsalted butter, at room temperature
1/4 cup chopped fresh cilantro leaves
3 cloves garlic, pressed
Zest of 1 lime
1/4 teaspoon chili powder
1/4 teaspoon smoked paprika
Kosher salt and freshly ground black pepper, to taste
8 ears corn, unhusked
1 tablespoon canola oil
1 lime, cut into wedges

Steps:

  • In a medium bowl, combine butter, cilantro, garlic, lime zest, chili powder and paprika; season with salt and pepper, to taste. Set aside. Preheat grill to medium heat. Peel back outer husks, leaving them attached at the base of the ear; do not remove inner husks. Remove and discard silks; rinse corn and pat dry using paper towels. Brush corn with canola oil; season with salt and pepper, to taste. Add corn to grill; cover and cook, turning occasionally, until husks are slightly charred and corn is tender, about 12-15 minutes.* Peel down husks and spread with butter mixture. Serve immediately with lime wedges.

2 sticks unsalted butter, at room temperature
2 to 4 chipotle chiles in adobo, pureed, 2 tablespoons total

1/4 cup freshly chopped cilantro leaves, plus more for garnish
Salt and freshly ground black pepper
Honey, to taste

Steps:

  • Heat grill over high heat.
  • Place the corn on the grill, close the cover and grill for 15 to 20 minutes, turning every 5 minutes, or until kernels are tender. Remove from the grill, let cool slightly, remove husks and cut into 1-inch rounds.
