- Place garlic, basil, and pepper in the bowl of a food processor. Process until the garlic is in small bits. Add the butter, and process just to mix together. Spoon into container, and refrigerate until firm.

- Preheat grill for medium heat, or preheat your oven to 350 degrees F (175 degrees C).
- Place each ear of corn on a separate square of aluminum foil. Place 1 tablespoon of butter on each one, and sprinkle with garlic powder. Wrap ears tightly with the foil.
- Place ears of corn on the grill or in the oven for 20 to 30 minutes, turning over occasionally.

- Preheat grill for medium-high heat.
- Place the ingredients for the basil butter in the bowl of a food processor and pulse until blended. Transfer to a small bowl and set aside.
- Brush the corn with vegetable oil and season with salt and pepper.
- Grill for about 10-15 minutes, turning frequently, until corn is charred and tender. Serve hot with basil butter.
BAKED CORN ON THE COB WITH GARLIC HERB BUTTER
Deliciously moist corn baked in the oven and seasoned with garlic and herb butter. You can use just plain butter with salt and pepper if you prefer or any flavoured butter of your choice.

- Preheat oven to 200°C.
- Remove all the husks and silks from the corn cobs.
- To make the Herb & Garlic Butter- mix all ingredients together is a small mixing bowl.
- Smear the flavoured butter over the corn cobs. Wrap the corn cobs in aluminium foil and secrely seal.
- Place the corn cobs on a baking tray and bake in a preheated oven for 25 minutes.
- When cooked remove from the oven and allow to stand for 5 minutes before opening the foil to remove cooked corn. The corn will still be very hot-be careful not to burn yourself on the steam.

HERB-BUTTERED CORN ON THE COB
Steps:
- In a food processor, combine the basil, parsley, garlic, lemon zest, a big pinch of salt and a few grinds of pepper. Pulse until everything is thoroughly chopped and combined. Add the butter and pulse until thoroughly mixed. Scrape the butter mixture out of the food processor onto a piece of plastic wrap or parchment paper and form into a log. Store in the refrigerator until ready to use.
- Preheat a grill or a grill pan for medium-high heat. Lightly oil the grill grates. Grill the corn, rotating it as it cooks, until lightly charred in places, 3 to 4 minutes per side.
- Remove the corn from the grill, smear each ear with a generous amount of the herb butter and serve.
GRILLED CORN WITH BASIL BUTTER

- Combine the butter and basil in a food processor and process until smooth, season with salt and pepper, to taste, and pulse a few more times. Scrape into a small bowl.
- Put a large saute pan on the grill over low heat and add the basil butter. When the butter is hot add the corn kernels and saute for 3 to 4 minutes. Transfer to a serving bowl and garnish with torn basil leaves and scallions.
GRILLED CORN WITH GARLIC BUTTER

- Set up the grill for direct grilling and preheat to high.
- Strip back the corn husks, as you would peel a banana, exposing the kernels. Bring the husks together beneath the ear of corn to make a sort of handle and tie with string.
- Place the butter, parsley, and garlic in a mixing bowl and whisk or beat until smooth and creamy.
- Lightly brush the corn with a little of the butter and arrange on the grate, positioning the ears in such a way that the husks are away from the fire. - Place corn in a 6-qt. stockpot; cover with cold water. Soak 20 minutes; drain. Carefully peel back corn husks to within 1 in. of bottoms; remove silk. Brush butter over corn; sprinkle with salt and pepper. Press 4 basil leaves onto each cob. - Butter: Put all ingredients in food processor and pulse until basil is incorporated and the butter is light green.
- Transfer to a small serving bowl
- Corn: Pull off dry outside husks; tear several into 1/4-inch-wide strips to use as ties.
- Gently peel back inner husks, remove silk, and lightly coat corn with Lemon-Basil Butter.
- Lay inner husks back in place around corn.
- Tie at top with reserved husk strips.
- Immerse cobs in a large bowl of cold water and soak for 20 minutes.
- Drain well.
- Place on a hot grill for 20 minutes, turning often.
- Serve with extra Lemon-Basil Butter on the side.
